Canned Chicken Recipes?

Does anyone have some wonderful ideas on what sort of dish I can make with canned chicken tonight for dinner - I think I am going to have a spaghetti squash along with my chicken, but if any of you have ideas: let me know!!

Those are specifically for canned chicken though not necessarily diet.  Moving this to Recipes for for possibly more diet oriented recipes.

I've never had canned chicken.  Is it good?

I make up the canned chicken as I use the tuna - obviously, the first thought is a good salad (filling).

When I use the chicken, I add red grapes (halved); very tasty (I don't add any onion in this salad).

You can also use the canned chicken as you would to make a tuna casserole; add a little pimento, and it's very tasty (not costly either).

Toast up small rye bread pieces; mix the chicken salad with yogurt; a little fresh basil - season to taste, and put on top of the rye (toasted if you like) and slices of avocado.

Make up your regular vegetable soup; put in the chicken - a little rice, and you've got a very tasty soup.

These are a few of the things I've used canned chicken for; most of the time, I bought canned chicken when we were traveling in the motor-home, and I didn't like keeping fresh chicken in the tiny refrigerator - the freezer always worried me it wouldn't freeze it hard enough, and messing with a chicken that I had to cook, was a pain.............

Canned chicken is awesome, and it's really easy to incorporate into meals - you can use it to bulk up canned soup, or in a sandwich or wrap.  If you want to go simple, you can just mix it in with some mustard, hot sauce, or relish.  Another thing I like to do is toss it over salad and then pour some canned, crushed tomatoes over the top as a sort of sauce and pop it in the microwave for a few seconds for a nice, hot entree.

Just experiment, you probably won't be disappointed; even just sprinkling some seasoning on it will work.

I've also heard of heating up some oatmeal and mixing it in with chicken and veggies to create a sort of pot pie, but I've never tried that myself.
