yesterday for my mom's birthday, i had a slice of cannoli cake... with whipped cream frosting.. so yum!!!!!

What is cannoli cake? I am Italian and do enjoy a real cannoli but never hear of cannoli cake! Or maybe I have? Does it go by another name? Is it the Italian cake with the custard and other creamy, decadence in the center? Lol

oh my gosh ... it is "heaven". very decadent cake with ricotta filling (like a cannoli) and whipped cream. oh my gosh! i did a google and this is a recipe:
CANNOLI CAKE 6 lg. eggs, separated
Sugar
3/4 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
Vanilla extract
2 lg. oranges
2 tbsp. orange-flavor liqueur (optional)
1 (32 oz.) container ricotta cheese
1 (8 oz.) pkg. cream cheese, softened
Confectioners' sugar
Semi-sweet chocolate mini pieces
3 tbsp. butter, softened
3 tbsp. milk
2 c. heavy or whipping cream

Visiting PA/NJ now and that was my anticipated treat but the actual cannoli in the round shell and had it last night. Canolli filling is basically ricotta, sugar with usually mini choc chips and candied fruit but its really the cheese and sugar. This can be made with lowfar store bought ricotta, drain if able or needed and mix in artificial sweetner. You can also add cinnamon or cocoa powder.

- 4 eggs
- 2/3 cup sugar
- 1 cup all-purpose flour
- 1/2 cup (1 stick) butter or margarine, melted and cooled
- 1/4 cup chopped semisweet chocolate
- 1 recipe Ricotta Filling
- 1 recipe Whipped Cream Frosting
- Fresh berries or candied cherries, for garnish
- 2 cups (15 oz.) Sargento® Part-Skim Ricotta Cheese
- 3 Tbsp. sugar
- 1-1/2 tsp. vanilla
- 1 cup whipping cream, whipped
- 1 cup semisweet mini chocolate chips
- 2 cups whipping cream
- 2 Tbsp. confectioners sugar
- 1/2 tsp. vanilla
- Beat eggs and sugar on medium speed in bowl with an electric mixer 5 minutes or until thick. Gently fold in flour and butter; pour into greased and floured 8-inch round cake pan. Bake in preheated 350°F oven 40 minutes or until cake feels firm when touched in center. Cool in pan 5 minutes. Remove from pan and cool completely on wire rack.
- To make Ricotta Filling: Beat Ricotta cheese, sugar and vanilla on medium speed in bowl with electric mixer 3 minutes. Fold in whipped cream and chocolate chips.
- To make Whipped Cream Frosting: Beat cream on high speed in bowl with electric mixer until soft peaks form. Beat in sugar and vanilla.
- Cut cake in half horizontally using sharp serrated knife. Cut each layer in half again horizontally. Place 1 layer on serving platter; spread with one-third Ricotta filling. Repeat procedure, ending with cake layer. No sooner than 6 hours before serving, frost sides and top of cake with all but 1 cup frosting. Decorate with remaining frosting, chopped chocolate and fruit. Refrigerate until serving time.

I did make this cake this afternoon and it is awesome. suggestion: for the ricotta filling do add some orange zest, it was missing only that. otherwise, absolutely delicious!
i would assume you could make substitutions (fat free ricotta, less chocolate chips, egg whites, lite whipp cream, splenda etc ...) trying to get calories down. but, this cake really shouldn't be played with, just enjoy it, as always, as a moderate treat! still evil, but so good!
