hello, i am new to the group, a veg, and noticed that even when i dont eat rice, bread, etc... i consume more than a daily recommendation of carbs.. in part i think its the amount of fruit i eat? but has anyone ever monitored their carb intake? mine ranges (without obvious carbs) from 200-300 a day!
its not carbs you have to watch out for, everything that is not protein, or fat is a carb. A carb is what ever goes into the body and breaks down into sugars, carrots have carbs, fruit, bread, tofu has some even. Its starches i think you mean, and by some means a veg diet you need more, starchs can contain gulten, a vegs best friend when it comes to protein that is not soy or nut. It is lower in in fat then the nuts, and dairy protein and pretty tastey. One of the best ways to get it is rice and beans, you can buy gulten based fake meat stuff at the store too. carbs give you energy and do are startches in balance though, the main thing is that you will need more of other foods due to no meat intake, just be aware of the starches you buy read the lables brown rice has more protein then white. and in your dishes try adding vegtables to it. also amy's frozen food makes pizza with a rice based crust that are pretty good.
fiber is key. the quality of a carb is measured by the amount of fiber. whole foods are high in fiber and do not add so much weight to us, but lots of nutrition. there is also a lot of protein in high quality carbs. the more processing a food undergoes, the less fiber and usually more added calories with less nutritional value, plus some unpronounceable chemicals....
