CARBS!- help!

Quote  |  Reply

I've been a vegetarian for about 10 years now.  It seems like the only things i eat are carbs. I buy lots of lean cuisines and smart ones but the only vegetarian options they have are pasta ..and more carbs.. Does anyone know what else I can eat thats quik and easy that doesnt have a lot of carbs? Undecided

Stir frying some veggies with Tofu is quick. I also like to make burritos out of veggie burgers and some mushrooms and onions. For sauce I use greek yogurt, dijorn mustard, and adobo sauce.

Unfortunately vegetarian food is mainly carbs :( Tofu is the best vegan food that contain protein, but be careful because it is loaded with lots of fat too, watch for light tofu or low fat. You can cook it on soup, add it to a salad or even baked with vegetables.

Only if you can't cook, and keep buying those pasta lean quisine things. :) Beans have tons of protein, and fiber for example, greek yogurt has a lot of protein.

do you eat eggs? hard boiled eggs are a must for me.

If you're eating so many packaged meals then you should probably be more worried about your sodium intake than your carbohydrate intake.  There's nothing wrong with a high carbohydrate diet but there's a lot wrong with relying too heavily on heavily processed, ready-made foods.    Try working some fresh quick-cook dishes into your week.... pastas with simple sauces, stir-fries, chunky omelettes, home-made soups and broths.   Adding beans, lentils, chickpeas, tofu, whole eggs, nuts, seeds, quorn, quinoa and dairy products will increase your protein intake.   Many of the same foods will also improve your iron levels so you get more than one benefit.

If microwaving is a must for you, try some quorn meatless chicken substitute, and a single-serve pack of steamfresh veggies. If you get the naked chicken, its VERY low carb, and the veggies wouldn't be too high either.

I'm going to have to disagree with rumiana, veg food is not mostly carbs.  I am vegetarian and get tons of protein, about 115 grams or more a day.

Egg whites, greek yogurt, cottage cheese, beans, chick peas, hummus, tofu, tempeh, quinoa, edamame, soy, kashi cereals are higher in protein, nuts, nut butters, whey or soy protein powder... if you are buying frozen stuff there are whole lines of meat subsitutes like morningstar that are high in protein, those are processed though so I would only eat them in moderation, same with the lean cuisines.
