I've noticed that more that 50% of my food intake is carbs... any suggestions on foods I can eat that aren't carbs.
Proteins and fats are your other two options.

I'm aware of that I mean I need some ideas of what to cook for meals and snacks that have less carbs and more proteins.

Mmm - FISH! I am obsessed - always have, always will! LOL! Some suggestions for you:
- Mackerel, Salmon, Tuna, Sable Fish, Sardines, Anchovies, Escolar, Chilean Sea Bass, Scallops, Shrimp, Clams, Mussels, Lobster, Eel, Halibut & Cod
OR... have some... EGGS - another favorite of mine: cannot get enough of these bad boys! I especially LOVE mixing eggs & tuna (jarred in olive oil) - yummy yummy! lol

I dunno. "Carbs UGH!" seems to imply you think there's something wrong with carbs... :-)
To add more protein, try foods like cottage cheese, tuna (or other fish), meat/poulty, substituting higher protein grains (like quinoa) for rice/pasta, snacking on nuts or cheese instead of crackers (or whatever carb-y foods you snack on), drinking a glass or two of milk a day, that sort of thing
To me, 40-60% is just fine if the source is reasonable...fruits, vegetables, whole grains are all great sources of carbs...I try to avoid the carbs in soda and candy bars.
Wine and good chocolate carbs I don't try nearly as hard to avoid, but then they're worth the indulgence imo.
I recently had to cut carbs for medical reasons (dr's orders.) What I've been doing is having several kinds of meat and fish portioned out, ready to eat. For instance, right now I have, in the refrigerator and freezer, roasted chicken. lamb patties, meatballs, cooked ground beef with onions, and salmon. It's easy to add some chicken to a salad or some crumbled ground beef to a pan of vegetables. This boosts the protein and changes the ratio of fat/protein/carb.
The other thing is dairy products. I don't know if you are familiar with soft farmer cheese, but it's a nice alternative to cottage cheese and can be stuffed into celery for a high protein low calorie snack. And don't forget eggs! You can eat just the white if you are worried about cholesterol, but there is a lot of good nutrition in the yolks and a lot of evidence that the cholesterol in egg yolks doesn't raise blood cholesterol and makes more good HDL. I have a little plate of half a dozen deviled egg halves to eat for snacks.
Good Luck! But don't fear carbs. Unless you have a medical problem, they are good for you and give you energy.
