| 2 | cups wheat flour |
| 1/2 | tsp salt |
| 2 | tsp baking powder |
| 2 | carrots, finely grated |
| 1/3 | cup unsweetened apple sauce |
| 1/2 | cup honey |
| 1/2 | cup skim milk |
- Preheat oven to 350.
- Grease a 12-cup muffin tin.
- Combine the flour, salt, and baking powder in a large mixing bowl.
- Stir in the carrots.
- In a medium bowl, combine the applesauce , honey and milk.
- Pour the liquid mixture into dry ingredients and mix just until moistened.
- Fill the greased muffin tins and bake for 30 minutes, until lightly browned and firm to touch.
