Carrot Muffins Recipe

This is an adapted recipe.

Ingredients
2 cups wheat flour
1/2 tsp salt
2 tsp baking powder
2 carrots, finely grated
1/3 cup unsweetened apple sauce
1/2 cup honey
1/2 cup skim milk
Directions
  1. Preheat oven to 350.

  2. Grease a 12-cup muffin tin.

  3. Combine the flour, salt, and baking powder in a large mixing bowl.

  4. Stir in the carrots.

  5. In a medium bowl, combine the applesauce , honey and milk.

  6. Pour the liquid mixture into dry ingredients and mix just until moistened.

  7. Fill the greased muffin tins and bake for 30 minutes, until lightly browned and firm to touch.
