Recipe Ingredients for Carrot Salad with Cumin and Garlic
| 1 1/4 | lb carrots, about 5 large carrots |
| 4 | tbsp extra virgin olive oil |
| 4 | cloves garlic, crushed |
| 1 | tsp ground cumin |
| 1 | freshly ground black pepper |
| 1 | tbsp fresh lemon juice |
Recipe Directions for Carrot Salad with Cumin and Garlic
- Peel the carrots, trim tops and tails, and cut into sticks. Boil in water with a pinch of salt for 10 minutes, and drain.
- In a large skillet, heat the oil and put in the carrots, garlic, cumin and some pepper. Saute until the garlic just begins to color.
- Sprinkle with lemon juice and serve cold.
