Use older carrots if you can -- they have more taste than young ones.

Recipe Ingredients for Carrot Salad with Cumin and Garlic

1 1/4 lb carrots, about 5 large carrots
4 tbsp extra virgin olive oil
4 cloves garlic, crushed
1 tsp ground cumin
1 freshly ground black pepper
1 tbsp fresh lemon juice

Recipe Directions for Carrot Salad with Cumin and Garlic

  1. Peel the carrots, trim tops and tails, and cut into sticks. Boil in water with a pinch of salt for 10 minutes, and drain.

  2. In a large skillet, heat the oil and put in the carrots, garlic, cumin and some pepper. Saute until the garlic just begins to color.

  3. Sprinkle with lemon juice and serve cold.
