I'm making some and am so excited...but I just realized that as much as I would LOVE to hav only carrot soup for my meal, it's not exactly the most balanced of ideas...
So, what do you guys in all of your food eating wisdom suggest I pair with my very delicious soup? The easier, the better...I have homework to do after this and also a severe lack of groceries.

limited groceries? Do you have peanut butter? How about a PBJ? You get some nice protein that way and some whole grains. Lots of sandwiches would do. If you are vegetarian there are a lot of options there. One of my fave sandwiches is a Boca Spicy Chikn on a whole wheat muffin with hummus. That would be great with carrot soup! Have you put the recipe into the analysis and saved it? If so, post it!
Chicken breast grilled on a GeorgeForman or a grill pan is my answer every time.
I make up a bunch and keep em in the frig and frozen ready to go.
Have a bread roll spread with a little butter with the soup. Stir a tablespoon of plain yoghurt into your soup before serving.
I had carrot and corriander soup for my dinner the other night, I mixed in a large tin of tuna and it tasted really good. I also had a slice of toast with a soft cheese wedge.
If you dont fancy tuna maybe try chopping up some chicken and adding it in.

How do you make carrot soup? I am curious.
It's pretty easy...sauttee some onions for awhile, add carrotts (like 2 lbs), a few cups of veggie/chicken broth, and boil. Puree once the carrots wo't kill your blender, and add some spices.
I'm not going to post the recipe from last night, though, because it was a fail...the soup literally tasted like sodium. So sad.

Oh yum, how about you serve it with some toasted brown soda bread, topped with sliced red onion , sprinkled with a little grated cheddar and melt under the grill, so tasty and filling with the soup!
My roomie always has a grilled cheese sandwich with soup.
