low-fat, low calorie carrot soup
| 4 | cups chicken broth |
| 16 | oz. carrots, chopped |
| 1 | medium onion |
| 2 | tbsp non-fat dairy creamer |
Pour 4 cups of chicken broth into pan, add 4 cups of chopped carrots and 1 medium chopped onion. Bring to boil, then turn to low and let simmer 20 minutes or until carrots are soft. Puree in blender, add fat-free half and half, salt and pepper to taste. Any other spices may be added to give it a zing.
