here's mine

  • Claire's Low Fat Cheese Sauce
  • Claire's Low Fat Cheese Sauce with evaporated milk
  • For cauliflower, I'd use reduced fat cheddar for color and flavor

For quiche, beat eggs into cooled cheese sauce.  Add other ingredients,  Assemble and bake as you would any quiche.

Why don't you have regular cauliflower cheese... made with some really powerful farmhouse cheddar, a little mustard, some butter in the sauce etc., ... and just have a small amount?  Personally I find the tastier the food the less I need to feel satisfied.  Just a thought...

I sometimes make a cauliflower mash (similar to mashed potatoes)...

Just steam (of your cooking preference) your cauliflower until it is soft enough to mash together. Add a bit of milk, salt and pepper to taste, cheese if you want, and a tiny drop of butter (not needed) and blend in a blender or puree until you reach your desired thickness.

This is a nice alternative to mashed potatoes and tastes great and even resembles mashed potatoes. It is really easy to make and doesn't take too long to cook either.

    lol..

idk, but i agree with the making a real cheese sauce but only have a small amount, and just have it once in a while as a treat, not everynight or anything
