Breakfast: 2 van's whole wheat waffles and chocolate soy milk (300)

Lunch: chicken finger wrap, carrots, 100 calorie pack of Sun chips, and some candy (600)

Dinner: went to Panera. I had chicken noodle soup in a bread bowl and a french baguette. (900)

Total: 1800, no exercise, unless coughing counts as exercise. I really hate colds. <_<

Hey Chrissy. I haven't been posting a lot lately, I know. I've been super busy with school and have been eating tons of junk food and ready made meals, so my meal plans are not super interesting to look at. Lots of pizza, chicken fingers, grilled cheese sandwiches, and Amy's meals in there. ;) How have you been? How's school going?

I love quick oats with peanut butter and a chopped apple. My absolute favorite is 1/2 cup quick oats with a mashed banana (I put a whole banana in a sandwich bag and smash until it's smooth, 1 tsp cinnamon, and 2 tsp sugar. It tastes a lot like banana bread.

Chrissy/foodie: thanks for the advice and support, you too! I really appreciate it. :) I'm just still adjusting with being back to school and the diet change that comes with it. At first, I felt bad about eating more processed food and less healthy stuff than I was in the summer, but that's how it has to be. I'm just going to eat fruits/vegetables/whole grains when I can and be happy with that. It's all good.

Oh, if you're reading this Agru...*waves like crazy to you* I miss posting on this thread every day and our long back and forth conversations, haha.

I love love love Amy's products. Everything I've tried so far has been great. I love the bean and cheese burrito and the Mexican Casserole Bowl. The cheese enchiladas are great too.

My only complaint about the products is that they're rather high in sodium with only a few items available with a lower salt content. Other than that, I adore Amy's kitchen. ;)

I've been at my school for a while, so I do know it pretty thoroughly. There is a Subway, some places that make subs and wraps, and another place that makes just salads to your order. Unfortunately, these places either have limited hours, are generally too busy when I'm in a rush to get food, or aren't accessible from where my classes are.

I do have some cucumbers, peppers, carrots, and tomatoes in my fridge, since they keep longer. The salad that I was referring to before was one that I bought at school. Unfortunately, those tend to go bad because their turnover rate isn't high enough because of the cost. I've found mold in those salads before, which is pretty much a total turnoff for buying them. Yell

When I'm in my dorm, I'm pretty set since I have my fridge and loads of healthy food. It's just when I'm buying lunch that I'm kinda stuck. To give you an exact idea of what's available in the place that I go (which is the only place I have time to go where I'm at for classes): When you walk in, there is a taco place which serves tacos with hard and soft shells, quesadillas, and salads in a huge taco shell bowl. After that is a sub/wrap place. You can get ham, turkey, grilled chicken, chicken fingers, meatballs, etc. They do have whole wheat buns/wraps available, but the meat is so salty that it makes my heart pound after eating it. Then, there's a small grill where you can buy grilled cheese, hot dogs, hamburgers, fries, seasoned fries, chicken fingers, popcorn chicken, etc. After that, there's a pizza place with plain cheese, pepperoni, and chicken finger pizza (which is absolutely delicious, BTW). Finally, there is a tiny salad bar, which has very fresh ingredients. I'll usually get romaine lettuce, cucumber slices, tomato, chickpeas, an ounce of shredded cheddar, and about a Tbsp. of ranch. It's good, but I can only eat salad so much without getting tired of it.

For snacks, I tend to bring along Kashi bars, Clif bars, apples and bananas. I will definitely have to add grapes, cucumbers, and pretzels to my snack list. Also, I never considered bringing a fruit salad, but I do have plastic containers, so that'll definitely work!

I think at this point, I have to accept that my eating will not be as healthy as it was when I was at home. Not to mention, there are just some days when the chicken finger pizza calls my name. ;)

Thanks for all the suggestions! I now have a few more things that I can add to my food supply. :)

The semester is really changing my eating schedule/habits. I'm in class during some meal times, so meals are turning into snacks and snacks are turning into meals. Breakfast is smaller than it was during the summer because I'm grabbing small, fast, convenient things.  Lunch tends to be rather junky because all that's available is nachos, pizza, subs, some prepackaged (overpriced) salads, chicken fingers, fries, and wraps. It seems like the healthiest stuff there is a salad you make yourself, which gets old fast, and grilled chicken, which you can only eat so much of before you get sick of it. Does anyone have any suggested improvements that I can make or does it look good?

Breakfast: Chocolate soy milk, a Kashi soft-baked cereal bar, and a banana (350)

Lunch 1: a carrot cake Clif bar (240)

Lunch 2: Chicken cordon blue sandwich: a whole wheat roll, a slice of provolone, grilled chicken, a slice of ham, lettuce, tomato,  and a Tbsp. bleu cheese (500)

Dinner: An Amy's bean and cheese burrito, grape tomatoes, carrots, cucumber slices, and an apple (550)

Total: 1640

No workout.

Agru: I'm REALLY sorry for the long delays in responding. I'm not ignoring you, I promise. My schedule is INSANE this semester. I make/grab breakfast from my dorm, then almost always buy lunch from school dining halls/restaurants. For dinner, sometimes I go out to places like Panera with my friend so we can hang out, but other nights I cook for myself in the dorm. I have a mini-fridge, access to a microwave, oven, and stovetop, so I do have a lot of options. I also have a boatload of food in my room. Seriously, I have 3 full containers of pasta, rice, pre-made meals, applesauce, soy chips, Kashi bars, organic cookies, veggies, fruits, cheerios, honey nut cheerios, Kashi cereal, and vanilla/chocolate soy milk.

Your meals look great, BTW! It looks like your variety is expanding, which is terrific. Everything looks well balanced. :)

Breakfast: 1 cup multigrain cheerios, a banana, and 1 cup chocolate soy milk (350)

Lunch: small salad with romaine, 1 oz cheddar, ranch dressing, chickpeas, cucumber slices, and grape tomatoes. Also had an apple (250)

Agru: The sandwich is just from a quick lunch place on campus. They're pretty bland on their own, so I dump hot sauce on them. And your meals look great! actually, I get hungry reading them. ;)

Agru: No, it's actually a big salad of romaine, chicken, BBQ sauce, corn, black beans, tomato and onion pieces, and tortilla strips. It's really good! Yeah, I'm feeling a lot better now. Still not 100% and I'm walking slower than normal, but still feeling good. Yeah, I'll have my car there and I'm about 30 minutes from home. It wasn't too bad to commute to, but I got sick of it during the winter. And pretzels and sour cream is really good! One of my favorite snacks. Nice pictures, BTW. :)

Agru: Oh yeah, I was incredibly nervous the summer before my first semester and I had a total meltdown the weekend before school started (REALLY bad, haha. I laugh about it now). But it's been a great two years so far, so I can't complain! Yeah, I'll have a stovetop, oven, and microwave available. I'm bringing a small saucepan and a fry pan, so I can make soup, grilled cheese, Amy's meals, pasta, canned/frozen veggies, etc. And yeah, you do so much walking on campus. I've had days where I figured that I walked for over an hour just getting from place to place and that was fast walking!

I was homeschooled from 3rd grade through 12th grade. I'm now in my third year of nursing school.

From what I've seen from other homeschooling families that I've known, family dynamics and time management are the main factors in the success of the education. I knew one family with kids who rarely listened to their mother and did very little she said. So, almost no schoolwork got done, especially with TV, movies, video games, and internet distractions. As a result, those kids ended up almost illiterate. Their 12-year-old son read at an age 5 or 6 level, which was sad. I knew another family with 8 children (including a set of twins and triplets) that was so busy all the time just trying to survive, they had no time or energy for educating their children.

On the other hand, I've known other families who have made education a top priority (my family does as well), and the kids turned out very well. These families tended to have a set schedule, usually having school from 9-4 on weekdays, though it varied.

Overall, I think that homeschooling was a very positive experience for me and I will probably homeschool my own kids, if I have any. The only downsides were not having snow days and being asked if I hung around the house in my pajamas all day. Tongue out

ETA: Our school district required a quarterly report of my grades in each subject. Before the school year began, they also required a home instruction plan to show what I was going to be covering that year. I also took a standardized test (usually the Iowa tests) at the end of each year.

Agru: This is undergrad. I'm a little nervous because I've never dormed before, but I think it'll be good. I actually won't be getting a meal plan (they're ridiculously expensive and the food is in between mediocre and bad at my school), so I'll only buy a meal a day. I have a huge mini-fridge (is that an oxy moron?) and a ton of food to cook for myself.

As for the health food, I like to buy pre-packaged meals organic, but everything else (cheese, produce, crackers, pasta, bread, cereal, etc.) isn't organic. It's so expensive.

And bison is really good! It tastes a lot like beef, especially in meatloaf. Definitely give it a try. :)

Shopping for back to school stuff. Containers, lots of food, cooking supplies, hair dryer, iron, school supplies, etc. (Basically, a really tiring amount of shopping. I hate shopping ;))

You have acid reflux too? So do I (and I really wish I didn't, obviously =\). I can have tomato sauce, but not ketchup. Weird how that all works. You could just bread the eggplant and skip the tomato sauce, if you like eggplant.

I wouldn't really describe it as spicy, but then again, I have a high tolerance for spicy food. So what's spicy to you might not be spicy to me. Panera's website describes it as this: Plump black beans simmered in a spicy vegetarian broth with onion, red bell pepper, cilantro, garlic and cumin. Served Sunday, Tuesday, Thursday & Saturday."

So maybe it is spicy. Haha, I don't even know. Sorry, I know that wasn't a very helpful answer. (Ok, I don't know why this is italicized. I can't undo it either. Weird)

I'm feeling pretty good. Still a bit sore, so I'm still on lots of motrin and percocet. Looking forward to being off of those. Nope, didn't go to the movies. Just finished up the gummy bears that my mom got for me and I was really hungry, so I had popcorn. I love candy way too much! :)

As for exercise, do enough to keep your cardiovascular system in good shape, but you won't need much more than that. I love exercise, but I don't think exercising for hours and hours a day is healthy either. 20 minutes a few times a week is good, so don't feel bad about that!

Developing a healthy attitude towards food and exercise takes time, but it looks like you're on a good track!

Your meals look great too. Where are you getting the mini ice cream sundaes? They sound really good.

Chrissy: Nope, my mom made the casserole. She saw me eating an Amy's Mexican Casserole Bowl and thought it looked good, so she recreated it (except she added some meat). As for the toast, I simply toasted Italian bread and spread some Smart Balance on it. Gala apples are actually a lot like Fuji apples, which is why I like them. Both are very sweet and juicy. For whatever reason, it's hard to find Fuji apples where I live, but Galas are easy to find.

Agru: It's actually not ice cream at all (wasn't sure what else to call it). I peeled, cut up, and froze 2 bananas. Then, I put them in the blender (slightly thawed) with vanilla extract, cinnamon (which I adore), and vanilla soy milk. Tastes a lot like ice cream. I'll definitely be making this again.
