Original Post by clairelaine:

  • How would you like to envision yourself and your life in 10 years?
  • If you were that person right now what would you be doing?
  • What can you do today to incorporate the characteristics and life-circumstances of the man or woman you want to be in 10 years?
  • I'm 67 and have a congenital heart defect.  Just 25 years ago the prognisis was death by age 55. Each time I think I'm going to buy the farm there is some miraculous new treatment and they put me back together better than ever.

The question is, will I still be alive.  If I am, then I'd like to be just what I am now - a happy retired woman with lots of friends and interests.  If I'm not then I'd like to be happy in the afterlife.

(not exactly what you were looking for, right?)

I'll remember you in my prayers.

I like that quote.   Because I'm of a mature age...I AM the person I want to be and it feels very good in my skin.   I have overcome some very unpleasant/traumatic situations to get to where I am now, mentally.  Physically,  I am healthy (thanks to good genes and lifestyle),  happy ( thanks to greatest hubby in the world and great friends) and peacful (thanks to my faith).

The only negative in my life is where I live and that will change with some abundance, if that's in the cards...if not, then I guess this is where I'm supposed to be....So will make the best of it.

i wish this wasn't even an option because it sounds so awful, but i wonder if you could find somewhere that would do a spay abort....

i mean, if there is already an overpopulation problem, the kittens chances are pretty bad anyway. then maybe the mother could be adopted out.

ugh, pet over population makes me so sad. just had a woman at the pet store when buying my dog's food the other day bragging to me about how her friend just bred BOTH of his female pit bulls and had like 20 puppies. she was nice and seemed so clueless that i just held my tongue, but i wanted to throw up.

yes, but usually more expensive, ask around.  over-population of animals is a real problem here, too.  one neighbor has 15 dogs, from several litters of pups, non has shots, barely fed, get out of fence and cause problems for the rest of the neighbors. sheriff has been out several times and they don't do anything. it's unconscionable.  you are kind to try to help.

That's an easy one for me. I'm a Southern boy from Houston, Texas. My mom is from Louisiana but she is not cajun. My dad is from East Texas.

So my primary memory of the holiday is Southern-style Cornbread dressing (also called stuffing). If you don't make it right it can be "packy," that is a soggy gloppy mess. It needs to be a bit browned on top. You have to be careful not to over-mix the ingredients. You need a lot of liquid but there is a fine balance between liquid and solid ingredients for this dish.

Basically it's a combination of cooked, cooled cornbread mixed with sauteed chopped onions and celery, lots of turkey broth (or chicken broth) and some eggs (plus chopped chicken meat, if you have some). Also you can add some more bread such as cubed toasted white bread and such for added texture.

It sounds weird but it's pretty good with the turkey, gravy and canned cranberry sauce.

You got it down pat, kid!  Happy Thanksgiving!

Thanksgiving was always my favorite food holiday - love all the turkey and dressing and associated stuff.  The aromas coming from the kitchen of the turkey baking...ahhh.   But the best part was getting together with my dad's side of the family - lots of aunts, uncles and cousins. Just the best times!  The aunts and uncles are mostly gone now - only 3 left of 8 original brothers and sisters.  Cousins gone their different directions.  I miss them all terribly and miss those wonderful Thanksgivings - but I have the best memories!

Since marrying three years ago, my Hubby cooks the entire dinner - it's also his favorite time of the year.  Last year we had my daughters and family over here.  Our first year together we went out to CA to see his daughters,  this year we're going to AZ to see my daughter and two precious, beautiful, adorable, brilliant, redheaded granddaughters.  Can't wait.

    Happy Thanksgiving to all!

We started doing this a few years ago.  Last year we bought a flock of ducks for one daughter.  You can spend as little as $10 for a share of an animal (heifer,  water buffalo, goat, etc.) or be a generous as you pocketbook allows.  This year we are giving honeybees,  a flock of ducks,  and a brace of rabbits.

I have three tattoos, one on each ankle (small) and a large tribal one on my lower back - but none where they can't be covered up.  My advise is to not do anything too drastic  - you may not like them when you are older and they fall out of favor.  There are still plenty of situations, including work places, where they are inappropriate and not accepted.  Why not put it on your back or side?

I hate Thanksgiving food, and I lived in a broken home, so I had two traditions.  Thanksgivings with my mom was usually pizza day.  With my dad, he'd always work so he'd send me to my uncle's house, who's from Palestine or Gaza or whatever the hell you crazy PC people are calling it nowadays.  We'd make lamb stuffed grape leaves and watch Star Wars all day.  Best grape leaves ever.

My father's family was from Damascus - we always have stuffed grape leaves and kibbi for Christmas - YUM!

My family would make "stuffing", though it seems "dressing" was pretty interchangeable.  It was made with either bread or cornbread, and I kinda think they tried too hard, so never had a good recipe to use.  I always thought it was the nastiest stuff until I met my husband and had some Stove Top.  The Savory Herb is the best.  It is the only kind I eat now.

Stove Top is disgusting.  but thanks for reply...

    Caver, try this:

    My Fabulous Turkey Gravy

Slowly simmer the giblets on the stove top damn near the whole day. Keep letting the water evaporate and add more so the broth will become very rich. Let cool and pick the meat off the neck bones and pulverize the liver so know one knows you put it back in.  I eat the heart as it's my favorite and I want it all to myself. Save the broth.

Use a turkey baster and suck the broth out. Or, better yet, drag a big strong man away from the football game so he can pick up your turkey pan and pour off the broth into a big pan. Put turkey pan back in oven so it can finish or just stay warm.

Add the giblet meat and giblet broth to the turkey broth. Bring to a boil. Add salt, pepper, a little garlic powder and a little onion powder. Mix about 4 Tbs flour in about 1 cup of milk. Add slowly and continue to boil. Keep adding flour/milk mixture until the gravy thickens. Don't make it super thick, but it shouldn't look like broth either. Keep the heat up high as you boil it so that the flour cooks in the gravy. The gravy should be a lovely golden brown color.

Season with additional salt & pepper to taste.

My gravy is so good, I can't hardly make enough so that I'll have leftovers.

I often make pumpkin pie from the canned. I don't even consider that a cheat. If I'm doing pumpkin pie from pumpkins, it's because I took a weekend in October to go to the orchard and then cook. I prepare the pumpkins way in advance and freeze it so it's about the same amount of work as opening a can.

Edit to add: Skim off the fat from the pan broth.

Sounds just like mine....now my mouth is watering.

Don't move to Canada and ask for dressing; dressing is what goes on your salad.

I've used the Stovetop Cornbread as a base for the extras in my stuffing, in a pinch.  It is very salty, so we've swtiched to Browns.  I don't know anyone who makes stuffing from scratch.

I did have an oatmeal stuffing made by a Scottish friend once - I don't know what all was in it, but it was the best thing I've ever tasted.

I wouldn't eat at anyone's house who didn't make stuffing from scratch. Box mixed crap filled with all kinds of preservatives, artificial flavors, artificial colors, HFCS, monosodium glutamate to mention a few.

If you can't make stuffing from scratch one day out of the year, don't make it at all.

I'm with you!  Dressing isn't difficult to make and worth the effort.

Recipes any healthy chili recipes? Nov 16 2009

    2

Being from Texas, and having raised my own cattle, I'm spoiled to "real" chili. Chili is a serious topic in Texas!  Here is my recipe - taken from a book about the cattle drives up the Chisholm trail.  The cooks used what they could carry in the wagons.  NO tomatoes!

    • Good beef, cut into one-inch pieces (NOT ground beef!)
    • Brown the beef in bacon drippings (OK, you can use Veg.oil  :(
    • In another skillet saute chopped onion and chopped garlic; add to browned beef.
    • left-over coffee from the pot (whatever is left)
    • water to cover beef
    • Mexican chili powder
    • cumin
    • peppers if you like it hot
    • salt if needed, but taste first

All ingredients are added in amounts according to your taste.  I never actually measure them.

Simmer for several hours until beef is tender.  Add Masa to thicken sauce, if you like.  NO beans!  You can add beans to your bowl of chili but they are are cooked separately.  I have added a can of beer if I happen to have one, but that's not authentic.

My hubby cooks Thanksgiving dinner - even makes apple pies entirely from scratch (including the pie crust).  Being from NYC, he stuffs the bird.  Me being from TX I have to make cornbread dressing.  I also make a dish that my Syrian family always had - Rice and Vermicelli.   Break up vermicelli in small pieces. Saute in butter until lightly browned.  Add long grain rice (equal portions to amount of pasta), chicken or turkey broth, salt and pepper. Simmer until rice is cooked.

    Happy Thanksgiving to all.

I have very eclectic taste in music.  Looking at my stack of Cds - Classical, Yani, CCR, Pink Floyd, ZZ Top,  Elton John, Anita Baker, ABBA, Willy Nelson, George Straite, Wynona, .  Depends on my mood.  Have mostly Yani in the stack on the bike,  rock in the car.  Being the old broad that I am, I haven't heard of some of the bands mentioned.  Maybe time to change radio stations to see what's out there?

I have been with Ebay since their inception and only had two problems.  You can report any problem to them.  If you use PayPal, they are great about solving problems with unpaid buyers.

Regarding combined shipping, most sellers do combine shipping for a reasonable extra amount, if that other item actually adds to the cost.  Say and extra 50 cents to a $5.00 s/h fee, for example, if the item doesn't weigh alot. I always have my items weighed and use the USPS lable via PayPal.

    Better luck to you.
