Found a good Enchilada Casserole Recipe. It's easy to put together and only takes 30 mins to bake :)

Enchilada Casserole

SERVES 6

 

INGREDIENTS

 

* 2 garlic cloves, minced
* 1/2 small onion, diced
* 1 1/4 pounds ground turkey
* 5 Tbsp chili powder
* salt & pepper to taste
* 2 dozen white corn tortillas
* 1-2 (29 oz) cans mild enchilada sauce
* shredded mozzarella cheese
* shredded cheddar cheese
* aluminum pan for lasagna
* non-stick spray

 

INSTRUCTIONS

 

Saute the garlic and onion in a large pan coated with non-stick spray for 30 seconds. Add the ground turkey and cook until the meat is no longer pink. Season with the chili powder and salt & pepper to taste. Set aside.

Spray the lasagna pan with non-stick spray. Lay down a bottom cover of sauce in the pan. Follow that with a layer of tortillas; then spread the meat over that; follow this with a sprinkling of both cheeses over the meat; then a layer of sauce; tortillas; meat; cheeses; sauce. Top with a light sprinkling of both cheeses. Cover with plastic wrap, then tin foil.

Bake in 425 degree oven for 20 minutes. Then pull the plastic wrap and foil off and bake for an additional 10-15 minutes. Let cool in for 30 minutes to let the casserole set up.

Absolutely rudest moment - Ironically enough, in my lab course I was paired with a girl who had OCE. She was overweight. I was emaciated. One day, she kept saying how she couldn't wait for our break so she could get something to eat. Someone in class said "At least Tori doesn't have to worry about Lauren eating her; she wouldn't be very filling."

I had this kid, that liked to literally pick me up over his head, and spin me around like a wrestler...absolutely mortifying...

I've had the same! Some moron actually tried telling me that I need to STOP trying to gain weight, and tried telling me that I have a pooch now - just because they're trying to LOSE weight. I couldnt believe it.

I've been working so hard (feels like my whole life), to try to gain some weight and be healthy, and I didnt need to hear that at all. Some people are just really mindless of other people's feelings when they say things. We just have to keep on our path to being healthy.

Hi Im new here, but I thought I'd add my 2 cents as well! :)

  • Whole Milk
  • Soy Milk
  • Extra sugar and heavy cream in my tea and coffee
  • Milo - chocolate drink mix  (if you can find it, sometimes in the Hot Cocoa section of grocery store, sometimes in the Ethnic Section near the Mexican stuff)
  • English Muffins with Land O Lakes Margarine
  • White Bread = more natural sugar in it, less fiber so I dont get full too fast
  • Hummus mixed with  shredded cheese and olive oil on bread or fruit
  • Cheese sticks
  • Gnocchi Pasta with Alfredo Sauce
  • Cheese Tortellini with Alfredo Sauce
  • Chicken Tikka (in a cream-based sauce) - usually I mix the store-bought tikka sauce with heavy cream, dark meat chicken (thighs). Serve with buttery rice!
  • Add green peas to the rice, mix but dont mash them in
  • Chickpeas
  • Almonds! 1 cup almonds = 800 calories! :)
  • Soft Batch Cookies
