Sure! It's from "Skinny Bitch in the Kitch".

2 tablespoons extra-virgin olive oil

1 1/2 tablespoons organic lemon juice

1 teaspoon dried oregano

1 teaspoon fine sea salt

1/2 teaspoon crushed red pepper

400-450g extra-firm tofu, cut into 1.25-2 cm cubes

In a medium bowl, whisk together the olive oil, oregano, salt and red pepper. Add the tofu and toss gently. Let marinate for at least 1 hour, stirring occasionally. Use immediately :)

It's soooo yum!

Thank you! Can't wait to try that

Okay so apparently I need more fat in my diet, so that's what I'm trying to do...

Breakfast: Smoothie with a banana, strawberries, orange, pitted dates, a teaspoon of peanut butter and a splash of rice milk.

Lunch: Greek Salad with kale, iceberg, spinach, cubed tomato, sliced red onion, kalamata olives and marinated tofu "feta".

Dinner: Is going to be pasta at a restaurant. First time I've eaten out as a vegan - wish me luck!

Snack: I bought some cherries today so I'll have those.

Vegan feta :o Would you mind sharing your recipe?! Best of luck eating out

Thank you! I love these visual guides as I am terrible at "eyeballing" portions, but its not always convenient to weight/measure things. I found another good website which had the portions that were placed next to every day items so it it easier to replicate them (although, it didn't have as nearly as many food as this link does!), but I lost the link I had for it

kaybug: Thank you so much for the calcium link, it was really informative and helpful. A crumpet is a bready with flour, yeast, salt - and baking powder, I think. They are normally circular, about 3cms thick with holes in the top and a "resilient, slightly spongy texture being very porous". They are not at all sugary tasting like waffles, but their texture is sort of similar to a pancake. They are a bit doughy and stodgy in the form you buy them in, but if you toast them they taste soooo good. I think they are originally English, traditionally eaten at afternoon tea, and generally toasted and topped with things like butter, jam honey - but I am weird and like nothing on them. Sorry for the long, un-clear description, they are a really hard food to describe!

Breakfast: Porridge w/almonds and maple syrup

Lunch: Lentil and vegetable soup, half an apple, pear

Snack: Whole wheat bagel (home made by me yesterday - they were actually pretty good, if I saw so myself!), red grapes

Dinner: Bean and tomato sauce w/whole wheat pasta, cashews, steamed carrots and brocolli

Dessert: FF raspberry yoghurt

Snack: Granola w/light soy

Breakfast - Porridge w/raisins and cinnamon

Lunch - A crumpet, light blueberry yoghurt, some kettle chips (a very random lunch)

Snack - Apple, 2 satsumas

Dinner - Spinach and chestnut bake, steamed cauliflower, carrots and peas

Dessert - 3 mini cookies and plain yoghurt

Snack - Whole wheat tortilla w/ peanut butter

Since supplements/vitamins were being discussed, is there any merit in taking calcium supplements? In my family (on both sides) literally every woman has got osteoporosis/the beginnings&nbs p;of it when they get to to about 40, so calcium intake is something of a concern to - so while supplements seem a good idea in principle, I've heard that you can't absorb the calcium from them for some reason. Does anyone know if this is true?

What is your favourite savoury breakfast item? Whole wheat English muffins or whole wheat bagels... oooh or crumpets nom nom nom

What is your favourite sweet breakfast item? Porridge or granola (or if I've got a really sweet tooth that day waffles or pancakes!)

What is your favourite savoury breakfast meal? Egg white mushroom omelette, slice of whole wheat toast

What is your favourite sweet breakfast meal? Granola w/soya milk and raspberries, a waffle w/maple syrup or a Scotch pancake w/maple syrup (I've never actually eaten this, but its a combo of my favorite sweet breakfast foods!)

What breakfast item do you loathe? I hate savoury foods for breakfast (other than egg white omelette or bread) and fried/salty foods

Juice, milk, tea, coffee, or water? Just water or tea

What variety of juice/milk/tea/coffee/water? Plain water or a fruit/herbal tea

What local or national breakfast item or meal would you like to try that you never have? errrm... I've never tried hash browns, but I don't think I'd like them anyway

What international breakfast item or meal would you like to try that you never have? French toast!

Who makes your favourite fast food, takeaway, or restaurant breakfast item? I've never go out for breakfast, but I love hotel breakfasts!

What is it? Buffet breakfasts all the way! I always eat tons, as I only go to hotels once a year or so, and breakfast is my favorite meal of the day, so I may as well indulge!

What is a "traditional breakfast" to you? Porridge with a topping, or cereal, toast and juice (Like when I was little!)

What makes your breakfast complete - and I don't just mean nutritionally! Listening to the radio. In my house, we've always had breakfast whilst listening to it, so eating breakfast without it seems odd

And of course, most importantly: How do you take your eggs? Egg white omelette

OK, so yesterday was a really awful day (I had the biggest fight yet with my best friend, I found out my other closest friend may be sectioned, my friend with an ED is spiraling downward, I had arguments with everyone in my family, got a crap grade for a mock exam essay and I am insanely stressed out over coursework which I have to get an A in) which all accumulated to me binging/emotionally eating horrid amount of food.
