Being vegan doesn't actually "require" a lot of fake foods. I have been vegetarian for almost 10 years, vegan for one year. I am the healthiest I have ever been. My coworkers are always sick. I have had one cold since going vegan. I used to be sick on and off all winter (I live way up North.) I do not eat a lot of fake meats or soy products because I like to stay away from heavily processed foods in general. I find that I am able to get most of my vitamins from eating a variety of fruits and vegetables, with whole grain breads, pastas, quinoa, etc. I take a simple multivitamin most days, just to ensure that I am getting enough iron and calcium.

My sister did a 30 day challenge as part of her new year's resolution. She found that using meat substitutes such as "deli" slices and faux meatballs helped with the transition. I don't really eat meat substitutes myself (I just never liked meat even as a kid and some of the subs are very similar to the real thing), but I know that others have found them really helpful when they are switching from an omni to a veggie diet.

I'm not familiar with that brand, but I can tell you that I loooove veggie burgers, and a few of my favorite brands are Dr. Praeger's, Amy's, and the Gardenburger Veggie Medley ones. You can find these at most stores - I buy mine at Whole Foods or Trader Joe's, but I have seen them at Shaw's as well. I'm going to go google Big Mountain now.

If I end up with leftovers from dinner the night before, I just bring that (stirfry, pasta and veggies, etc) Otherwise I like sandwiches - I never get sick of hummus. I like to buy the mini whole wheat pitas and stuff two of them with hummus, lettuce, tomatoes, sprouts, avocado if I have it. I usually pack an apple and peanut butter for a snack too.

Breakfast: 2 clementines (50 cals), high-fiber cereal (225 cals) with rice milk (98 cals)

Snack: apple with peanut butter (175 cals)

Lunch: hummus, lettuce and tomato sandwich on whole wheat bread (250 cals), pineapple (80 cals)

Snack: another clementine (25 cals)

Snack (before the gym): larabar (200 cals)

Dinner (will be): broccoli (30 cals), veggie burger on a slice of whole wheat bread with hummus and ketchup (225 cals)

Snack: luna bar (180 cals)

Lunch: salad with lettuce, tomatoes, carrots, cukes and red peppers w/balsamic dressing (150 cals)

Snack: banana (90 cals)

Dinner: lentil soup (240 cals) with wheat crackers (75 cals) and a whole wheat pita with hummus (130 cals)

Dessert: chocolate pudding made with soy milk (130 cals)

I've been vegan for close to a year now (I was lacto-ovo veg for a few years before that) and I feel great! I try not to be preachy, but honestly, my digestion is MUCH better, and I have had one cold that lasted less than three days. I used to be sick almost all winter, it seems. Not anymore. :) I did lose a few pounds also - I was a pretty healthy vegetarian before, but I did eat quite a bit of dairy. It's not as hard to cut those things out as you might think, especially if you do some research and find out where it all comes from. Those are some of the benefits. The only real disadvantages are dealing with questions and arguments from friends and family.... you just have to be prepared for those. I don't know any other vegans in real life, so I'm used to the questions, and I really don't mind being different. Eating out can sometimes present a challenge, but there are lots of websites that list vegan dishes at chain restaurants, and many chefs will be happy to make you a special vegetarian dish. I have been lucky, and have not encountered any of the hostility others have mentioned on some discussion boards. Let me know if I can help with any other questions. :)

I use Rice Dream original on cereal and stuff, but I usually bake with soy milk. I have never tried almond milk - hmmmm..

Thanks! I guess I am just overdoing the carbs - gotta watch that. :) I sometimes wonder if I should cut my calories a little..? I am 5' 8.5", 140 lbs. I would like to lose 10 lbs or so, but I have not been working out a lot because with my commute and work I am gone 12 hours a day, plus New England winters are dark and cold! :) Advice?
