Thanks for clarifying that for me!

It would be worth a try.  I love potatoes and onion so it sounds good to me.

I never had knish and am unsure of what it is, but I do have MasterCook on my computer with a billion recipes in it so I searched and this seems to be a healthier version:

Potato Knishes

From the LA Time

2 pounds potatoes, peeled and sliced
salt
nonfat chicken broth
1 whole onion, chopped
pepper
paprika

Place potato pieces in medium saucepan. Cover with cold water.  Add 1
teaspoon salt. Cover and bring to boil. Reduce heat and simmer,
covered, until potatoes are tender, about 20 minutes.

Spray medium non-stick skillet with non-stick vegetable spray. Add
1/2 cup nonfat chicken broth and heat until hot. Add onion and cook
until broth evaporates and onion is browned. Add more broth if broth
cooks away and onion is not yet brown.

Drain potatoes from cooking liquid. Reserve some of liquid. Mash
potatoes with potato masher or hand mixer. Add browned onion.  Season
to taste with salt and pepper. If potatoes seem too thick, add some
cooking liquid or more nonfat chicken broth. Continue mixing until
potatoes have smooth consistency.

Spray large baking sheet with non-stick vegetable spray. Fill pastry
bag fitted with 1/2-inch star tube. with potato mixture. Squeeze bag
onto sheet to form flowerets. Sprinkle with little paprika, if
desired.  Bake at 400 degrees until lightly browned, about 20
minutes.

To make muffins, spray 8 cups of 12- cup muffin pan with non-stick
vegetable spray. Fill prepared cups with potato mixture. Season to
taste with paprika, if desired. Bake at 400 degrees 20 minutes.
Potatoes will puff up slightly. Cool in pan before trying to remove.

To make kugel, spray 9-inch-square pan with non-stick vegetable
spray. Fill pan with potato mixture. Season to taste with paprika.
Bake at 400 degrees 20 minutes. Cut into squares.

You are so amazing for doing this and overcoming your ED. I have a friend who is struggling right now with one and your story brings me hope that she will someday over come it.

I agree with the banana or a good cold, crisp apple.

I also really like a good granola bar or some flavored oatmeal.

Yogurt is another good one too.

This post is a good one and sent me thinking about all the things I don't miss about being a big girl for the last two days. This has been good since I went from 255lbs to 155lbs and then slowly backslid the last two years and gained back 30lbs. I still enjoy what I look like, I would just like to see those extra 30lbs back off. Some of the things listed in the original list are great and what others have put in I can relate to as well but here is my list that I have mulled over:

1. Rolling my ankles or my ankles giving out

2. Chest pains

3. Being 20 but feeling 40

4. I hate shopping still, but being limited on what I can wear because I was a size 22 (now a 14 and its so much easier!)

5. Not being able to tie my shoes correctly. (Not in the middle of the shoe but off to the side because I was too heavy to reach down that far)

6. Being the funny fat girl that all the boys loved "as a sister."

7. No worries about the fat roll over the pants

8. Feeling paranoid that my BF was going to leave because I was too fat even though he never said anything and is still with me after 5 years.

9. Hearing "you have such a pretty face" and it all stops right there.

10. Not knowing how to cook because I lived out of a fast food bag. Now, I am pretty good at it and am a Food Network addict.

11.  Sweaty, heat rash thighs.  Ouch!

I think that's about it. Again, thanks for reminding me of all these things and letting me know what is important in life and that's feeling and being healthy. Congrats to you and all the other former heavy girls who did it or are doing it. You are all amazing, beautiful people!

Recipes in need of new low calorie meals Mar 19 2008

Here's another good one that I like that's pretty simple:

Ingredients:

1 egg (70 cal)

1/4 cup black beans (35 cal) (or whatever you like)

1/2 cup peas (optional) (62 cal)

1 low fat or fat free tortilla of your choice.


Scramble the egg, heat the tortilla in the microwave for 10 sec, and then put it all together for a really good burrito.

I always like how the beans and the eggs keep me full for a long time.  Good thing about this too is that you can mix and match with whatever vegetables or beans you have on hand.  You could add a little salsa or cheese as well.

These can be formed into cookies rather than bars and are a really good fix for that peanut butter and chocolate craving.


Chocolate Peanut Butter bars

8 servings

1/4 cup fat-free skim milk
2 Tbsp unsweetened cocoa
2 Tbsp sugar
1/4 cup reduced-fat peanut butter
1 cup uncooked oatmeal
1 tsp olive oil

Mix milk, cocoa powder and sugar in a small saucepan over low heat.

Bring to a boil, then remove from heat. Add peanut butter and stir into mix until melted.

Stir in oatmeal and oil.

Form into 8 bars on a baking sheet lined with wax paper. Freeze overnight or at least 4 hours.

I started this whole journey about 5 years ago to a better me.  I weighed 255lbs at 20 years old and was having chest pains.  I finally said enough to being a fat girl my whole life and I got down to 155.5lbs through healthy eating and working out.  I have floundered the last 3 years and have gained back 30lbs.  I am ready to shed this and get back to 155 because it felt good to be there.  The hardest thing I battle everyday with is finding that balance between having what I love and deprivation.  I love to work out, its just the food that kicks my butt.  I hope that this will be the community and support I need to get through this since that seems to always be my missing element in all of this.
