I had my GB removed a few years ago.  I am still fighting the battle of the buldge though.  One thing I can say is definately watch your fat intake for a while.  Eating greasy foods can make you ill, at least it did me.  Now a few years out I have been able to go back to eating most anything, although that isn't someything I suggest.  Other than the fats bothering me, having my GB out was great as the pain I had had for months was gone.  Just take it easy and get healed up good and then try small amounts of things until you know how they are going to affect you.  Good Luck.
