Green Giant Brand and maybe Byrd's Eye has some nice single serve steamers that are good to take to work for lunch. I will usually purchase oven roasted chicken packets (Perdue has one) that I add for an additional protein. I also like roasted veggies on the grill. I even have an electric mini George Forman I have used at work. I will spritz them with a salad dressing or the butter spritz prior to grilling. Some times (when grilling veggies while camping), I will dice them up in semi-large chunks, lightly coat them with olive oil, grill them up, and sprinkle some of that McCormick's Salad Seasoning on them a few minutes prior to serving. My grilling combo usually consist of asparagus, peppers, onion, potatoes (soak them first to remove some of the starch), mushrooms, and squash (usually zuchinni and yellow crooked neck). |

If the campground is an established one (i.e. Cherrystone Family Campground), on line now to see if they have a Farmer's Market located on or near the grounds. I usually do most of buying there that way I don't have to do a lot of packing and trying to find a place for this and that. I do take plenty water and tea for the family to drink. I do take a case of sodas for us all to share. I know they are a no-no, but I don't drink coffee in the am and I limit myself to 1 a day. I do make a nice tasting cuke and tomato salad for camping. It's so easy. I will usually make a big bowl of trail mix to take with us. Once it's gone, it's gone. I can give you the recipes for us. Just send me a message.
