I've had a George Foreman grill for years. It's great for when you don't want to make a big production out of dinner. 7 mins & it's done! Plus, all the fat drains away.

Usually, I'll have a breast, spiced up with herbs and white rice. I always like to saute some green/red peppers & onions for the side. I do tend to eat more boneless chicken Thighs, though. They are way juicier than breasts.

Ever make enchiladas?

mmm, Spike is delish!! It's a blend of different spices. I use it for chicken & just about anything else! They also have a salt substitute kind which is just as good. You can find it in some stores but I have best luck at health food stores.

I like cut up strawberries, peaches, nectarines & red grapes. Sometimes,  I sprinkle with 1/2tsp of confectioner's sugar for the times I really need something sweet. Plus, 2tbsp of the Hershey's Chocolate Syrup(can) is only 100cal!! You could drizzle that on top as well.

Even if I'm not in the mood, I'll make this anyway & after the first bite, I pretty much clean the bowl. It's really worked keeping me away from the sweets.

I'm the same way about texture. I eat the lowfat as it has more taste than the nonfat. But I will eat it with cucumber, tomato or celery slices. That way there is some firmness to it.

Pancakes? I eat mine without syrup anyways so I don't miss it. There was a good recipe for a low cal pumpkin pancake in the Recipes forum.

I just EggBeaters and will try them out this week. I've been dying for Huevos Rancheros for a while!!

I've been having antipasta salads for lunch lately. Low fat or non fat cottage cheese is good too. I eat it with pepper & tomato or cucumber slices for some solid texture. For something sweet, I'll chop up about 5 strawberries, 1 nectarine & 1 peach, maybe sprinkle with tbsp granola.

It took me a couple wks to figure out what I could eat & still enjoy the taste but it was worth the wait! Don't get discouraged!

Well, I mixed in the tofu with my meatloaf yesterday. As I figured, nobody noticed. lol

I think in the future though, I won't use the firm one. It broke up but not enough. I lied & told everyone it was the oats. :O But everyone ate it up! I liked it, I mean it blended in with the other tastes very well!! This will definitely be part of any ground meat dish I make in the future!

Thanks! I was thinking about marinating in Worchestershire & mixing with the regular meat for meatloaf. Same with tacos. It's more to stretch my $ on the meat but the calories help!!

I've gradually reduced the ground beef in most of my recipes. I don't even buy regular g. beef, I have the butcher grind the London Broil cuts or the top round if on sale. It's way leaner & hardly any grease! Then I'll mix 70% g.turkey w/ 30% beef. It's funny, if he sees that it's turkey, he'll complain but if I mix it before he comes home, he'll eat it fine!

Is it me or are cereal & milk the biggest waste of calories? I'll eat a bowl & 20 min later, I'm still famished!

I like pancakes lately. I'm not big on syrup, so plain is fine for me. Plus, they are really filling.

I would've replied "I think it's pretty neat. It's really exposed me to more knowledge about nutrition & how I can have a well rounded menu that's not only delicious but good for me!"

ps- it is a low blow & I would've called them on it. But I'm a little too blunt sometimes. :o

Soak some boneless, skinless chicken thighs cut in chunks, in 1/4 cup soy sauce with 1 tbsp cornstarch for about 5-10min. Saute garlic, scallions, red pepper slices in sesame oil. Add chicken, turn heat to med-high, brown.

Mix chili powder, peanut butter & 1tbsp honey. Maybe add the rice vinegar? Pour over chicken & cook another few minutes, stir constantly.

I've done this minus the pb but maybe the rice vinegar will thin it down a bit. I usually add more chopped up veggies, like celery, peppers, broccoli, brown mushrooms, cabbage & bean sprouts. I use the chicken thighs because breast meat seems to dry out too quickly & the dark meat is tastier.

I found something at the health food store called Santa Cruz Organics. One of the juices is Lemonade. It's about 100cal per 8oz. I like it.

I've gotten in the mindset that this a gradual process. Instead of being anxious for immediate changes/results, I'm being a bit more patient & realizing that even if it takes a year, I have the time to wait. It takes the pressure off.

I've been counting calories since 6/21 & love it! I also walk for 30 min at least 3x weekly. & lately, I've been doing stretches & slight cardio for about 10min daily. I was recently in an auto accident, so I have to take it very slowly. I figure if I start out slow in the exercise, I'll get more & more used to it & not burn out quickly like I've done in the past. So if walking for a couple months before moving up to jogging is what it takes, so be it!

Have you ever considered water aerobics? I did them prior to my accident & they are awesome!!!

Fresh fruit is your best bet. My husband or I would bake a cake every 3 days or so. I just got my taste buds in the habit of expecting sweets every day. Since I've been counting calories, I realized that most of my eating is due to habit & not that I don't "like" the taste of good food. I'm just not used to eating it.

Not anymore! I haven't had sweets since 6/21. Anytime I want something sweet, I mix up a fruit salad. If I want to "splurge", I sprinkle 1tsp of confectioners sugar on it. It really goes a long way! Plus, I've gotten hubby into the habit as well. The best way to avoid temptation is to only have healthy fruit on hand. :)

Good luck & just remember it's more a matter of training your body & taste buds to want something different. After a bit, it'll be second nature!

ice tea is delicious. Plus, there's so many different flavors, you won't get bored. I also like to do half tea/half hibiscus juice. Already made hibiscus is about 80 cal per 8oz but if you can find the flowers or tea bags its 0cal & naturally sweet!

If you don't mind the taste of Splenda(I'm not a fan), Aquafina has a fruit flavored water. It's pretty good, I just do half water to dull the sweetness of the Splenda.

mmm, thanks for finding this! Isn't it weird that I don't like zucchini or pumpkin, yet I love the bread!!! It must be the cinnamon & nutmeg that do it! LOL

I usually just chat up the butcher. Unfortunately, more & more stores are going without meat counters these days! But in this instance, I think searching out a real butcher shop even if a little extra $ may be worth it in the long run!

Also, wash those strawberries right when you get home. Just one over ripe one in the middle of the pack & they'll all be mush shortly!

What I do is buy London Broil. It's usually on sale & if you are lucky to have a butcher in the grocery store, ask them to grind it for you. It's very lean & almost no grease when you cook it.

Per 3oz serving:

153 Cal
4g Fat

Compare that to 75% lean Ground Beef:

235 Cal
15g Fat

Plus, imo I think the ground London Broil has a better taste & meatier consistency. Hope that helps!

omg the Starbucks Passionfruit is awesome!!! Actually that's what I used to wean off of coffee. Tazo is the brand name of the tea & some SB do sell it in a 20pk for abou $5. Otherwise, I've found it in Vons for about the same.

Also, there is a brand called Stash that is pretty yummy as well. I don't recommend their Mango Passionfruit. Unless you really like the taste of mango, I don't. But the Orange Spice Black Tea or the Black Tea Chai is delish! I make a couple different ones, store them in Mason jars & mix them up when I want a drink.

The Fannie Farmer cookbook has really been a helpful guide. When starting out cooking, find a simple recipe & follow it exactly. After you get confidence, you'll learn how to "fiddle" with the recipe guidelines until you've come up with your own version. I like the website allrecipes, big variety & easy to follow instructions. Plus, you can list what ingredients you want to use & it can pull up recipes like that.

You're really not supposed to quit caffeine "cold turkey". It gives you horrific headaches. My Dr. recommended a gradual reduction over 4 days or so. My addiction was coffee, at least 32oz daily.

What I did was drink ice tea instead. I don't put sugar in mine & it still has caffeine but in lower dosage. If you're not quitting diet coke because of the caffeine, the ice tea thing may work. Now I love ice tea!! But I'm lucky it tastes delish in caffeine free as well!
