I love silken tofu in faux quiches...you can add all types of veggies, a crust, nut. yeast...sooo many options!

Fatfreevegan.com has a really good recipe for an asparagus quiche made with (firm) silken tofu.  It's super flavorful.

I really like Robin Robertson's "Vegan Planet"

Loads of recipes, inspired by cuisine from all over the world.  I haven't made anything yet that I found to be too terribly time consuming.

There's no nutritional info, but the ingredients are (for the most part) pretty basic, so it's easy to figure out. 

I've tried a bunch! of recipes from this book, and have yet to be disappointed.

I'm also interested in purchasing "Veganomicon" - The instructions seems strange to me, but I'm used to a "Step 1, Step 2..." type format.  But there are toons of tasty looking recipes in there.

2. What are the top 3 dishes/recipes you are planning to cook?

- tonight's dinner is a tofu quiche with shiitake mushrooms.

-bean burgers. my husband loves these.

- Moroccan tagine, possibly to use up the green beans we don't eat with the quiche tonight.

3. Topping of choice for popcorn? don't much eat it..but soy sauce is good.

4. Most disastrous recipe/meal failure? i burned some lentils a few days ago. really. really badly. I'm amazed that my pan isn't destroyed.

5. Favorite pickled item? okra. mmmm.

6. How do you organize your recipes? I mark cookbooks with post-it tabs and have a notebook of recipes.

7. Compost, trash, or garbage disposal? trash, occasional garbage disposal.

8. If you were stranded on an island and could only bring 3 foods...what would they be (don't worry about how you'll cook them)? tons of tofu. avocado. homemade bread.

9. Fondest food memory from your childhood? evening dinners spend rehashing our days.


10. Favorite vegan ice cream? don't eat it. my husband does though.

13. Cookbook you have owned for the longest time? probably "The complete vegetarian cookbook"  I still go back to it sometimes, making substitutions where needed.

15. Favorite vegan recipe to serve to an omni friend? several. I just made a french onion soup that my friend loved. That with homemade bread.

16. Seitan, tofu, or tempeh? tempeh, as of late.

17. Favorite meal to cook (or time of day to cook)? I love cooking dinner, though I cook all three meals for my husband and myself.

18. What is sitting on top of your refrigerator? an organizer with cards, stamps, postcards, etc. Checks. a few random things.

19. Name 3 items in your freezer without looking. the only meat in the house: my dog's chicken wings and ribs. Tons of sliced onions.


20. What's on your grocery list? just went shopping. so not too much.

21. Favorite grocery store? live on an airbase..I love the commissary.

22. Name a recipe you'd love to veganize, but haven't yet. Eggs Benedict.

23. Food blog you read the most (besides Isa's because I know you check it everyday). Or maybe the top 3?

24. Favorite vegan candy/chocolate? I don't eat it much. I have made some spectacular peanut butter brownies though.

25. Most extravagant food item purchased lately? i stick to my basics, mostly.  I did buy hubby some soyrizo though.

I prefer my tofu baked - the texture is much more firm, and it doesn't crumble like it tends to do when I stir fry it.

I like to marinade it first (soy sauce, barbeque sauce sweet and sour..whatever) for at least an hour or so.

A quick way to bake it: set oven (I use my toaster oven) to 425 degrees (F).

Cube tofu. Line/spray a cookie sheet. Lay out tofu onto the sheet..you can sprinkle on seasonings there.

Bake tofu for 20 minutes. 

Flip over.

Cook another 15-20 minutes, until desired firmness is achieved. After that, you can toss the tofu into a stir fry, onto a salad..whatever. It's really flavorful, and the texture is the best I've had.

Textured vegetable protein, when reconstituted, can take on a texture similar to ground beef - it's a good stand in in chili.  I've also found that brown lentils are really good in recipes that typically call for ground beef.

I seriously ate pumpkin and oatmeal for breakfast for MONTHS...
I use less than 1/2 cup of oats, 1/2 cup of pumpkin, a half scoop of protein powder, and a miniature box (about 40ish?) raisins. Add cinnamin, occasionally allspice, and some stevia. mmmmm comfort food.

I have a really wide range of books I like to read too...which seems to make it hard to find something as I'm ambling down the aisles in the library.

I recently finished reading The Kite Runner - I'd been hearing about it for quite some time..it's definately a good read - I was hooked the first chapter.

Currently reading Uncle Tom's Cabin.

It shouldn't be a problem substituting it for the sugar. Honey, on the other hand, will probably be a part of the wet ingredients, so you  couldnt just substitute sugar for it, unless you were to make up for the loss of liquid.

This is easy: miso paste (30 calories per tbsp), water (about 1 cup per tbsp of miso), dice up some tofu (i had some extra firm: 70 calories per serving), you can add seaweed, spinach, etc..all low calorie.

I'm pretty sure Flax Seeds contain Omega-Three's.

one of my favorite easy dinners is a chickpea salad sandwich.
Mash up cooked chickpeas, with soy mayo or avocado to make it creamier..I like to add spices - garlic powder, salt, pepper. Maybe some relish.  Spread onto slices of bread. Top with tomato/lettuce/whatever.  Mmmm..
This has endless variations with different beans/condiments.

I've heard of some people breaking out pretty badly after going veg..supposedly your body's way of releasing toxins (naturally).  After your body adjusts to the change, your skin should even out.

I liked it as well. Something different from Will Ferrell's typical stuff (which, IMO is hilarious)..it has a little more depth, so I can see that fans of his other work wouldn't be as interested. I enjoyed it!

Something liiike...

Brk: 3/8 c. oats, 1/2 c. pumpkin puree, small box of raisins, half scoop of soy protien powder...and coffee =)

Snack: orange and chocolate soymilk OR half a grapefruit and some nuts/seeds

Snack: bowl of cut up tomatoes and cucumbers, tossed with texas pete (vinegary hot sauce)

Lunch: veggie soup with beans. Wasa cracker with peanut butter if I'm splurging.

Post-workout: protein shake made with half a banana and 1/2 c. soymilk.

Snack: fruit. maybe a kashi granola bar.

Dinner: lots of veggies. beans/tofu/tempeh. homemade bread.

Snack: bowl of cut up apples with 2 tbs peanut butter. Every night.

1/2 a baked sweet potato, mashed (leftovers...mmm) + vanilla protein powder + raisins + nut/seed mix + cinnamon  --all this plus some hot water (to make it creamier) was microwaved.  Different from my usual oatmeal, rather tasty, and filling!

Finally - yesss!  Oh, the endless "But where do you get your protein?!".....

uh...from everything. Even lettuce has protein in it.  Okay, it's a miniscule amount, but seriously - most foods have SOME sort of protein.

Luna bars contain no whey protein; 10 grams of protein - from a blend containing soy.
They're quite tasty (I'm quite partial to the lemon zest), and low GI..so they stay with you for a while.

I like to start with oatmeal and take off from there. Chop up a whole apple, add a scoop of soy protein, raisins. You can use milk to make your oatmeal (soy or otherwise), add in ground flaxseed (good fats!) or wheat germ..bananas are a slightly higher calorie addition, instead of an apple. Oh, some chopped nuts would be good too. I love a hearty, healthy bowl of oats. :)

I'm sorry..but if it's been going on for this long, professional help is something you may very well need.  Furthermore, there is no career that can be ruined by you going to psychiatric counseling. None. 
In fact, if you don't seek help, you may not have the opportunity to even have a career.
This might sound harsh and depressing...I'm sorry for that...but it's been 4 years - you need to advance your life, beyond this eating disorder.

It really depends on what the egg is for, whether it's to help rising, or to bind, or whatever.  The flax egg replacer is a commonly used one.  I have an egg substitute by EnerG - but I really don't use it too much. I think it has some sort of leavening, and potato starch in it.  Soft tofu works to bind, as well.  Generally, I've had pretty good results with vegan baking.  Admittedly, sometimes my quick breads don't rise as much, but that could be error on my part...and they taste delicious nonetheless! :)

Of course, if you're trying to make something like an angel-food cake, or meringue, I'm not sure that any of those options will work...I would love to find a substitute that will, though.

All I do is mix the canned pumpkin with the brownie mix - that's it. It's foolproof, relatively low calorie, and delicious :D
