cbullock - thanks for the recipe.  I will give it a try next time i go to the food store to get the ingredients!  I don't have a vita mix, but my blender is working pretty good so far, but when i need a new one, i am going to get a vita mix too!

Happy veg life is....

Green smoothies - my latest breakfast obsession. 40% greens, 60% fruit, blended.

Homemade vegetable soup in the winter, made from scratch in my kitchen with all organic, natural, ingredients, with out a ton of sodium like some canned soups.

Homemade hummus .....yum.

I am newly pescatarian (if that is even such a thing).  I am more proud of myself everyday when i choose not to eat beef, chicken, etc.  Maybe someday I will become a true vegetarian, but i just really love fish and i know it is healthy, and I am not ready to give it up.....yet, we'll see.

Friday!!!!yay:  3oz. baby spinach (included in green smoothie), 3oz. baby arugula salad, 10 baby carrots, minestrone vegetable soup, dinner  -- i don't know yet.

I think as long as you are getting all the other nutrients you need it shouldn't be a problem.  My fiber intake is about 40 - 75 each day, which I think is good. I guess just make sure you are getting enough fat and protein as well.

Lol!  Oh man guys, i don't "shave" the kiwi first.

I just kind of jumped into this one.  I am not so great at getting the peel off in the first place and so i just tried eating the peel, and i started off just having a few bites of it, and then once i was used to it, i just ate the whole peel.  And now i feel like it would be a waste of time for me to take the peel off.  ha. Although, i do always buy organic kiwis so that i am not ingesting any chemicals that are on the peel.  Give it a try!

So, as crazy as it may sound, I eat the skin on the kiwi.  It is edible.  It is a weird texture, but it has extra fiber and the fruit itself is so sweet and juicy that the skin isn't overpowering.

Thursday:  green smoothie for breakfast - with kale, baby carrots about 10, cucumber, 1 red bell pepper, lentil vegetable soup, dinner - not sure yet, maybe sushi with seaweed salad, and a little avocado in my sushi roll. I am doing great with my veggies.

Green smoothie i made this morning was 1 bosc pear, 1 C. raspberries, 3 kale leaves (large ones) and about 1/2 C. water and 3 ice cubes.  It was deliecious and you couldn't taste the Kale again.  Tomorrow i am going to try one with spinach i think.

So everyone : the green smoothie this morning was really good.  I found a bunch of different recipes, and am eager to try a bunch of them.  The one i tried this morning i chose because i had the ingredients in the house and it was pretty mild i think.  It was 2  organic gala apples, 1 large kale leaf and the juice of about 1/4 lemon and water so it would blend better.  The key is to use 40% greens to 60% fruits and it won't taste like a blended salad.  It was really green, but it didn't taste bad, it tasted like applesauce pretty much.  I had it for breakfast and it filled me up and I felt detoxified and great. I looked this "green smoothie" idea up online, and got a ton of ideas to incorporate greens like kale, chard, spinach and herbs.  Give it a try!!

Monday: green pepper, roasted red pepper, red onion, broccoli, mixed greens, sundried tomato, red potatoes, yellow onion.

Tuesday: carrots, cucumber, 14 vegetable soup (canned), zuchinni 1 whole, mushrooms.

Wednesday: I am going to try to make a green smoothie using 40% greens, 60% fruits.  I hope it is good, because it seems incredibly healthy.

Friday veggies: so far 1/2 C. canned pumpkin, 2 oz. mixed baby greens, 4oz. tofu (is that a veggie cuz it comes from soybeans?)  1 C. fat free black bean veggie soup, .25 C. black beans, I need to have some more veggies with my dinner. I don't know what we are having yet or if we are going out, but i promise to get something veggie.

Everyone hi.  I am so proud of myself.  We had Sushi for dinner last night.  One of my favorite things to go out to eat for.  I didn't overeat and my weight isn't totally up today from water retention yay!

Ate clean: Yesterday, yes, so far today yes.

Lisa - i think we have the same goal kind of.  how tall are you? My ultimate goal is around 130. I'm 5'6".

Wednesday: 1/2 C. canned pumpkin, 1 lg. cucumber, 1 lg. red pepper, 1 lg. artichoke heart, .25 C. garbanzo beans, 1.25 C baby bella mushrooms, 5 oz. fresh baby spinach, 1/2 yam, 1 C. fat free black bean and vegetable soup.

Thursday: 1/2 C. canned pumpkin, 1 lg. cucumber, 1 lg. artichoke heart, .25 C. garbanzo beans, 3 celery stalks, 1 C. fat free black bean vegetable soup, 1 serving seaweed salad (from sushi take out), .25 C. sliced avocado.

I'm on a roll....

I feel like I am either very all or nothing.  Like i'll do great and have mostly veggies, or i just dont feel like eating them.  This is helping me see if i am getting enough veggies or not.

Ate clean: Yesterday yes, today so far.  Grrrrr...there are a dozen fresh bagels here at work today, hard to resist, but i had breakfast at home and a snack and they were both way healthier than a bagel!

Less than 3 weeks left guys!! Ahhhh.  I still don't know what we're dressing up as.  We'll see.  Maybe Barney and Betty Flinstone.  But i don't know yet.

Saturday: .5 C. canned Pumpkin, 10 baby carrots, mixed greens salad with mushrooms, carrots, onion, tomato, greens, baby spinach. .25 C. eggplant, .25 C. green pepper, .25 C jicama.

Sunday: 2 small hot peppers 1 green 1 red, arugula salad with red onions and tomato, .75 C string beans. (not such a good veggie day)

Monday: 4 celery stalks, .5 C. baby romaine, .75 C. green beans, 2 lg. portabello mushroom caps, 1 small tomato, .5 C tomato sauce, 10 baby carrots, .5 C. baby spinach.

Today I had 1 C. green beans, 1/2 med. tomato, 1 portabello mushroom cap, .25 C grilled eggplant, 1/2 C. zucchini, 1/2 red bell pepper, 1/2 C. small mushrooms, 3 stalks celery. I think this is 5 servings right?

I think I am newly vegetarian. I haven't had any meat in over a week.  I am slowly trying to get off dairy. Good luck getting your veggies in everyone.

Ate Clean: Yesterday - no, went out for a friends bday, ate pizza.

       &nb sp;          Today - so far, yes.  hope to keep it up.

Feeling dehydrated today, goal is to drink 3 liters of water to help with that and water retention from the pizza.

My favorite is Samoas/ the coconut caramel chocolate delicious cookies.  I can't even have them in my house, I would seriously eat the whole entire box, like immediately.  They are soooo good in the fridge or freezer too. Now I wish I had, just one, or maybe a bite of one. Yum.

LOL, my mom calls them ODCs.  haha. 

I guess I am OC about a few things.

Including counting my calories now.

Checking my cell phone, and always having it with me, turning off lights when i leave a room, recycling everything i can, a few other things too i'm sure.

I think I actually am less OCD than I used to be when I was younger.  I think it has a lot to do with being comfortable with who you are and not trying to control natural things.

I'm reading A Thousand Splendid Suns, but Khaled Housseini (the same author who wrote the KiteRunner)  It is a good book, too.  Kind of dark, but interesting, I'm about half way through.

Update : I finished it.  It was a great book.  Currently reading Eat, Pray, Love, the one that was on Oprah, like it so far.

I just bought and read this book a few days ago.  It was good, funny and educational.  I am currently working on being vegetarian, and then will work my way toward becoming vegan.  It may be hard at first, but I think it will be the best thing for my health in the long run.

Just, i don't think i will ever be able to give up leather bags and shoes.  I know, I know, but i just don't think i will be able to.

People tell me i look like Marisa Tomei.  I don't think I do.  I don't really want to be anything like the My Cousin Vinny version of her.

I wish I looked like Angelina Jolie or Eva Mendez, really I think I would just love to have their trainer/chef/make up artist/hair stylist etc.
