There are so many fantastic food blogs (including vegan). My favs are Vegan Feast and Fat Free Vegan. My favorite soup recipe (which also freezes well) is African Peanut Soup with I got from the Allrecipes site. I highly recommend it. Although it is tomato based, it is simple to prepare in a crockpot, can be as spicy or peanut-y as you want it to be, and is high in protein. I also marinade tofu each weekend, bake, and eat tofu sandwiches/wraps all week. |

1. favorite leafy green --gosh...I have so many, love turnip and mustard greens and cabbage. 2. favorite veggie meat product --Sunshine burgers 3. favorite veggie breakfast food --homade tofu scramble with soyrizo, peppers, mushrooms, and yeast flakes 4. favorite veggie appetizer ---chips and salsa 5. favorite way to have tofu --cut thin, marinaded, baked, and made into sandwiches 6. favorite beans? --chickpea 7. milk preference --almond or soy 8. favorite veggie recipe --African peanut soup (vegan) 9. have you ever had meat? --yes, been veggie for 2 years, veggie w/no dairy or eggs for 1 year 10. do you occasionally eat meat? --no 11. if you were a prior meat eater, what food would make you most likely to go back...not saying you ever would actually do it, so i guess your favorite meat. --since I gave up cheese and eggs as well, cheese is most tempting for me, so probably pizza 12. does your romantic partner [if applicable] meat? if so does it make it hard --yes, but as neither of us are not very "domesticated" we cook our own meals. On the weekends, we'll make a stir fry together. |

OK....late to the game, just posted my stats. Gained about a pound. :( I haven't been as dedicated lately, need a kick in the knickers, I suppose. Anyway, fat calculator says 58 grams for me. |

It is so simple. Take a 28 oz. can of tomatoes. 8 cups of veggie broth, 4 cloves of garlic, chili powder to taste, sauteed onions (2 med.) and 1/2 a bag of frozen cut up peppers, 1 c. of brown rice (uncooked) and throw in a crockpot for a few hours (until rice is tender). Stir in 1/4 c. peanut butter and then serve. I usually add a couple of dashes of hot sauce before eating.

I made a huge batch of stirfry 2 nights ago and have been having leftovers for lunch. Tonight I'm having a tasty salad with pinto beans, organic baby spinach, tomatos (they were on sale), cucumbers, and light balsamic vinegar dressing. I usually eat frut for snacks, granny smith apples and oranges (also on sale) have been my mainstay. I've been hungry for soup lately, will probably make a batch of vegetable soup this weekend. Tonight, I may throw African peanut soup together (canned tomato base with peppers and onions). Both freeze well. I'll be out of town next Mon. through Wed. unfortunately. But have a good goal and should be OK. I'm determined to lose a couple of pounds over the next two weeks. |

Sorry, haven't been on the forum for days. Just started a new job and am settling into a new routine. Had to shift my yoga workout later into the evening and have only been on the elliptical a couple of times. Did play in a hockey tournament 2 weekends ago, burned over a thousand calories in 2 days alone. Still plateaued with my weight, but I'm being patient. Tips for something new, especially if you are stuck in an office like me: 1. Wall sits - if you can do 20 reps (resting between) of 30 seconds each, your legs will be on fire! 2. Leg raises while standing and facing your desk. 3. Chair raises. Sit in a chair with knees bent, scoot your butt off the seat with hands on the edge, raise your body up and down working the triceps. Finally, get yourself a pair of old school roller skates (you know - quads) strap them on and go for a skate. |

Finally lost my bloat weight as well. I think I've hit a plateau, so it may take a couple of weeks to lose a pound or 2 but I'm patient. I only have another 10-15 to lose, so I know it will be harder than it has been. The scale number aside, however, I feel and look much better. I bought some new pants last night and am going to reward myself with some skinny jeans when I lose another 7 pounds. Of course, skinny jeans really are a misnomer as I have a butt regardless of my weight. :-) |

Whole grain breads, whole grain pasta, brown rice, and my personal favorite, chickpeas (garbanzo beans). They do kinda taste like chicken. |

Eating carbs sounds scary, but eating complex carbs (brown rice, wheat pasta, whole grain bread, oatmeal, etc.) is great for you. If you want to lose weight and remain pescatarian, the best answer is to eat lots of veggies. Frozen are better than canned (lower sodium), fresh is even better if you can afford it. Tonight I made a stirfry. Simple bag of stirfry vegetables, a dash of olive oil and soy sauce, served over quinoa. Last night, I had a burrito with refried beans, wheat tortilla, salsa and pico. Tomorrow night, I am going to have pasta. Remember to avoid packaged foods, especially faux meats. Yes, boca burgers are convenient, and a great treat once every week or so, but not healthy at all if eaten daily. |

Finding a sport that you like is the easiest way to incorporate exercise into your life. Over the past five years I have ran a marathon, played a season of roller derby, played non-stop ice hockey, taken horse riding lessons, and just started yoga. And the more things you try, che more your confidence grows. Roller derby, me? It all started with running a marathon. Running is cheap and can be done anywhere. You start slow, run/walk a mile, run a mile, and then slowly add distance/time. I know it feels akward at first, but within a few weeks, you will find your natural running gait. And, unlike some sports, you can quickly improve your distance. Walking is also easy and cheap. My boyfriend and I walk the dogs every evening. Good luck, you can do it! |

I've hit the salt challenge three times so far.....But as Miss Vixen points out, this challenge is a marathon, not a sprint. I am enjoying the challenge immensely. Everyone in our group is supportive and doing great. And we're losing weight, which is the bottom line. YAY US!!!!!! |

Low Sodium Tip (well it's kinda a no-brainer, but can I still have 5 points? please don't make me beg..I'll need all the points I can get during the sodium challenge) Anyway, make your own beans versus canned. Cook a crockpot of beans, portion into 1 c. servings, and freeze. Currently in my freezer, I have chickpeas and white beans. I think this weekend, I'll do black beans or pinto beans. |

Try eating more veggies and fruit and substitute beans for meat protein wherever you can. And don't eat too much protein. At 147 pounds, I shoot for about 55 g. of protein a day. It gives me more caloric room for fiber-rich foods. This morning I had a bowl of grits with soy milk, will have a veggie wrap for lunch, apple with sunflower seed butter, slice of flax seed toast with nutritional yeast flakes, half a veggie chili portion over a potato, and a couple of beers. ;-) I never eat bran flakes....ew |

YAY FIBER! I know the bathroom breaks can be a nuisance and downright alarming at times but think about where the waste was going prior to adding the fiber. You were eating the same amount of food and calories, it was just sitting in your colon, which is ewww gross the more you think about it. Before getting serious about my diet, I took a quiz sponsored by some medical study that claimed you added years to your life by meeting or exceeding your minimum fiber amount, not drinking, smoking, and being a healthy weight. Your body adjusts. It took me about 2 weeks for my lower GI to settle in once I went high fiber. |

Last week, I made a red curry stew. It's is simply veggie broth, 1-2 T. red curry paste (Thai Garden will do), and a bag of frozen stir fry veggies. I eat that over rice. Very filling. I've followed someone else's advice on this forum and bake potatoes once a week. I then have them in the fridge during the week for a quick starch. I like salsa and nutritional yeast on a potato. Simple, and tasty. I usually make a crockpot of soup/stew every weekend. Currently, I have a batch of vegan chili and roasted cauliflower soup in the freezer. Most vegan chilis have less than 500 calories if you eat a reasonable portion. I find it to be very filling. Sometimes, I'll have a half portion of veggie chili over a baked potato. |

I agree wholeheartedly. It depends on your body type and how you carry weight. I'm 5'4". The least I ever weighed was 130 in undergrad. I was a true size 4. I now weigh 147 pounds and am a size 8. My goal is 131 pounds, although 135 is probably more realistic for me. |

You seem very down. I know when I'm sad, I eat more, which then makes me even sadder. Maybe you should start to keep a food journal, not just recording the food (that's what CC is for) but how you feel at the time you are eating. If you are binging as an emotional response to situations in your life, then you need to change how you respond to life. Three years ago, I went to a counselor for 6 months in order to resolve some issues from my childhood. It gave me a lot of insight into why I react the way I do to certain things. I'm much happier and find myself not using food as a comfort blanket. Good luck. |

I love African peanut soup. It's even better the next day. 28 oz. tomatoes, diced or chunky,1/2 c. brown rice, 1 c. veggie stock, 1 clove garlic crushed, 1 tsp. red pepper flakes OR 1-2 T. vegan red curry paste 1/3 c. reduced fat peanut butter. Add tomatoes, rice, broth to a pot and bring to a boil. Add garlic, red curry paste, and simmer, covered for 30 minutes. Stir in peanut butter just before serving.

RECIPE CHALLENGE: Roasted Chipeas (tastes like corn nuts) 1 can chickpeas (garbonzo beans), drained Seasoning of choice (i like cajun seasoning, curry powder, garlic powder, etc., stay away from salt though) Preheat oven to 400 degrees. Lightly spray cookie sheet with oil (I prefer canola). Spread out chipeas. Roast in oven for 20 minutes, turning chickpeas periodically. Shut off oven and leave in oven a little longer. You want the chickpeas to be crunchy and lightly browned. Nutritional info: Serving size 1/2 c., Calories: 143, Fat 1.35 g., Cholesterol 0, total carbs 27.25g, dietary fiber 5.3g, protein 6g |

One of my favorite snacks is flax seed toast with a light, light smear of soy garden and then liberally coated with yeast flakes. I also add the flakes to baked potatoes (with salsa), top off pasta, wraps, tofu scrambles....... I LOVE the stuff. You can buy it in bulk at health stores, Whole Foods, Central Market. I bought $8 worth about 3 months ago (about a pound) and am only half-way through it. |

There are plenty of snacks, you just have to rethink your approach and get out of your rut. I like apples with peanut butter, fruit cups, toast with nutritional flakes (in a non-sauce form, kinda tasts like cheddar powder you get on your popcorn), a tasty bowl of cereal with soy milk. You can also get dried fruit packs, apple sauce cups, etc. to take to work. If I find myself stranded without anything to eat at work, I go to Taco Bell and order a bean burrito fresco style (means no cheese, pico instead). Very tasty. I also make crockpot soup once a week and have leftovers all week for lunch. It's pretty easy, tons of veggies, big can of diced tomatos, some veggie broth, canned bean of your choice, salt, season to taste with pepper. I usually add salsa right before I eat it. I also add a dribble of olive oil. |

I gave up cheese about 6 weeks ago. I, too, love cheese. But the longer you go without it, the easier it becomes. Smelling pizza still makes me long for cheese, and probably always will. But I just think about the nastiness (and cruelty) of dairy farms and get over it. You can make a cheesy sauce with nutritional yeast flakes. Does it taste like cheese....not really, but it does have the same consistency. Good luck! |
