Maria, the Diet Coke I used in my DH fudge cake had aspartame in it. I don't see asesulfame in the ingredients list. It came out very fudge and was good.

Amanda, in the above fudge cake each serving had 180 calories x 12 servings per box = 2160 for the whole cake. I have another mix that is 170 per serving so it does vary a bit.

This doesn't help the situation with your red velvet cake, but just FYI. I kept my DH fudge cake in the pan and didn't frost it, but while it was very fudgy, each piece wanted to fall apart when I took it out of the pan. I think next time I'll add some egg white and see if that helps.

To a Duncan Hines chocolate fudge cake mix I added one whole can of Diet Coke. Nothing else. It came out very fudgy and good.

Great Parre - can't wait to hear. I hope it's great and that you like it. I went ahead today and made a regular one with dark chocolate fudge cake because that's all I had on hand. It was great - almost like fudgy brownies, but I really wanted a cool, poke cake. I usually make one for the 4th of July with red or blue jello and put strawberries and blueberries on top. Hoping for good results!

Does anyone know if you can make a Jello Poke Cake out of this? That's one of my favorite summer deserts and it would be great to have it.
