I was raw vegan for a while - the most difficult thing is maintaining variety, in terms of how you 'uncook' and prepare your foods so that the tastes and textures are different enough to keep you interested and satisfied with your daily diet.

I have a few raw vegan 'uncook' books and websites I can recommend - and others I can strongly tell you to avoid, but this isn't the place to post that info, otherwise it's considered advertising ^_^

There's a lot of specialty kitchenware you'll need, or at least want, for raw food prep - Spirooli slicer, Champion juicer [or other whole veg/fruit juicer], Vita-Mix blender, a mandolin slicer, a dehydrator, etc.  You'll want to note that there are variances in the interpretations of what is considered 'raw' food prep or not as regards dehydrating foods - the tempatures considered too hot to consider the food still raw range from 98*F to 110*F.

Let me know if you want some book and site info.  Cheers!

Ooo ... this is a tough one.  In South America, it is very rare to find other vegetarians/vegans - it's a pretty foreign concept to most.  You'll most likely be eating mainly a 'beans and greens' diet, with lots of fruit.  It's a high possibility that even if you explain your dietary preferences, you will be given dishes that may be 'veggie' per se, but definitely not vegan (not sure if you're vegan or a ovo/lacto veggie).

A gracious way to 'bow out' of eating meat dishes is to offer to help in preparing meals, and to specifically make dishes that you can eat as a main dish, which can accompany the meals your host family prepares - you can also help by going shopping with your host family, and helping pitch in money for special food items, such as vegetables and fruit the family wouldn't normally buy.

Become a regular at local farmer markets, and also look into whether your host family has their own garden or not.

Hope these suggestions help!

Splitting your meals into 3 main sittings with 2 or 3 smaller snacks is a great way to go, from what I've read ... supposed to help keep blood sugar balanced and all that ... like the concept of eating 6 small meals a day sort of thing - it's supposed to tide over hunger.  Only thing is to watch the size of your portions ...
Foods What does your packed lunch look like? Aug 14 2007

I guess the best suggestion I can make is to prepare large quantities of two or three different meals on your days/evenings off from work and school, pack it all into single-serving containers (helps with portion control), and then freeze/refridgerate to use later on in the week.  You will be eating a lot of the same food throughout that one week, but you can prepare different dishes eat week to give yourself more variety.

Word of the wise, though, regarding pre-packing salads or greens:  pack greens that can wilt (lettuce, spinach, kale, bok choy, sprouts, etc.) the day before you plan to take them in a packed lunch - do not put any dressing, juice or oil on the greens, pack those separately, otherwise your salad will be soggy and gross when you pull it out to eat later on!

Hope that's helpful!  ^_^
