Hi again!

I once had a bunch of women friends come over for a "Tea leaf and Tarot Party" where we had high tea...scones, rose petal jam, lemon curd, clotted cream, and finger sandwiches...with 3 teas: Lapsang Souchon, Earl Grey, and Shotgun. We had several decks of Taort cards and told each others fortunes, and read our tea leaves from a book of tea leaf formations and their meanings. It was really fun. I made everything homemade, and gave all a couple take away gifts: Lace Drawer Sachets and rose petal jam. They had a great time -I should do it again!

Fall screams for soup. I Heart soup too, and love creamy ones. I just made cream of mushroom using Fat Free Coffee Cream and it was great.

Saute mushrooms and onions and garlic, add a bit of parsley and a can of mushroom soup, a can of water and a can of FF cream: YUMBO.

Nothing is as frugal as making it yourself. Homemade granola with dried fruits and nuts is very filling as a snack for big eating teens. As is popcorn.

Making meals with beans as protien is much less expensive than a meat fowl or fish meal. It is more filling, too. Chili, soups, beans and rice, bean enchiladas and more search the net for good bean recipes.

And making sure you buy in bulk helps with prices too. Buy a large chicken or turkey and make 2 meals out of it. Make a large salad one night and use it the next day as sandwich filling with avocado or cheese.

And the casserole, if your family will eat them, can be very cheap to make. There is zucchini pie, shepards pie, mac n cheese, pasta with anything- try veg and oil and garlic no sauce or meat...

If the kids eat a good meal then healthy snacks can fill the void in between.

And make your own yogurt and or kefir...the cost of a gallon of milk made into yogurt you flavor yourself is cheap compared to regular yogurt in the store prices.

I make "granogurt" with homemade yogurt and granola, baked in the oven as a dessert that is healthy and fillng.

I've always loved tuna - any way!

But this is really good:
equal amounts flaked tuna with low fat cottage cheese ( I like the chive flavor is I can find it) with lots of fresh cracked pepper. Good as sandwich filling or plain.

I make both yogurt and kefir using whole milk, and I use lots of these products in cooking, for example:
Leftover rice with equal amounts of either yogurt or kefir and some chopped apples baked in the oven makes a great rice pudding. I add some honey or agave for sweetener.

I also freeze some flavored with sweetened fruit puree in a long container then "scrape it with a fork" a la sorbet or Italian ice style...it is delicious as desert or throw into the blender for a cold slushie.

Joseph's Flax Oat Bran Pita Bread

Joseph's Flax Oat Bran and Whole Wheat Flour Pita Bread has a super long name, trying to fit every "healthy part" of its ingredient list into that header. In essence this is a low carb, no trans fat, high omega-3 version of pita bread for wraps and dips.

I eat a fair number of pita breads and wraps in my weekly menu. You need to be aware up front that this is a little "floppier" than most standard pita breads. It does still have a reasonable texture, but it doesn't have the firmness that some others have. For most applications this really doesn't matter much. You're holding the bread / sandwich in your hand anyway as you eat it.

The flavor is reasonably fine. I mean, what does pita bread really taste like? :) It has a mild, bready flavor.

The benefit here is in the nutrition. For a given pita, there is 8g of carbs - but you get a whole 4g of fiber here! So there's only 4g of net carbs, plus you get 4g of great fiber into your system.

On the fat side, you're in great shape here. There are only 2g of fat, with no saturated fat and no trans fats.

There's also 6g of protein - always a nice thing!

There are all sorts of great ideas for things to do with a wrap.

First, you can make an egg salad wrap. Egg salad is super fast to make, especially if you have one of those microwave egg boilers. Mix it up, wrap it in the wrap, add some lettuce if you want, and enjoy!

Tuna is another great thing to use with wraps. Cans of tuna keep indefinitely on your shelf. Mix up some tuna with some mayo or oil, maybe add in some olives or capers, and you're all set! A perfect snack or lunch.

Another thing I like to use pita with is hummis. Hummis has fiber and protein in it - and is tasty! If you put some hummis into a ramekin, scoop out portions with the pita bread, it's quite "comfort food" and relaxing. Perfect with a glass of wine.

In general pita bread is a great low-carb substitute for bread - and also for chips. Highly recommended for anyone on a healthy eating way of life!

OMG! I fell in LOVE with the smokey taste of Lapsang Souchong and am addicted now! Russian caravan is a close second in flavor.

At first taste I d thought yuck! But it grows on you and nothing else tastes as sophistacated and delicious now.

AND... there is NOTHING like a hot scone with clotted cream and lemon curd, well maybe strawberry jam and an oatie to go with that tea (Hey there to dannon!

As for zukes, my garden gets them all at once every year, as well as green and yellow beans, for that matter.

I like to make a stewed veggie dish where I use whatever is ripe: chunks of zukes, green or yellow beans, cabbage, onions, garlic, andfresh or canned whole tomatoes with snipped oregano and thyme. Salt and pepper to taste.

I also add lentils to this and it is so delicious- both my dog and i gobble it up.

I like to make zuchini "roll-ups" too, sliced the long way into strips, I lightly steam or fry them - no oil in a skillet. Then fill with a tablespoon or two of  rice with meat, fish or cheese, place into a baking dish and top with tomato sauce or  a cheese mixture of motzarella and cheddar. Depends on my caloric intake for the day... bake at 350 for 20 minutes or you can nuke it for 2 minutes.

And...once in a blue moon I make fried zucchini as it is the ONLY way my hubby will eat it.

Oh yes, I also make terrific zuke fritatta and use the blossoms too.

My husband had a business trip to Mexico recently where he was introduced to a jalepeno recipe that rocks. You grill or broil the washed jalepenos until a little soft, then add the juice of a whole lemon for about 10 jalenoos, and add salt and pepper. Place in a bowl for 5 minutes before eating to marinate a bit.

So simple, so cheap and so tasty.

Salad and colesalw "stuff" and local farmers market veggies to supplement my garden, potatoes, brown rice, soba noodles, scallions & bean sprouts, avocado, salsa

Seafood of some sort and shellfish, chicken and  ground turkey

Canned beans, tuna, broth, mandarin oranges, yogurt,butter, pickled vegies

the 100 calorie dark 70% chocolate bars in several brands are very satisfying with a cup of expresso for a divine indulgence. I actually only eat 1/2 a serving with the expresso and am very satisfied.

I find it is the taste not the amount that really counts.

Do not go fat free or sugar free as it just does not satisfy.

Eat small portions of real food.

OK - I did good.

First a hakf cup of egg drop soup-70 calories.

Then I had steamed salmon and broccoli and some chicken on a stick( boneless skinless thigh).

For dessert I had some cherries, cucumbers, melon and a bite of apple pie.

Not too bad at all.

Many local groceries in MA carry Oat Bran Pita Bread. The 4 inch pockets are 45 calories and the 6 inch are 60 calories. Very filling due to high fiber, and taste great. I make them into roll ups or pockets or just with melted cheese and a veg in the middle in the toaster oven.

Last night I made seafood casserole using scallops, shrimo, and filet of sole rolled up. I sprayed my casserole dish with olive oil, layered in the seafood, and sprinkled homemade toasted wheat crumbs lightly on top with a tablespoon of melted butter mixed with the juice os a lemon. I added chopped parsley, salt, pepper, and garlic powder.

I made cole slaw with a vinegraitte and some oven baked "fries". Very low cal and tasted great.

hey meaow!

Try some drained tuna fish with plain or chive cottage cheese - I like it because of the protein and I'm not a breakfast food person. You can smear it on taost or melba if youneed more crunch.

This is good any time of day.

I have a glass tomato juice with lemon and pepper with it.

I use 4 cups Quaker Oats (not quick type) and 2 cups  chopped walnuts, pecans, and 1 cup chopped fine dates or figs mixed in a bowl with 2 tablespoons flax seed oil and 4 tablespoons Agave Nectar as sweetener.

I place the mixture onto wax paper top & bottom and press it 1/2 inch flat, then cut into bars.

I place the bars carefully with a spatula on a Silpad and bake at 200 degrees for 30 mionutes or so.

These are very low cal and healthy and really do taste good.

Ever thought of soups and juices? Tomato or vegetable soup, pureed butternut, cream of celery, asparagus or broccoli...then there is V-8 and all the newer carrot juie and fruit based Veg juices...

On the raw side: If you like raw carrots, how about cole slaw? If you try it with your fave dip watered down you may find you ove it. make a salad of crudites...and eat that. What about salsa? That's veggies too.

I make homemade dog food forJack, my Lab Retriever mix, and it is so tasty I often eat a bowl myself !

Ingredients: Brown rice with some olive oil, chopped apple, garlic, raw oats, chopped carrots, sweet potato, ground flaxseed, frozen peas, and ground turkey or buffalo meat.

I brown the meat in olive oil and add a small amount of salt. Then I add all the ingredients and enough water to cover, and simmer until rice is done...about 50 minutes, checking to see if more water is needed periodically.

It keeps in the fridge for 3-5 days.

I also make seasoned ground turkey with chpped oniopns and garlic init, shape it into logs and cook in oilive oil and water then rollup in lettuce leaves or oat bran pita bread...very tasty, too.

Add some caraway seeds to the kraut mix of apples and onions and beer or white wine-it really enhances this dish.

I cook mine in a glass baking dish with the pork on top of the kraut mix. It stays really moist and get flavored by the veg below. I use a very lean center cut so fat is at a minimum.
