Kale is one of the most nutritious foods you can eat. I sautee a leek (white part only) in olive oil, add some garlic, then add kale with a squeeze of lemon juice. Let the kale wilt down (but still bright green) and at a pinch of nutmeg & pepper.

You can do the same for beet greens but I haven't used them before.

Fitness OK, who has it all figured out? Nov 20 2009

For me, Curves worked for losing pounds in the beginning (until it got really boring and I couldn't take the monotony anymore).

To really change the shape of my body and improve my physical condition, a combo of cardio, endurance, strength and heavy lifting sessions designed by a personal trainer PLUS a clean eating diet has been key. My main turning point was signing up for different fitness classes (first Spin, until I got bored with it, then bootcamp classes, which I still do several times a week... they changed my life.)

Fitness morning workouts, how do YOU feel? Nov 20 2009

I hate working out in the mornings (before work, that is). My gym is a 20-30 mins drive from my gym so I'd have to get up even earlier than I already do, bring all my makeup & hair stuff and breakfast... it's not worth the effort to me. I'd rather go after work (the gym is right next to my office building), avoid rush hour traffic and actually enjoy myself.

But that's just me! I can see how people with otherwise busy schedules would like to take advantage of an early workout time.

Luckily for you, one of my favourite veg blogs just posted a vegan pot pie recipe: http://blog.fatfreevegan.com/2009/11/celebrat ion-pot-pie-with-pumpkin.html

If you check the index, I know there's probably a few other pot pie or Sheppard's pie recipes on her site.

Nature's Path Multibran Flax cereal with unsweetened vanilla almond milk and raisins, blueberries or banana added in. However, unless I eat it with a protein (like yogurt or eggs), I'm always hungry an hour later. Just having a bowl of cereal is not enough for me.

I used to take fresh white bread, pull off the crust, then roll the bread into a ball until I got warm & eat it.

I used to love chocolate-dipped digestive biscuits, dunked in tea (with sugar & milk). Same for Chips Ahoy! cookies & Arrowroot biscuits.

Sometimes I'd make a GIANT bowl of cereal, mixing all the varieties we had in the cupboard.

A few years ago, I noticed my hair was thinning a bit so I asked my doctor. He said that unless it comes out in clumps or in circular patterns, it's nothing major. Eventually, my hair loss went back to normal.

Intellectually, I know you're right.

But emotionally, the phrase "miserable thin, rich, good-looking" sounds like a contradiction in terms. How could they still be miserable?

They've already won life's lottery. They have everything.(almost)

A rich, good-looking person could have a terminal illness, a sick relative, depression issues, no friends, no social skills, etc. Externally, their life is great. Internally, they could be miserable.

Do you feel happier now that you have lost the weight?

Or have you set your sights on something new in your life that you hope will do the trick?

 Short answer: YES.

Long answer: when I was overweight, I was shy, paranoid, self-conscious, bitter and crabby. I hated being fat and I thought everyone noticed it. I made the choice to completely change my outlook and take control of myself. After I lost weight, I was more confident & more willing to take chances. Today, fitness & healthy eating are a major part of my life. On many levels, losing weight was one of the most rewarding things I've done.

EDIT: I lost 40 lbs and kept it off for 7 years, then lost another 15 lbs, kept it off for 2 and in the past year, I've lost another 10 lbs. So in total, I've lost 65 lbs in different periods of time but I've never regained, nor have I ever fallen off the wagon long enough to regain.

They did it last season on The Biggest Loser! haha... but in reality, unless walking is against the race's rules or your doctor advises against walking that far of a distance, I can't see why not.

Good for you for not giving up!

Fitness Foam rolling? Nov 17 2009

I use the foam roller sometimes. It feels pretty great!

I did a fitness course once... the instructor said she did an entire day course on foam rolling and by the end of it, she was really nauseous. Foam rolling allows toxins to be released from the body so that's why she felt sick. That hasn't happened to me though.

I loved Magic Foods by Robert A Barnett... it taught me a lot about the importance of the glycemic index & why particular foods are beneficial to your health, plus there are tons of great recipes.

And I love my Clean Eating and Vegetarian Times magazines! They give me with so much up-to-date information about food & health plus tons of great, easy-to-execute recipes each month. Love 'em.

Soo, no "squat bodyweight" or "deadlift 2xbodyweight" for you?

Not quite. I work out in 2 places: the gym and a small fitness studio. My trainers (who asked me to make this goal) work in the studio, so there's limited space and not a full set of weight plates, just dumbbells. So squating using a rack  or a heavy barbell is not an option.

For those who mentioned it, chin ups or pull ups are something else I was considering too :)

Another fitness goal that you could shoot for is dropping your body-fat %. I think a good, reasonable goal is dropping it by 3-5%.

That's already a goal for me. I'm sitting at ~28% and I'd like to be under 25%... but i'm not sure this falls under a "fitness" goal... maybe more of a health or asthetics goal instead?

I could up the pushups to 10, maybe!

I've made some gains in my sprints in the past year or so but I don't really do much running any more. I could think about this one though... it would be a good cardio-based goal.

I must admit I'm not a big fan of heavy lifting, though I will fully admit its benefits. I was thinking maybe deadlifting 50-70% of my body weight? I did squats today using two 25 lbs dumbbells on my shoulders so I would need to up that... maybe 10 squats using 30 lbs dbs? So many options.

Oh, and maybe achieving a 60 second plank hold... I usually crack between 30 & 45 seconds!

Pure maple syrup, cinnamon & pecans would pair well with sweet potato puree.

I think it's more realistic to just eat every 3 hours. I eat 3 meals a day (around 400 cals each) + 2-3 snacks in between meals (200 cals each) and that works for me.

Little oatmeal packets are a totally brilliant idea, and something I'd never think of! What do you put the oatmeal in (for a bowl)?

You could either bring a small plastic container (maybe put the packets in the container!) or ask the attendant for an extra styrofoam cup when they give you your hot water.

Well, in your original post, you said you wanted to "get an idea on what people make doing xx job" so I provided a narrow range of where my salary sits.

Weight Loss How did you do it? Nov 10 2009

When I first started, I joined a gym similar to Curves (all female, circuit-style) because I was intimidated by males at a regular gym, plus I had no idea how to "work out". Luckily for me, it was just the kick in the butt I needed.

A few years later, I got so bored with Curves and joined a real gym. I started taking classes like spin & pilates but eventually got bored with them (and my weight loss was at a standstill). I ventured into the world of outdoor bootcamps and haven't looked back since. By pushing myself to the limit, outside my comfort zone, I was able to see how much I could accomplish and I was hooked. Working out was no longer a chore.

So long story short: Try many things until you find the thing you love and you'll be hooked.

I always bring a plastic baggy filled with granola bars, Larabars, nuts (almonds, cashews, walnuts), packets of oatmeal (and a spoon!) and packets of stevia. Maybe some granola in case I can find a decent plain yogurt in the airport terminal.

If I know I'll be flying during lunch or dinner time, I will pack something that doesn't need refridgerating, like a quinoa salad or chicken/tuna wrap that I prepped at home.

If I'm just flying within Canada, I always bring some baby carrots, chopped bell pepper slices and fruit too (usually apples since they're the most portable.) These items will be confiscated if I'm travelling into the US though :(

And I always buy a bottle of water as soon as I'm through security (even though it costs like $4...) :|

Recipe I want to try.

Bake egg plant for 30 minutes (poke some holes in it). Then squeeze the context and let it drain for a few minutes. After that make a hummus and use that instead of chickpeas. I saw Good Eats episode on Eggplant and it was one of the recipes. he he. Damn Alton Brown awesome.

 Sounds like baba ghanoush.

I moved away from home 5 years ago. When I went back to visit for the first time (after a year away), my requested meal was turkey, mashed potatoes, dressing (aka stuffing) and gravy! haha. I cannot relate to not liking these things! Except pumpkin pie... never eat this growing up so now it's not my top choice of pie.

Cut up the eggplant into slices or strips. You can peel it or leave the skin on. Some sources recommend sprinkling the slices with salt and letting them sit in a strainer for 30 mins. The salt extracts some of the bitter compounds in the eggplant. If I'm grilling eggplant, I usually leave this step out.

My favourite way to eat eggplant is grilled, along with red peppers, zucchini and onions, all served with goat cheese.

Here's a recipe for baked eggplant. It's similiar to eggplant parmesan except the recipe is vegan: http://blog.vegcooking.com/2008/11/breaded_an d_baked_italian_eggp_1.php

Wise choice on the Chocolate Coffee! I am in love with that bar. It is probobly the best out of the Jocalats (I've tried them all, sans German Chocolate) and it has a perfect balance of cocoa and coffee flavors. If you are sensitive to sweets too, it will be great for you since it's not overly sweetened and is rather bitter (in a good way), much like a dark chocolate bar.

German Chocolate Cake isn't a Jocalat, technically. It has a regular Larabar wrapper. It tastes just like the Coconut Cocoa bar though. (EDIT: I take that back... German Chocolate IS a Jocalat... I just looked it up. However, if you've had the Coconut one, it's very similiar)
