If you choose the second option for serving size in any of the "Calories in Beef, Ground, xx% Lean Meat / xx% Fat, Crumbles" food choices, you can see the stats of the raw meat.  The portion sizes are 1/2lbs, but if you multiply/divide based on how much raw meat you are using, you can figure it out.  See below for example:

I'd go for the Chicken Satay... it's barbequed, not sauteed or fried like the rest of their dishes.  Also, the sauce is on the side, so you can use as much or as little as you like.

Here's a dish my mother always makes, and I've recently started making it myself with my own twists.  It's soup-like, but it's not a soup:

  • 1 package ground turkey
  • 1.5 pound of chicken breasts - bone in 
  • 3 cans chicken broth
  • 2 large carrots, sliced diagonally
  • 2 large onions, sliced
  • 2 large zucchini, sliced diagonally
  • 2 yellow squash, sliced diagonally
  • rosemary, oregano, pepper to taste
  1. Season turkey with rosemary, oregano, pepper.  Make 1 inch meatballs. Set aside. 
  2. Spray large pot with pam.  Brown chicken on the outside. Set aside.
  3. Re-spray with Pam.  Cook onions until light brown.
  4. Add meatballs, chicken broth and browned chicken to onions.
  5. Simmer for 1 hour.

Serve over cous-cous, rice, or other grains.  The broth gets a really nice flavor, so make sure to spoon some on top.

I like to make turkey burgers.  Just mix 1 package of ground turkey with 1 grated onion.  Form into patties and cook until they're no longer pink in the center.

I mix equal parts lemon juice and hummus, which makes a really tasty salad dressing. I especially like this with roasted red pepper hummus.

Also, if you use marinated items like artichoke hearts, olives, roasted red peppers, etc. you can just add a little feta and it mixes with the juices to make a nice dressing-y coating for your salad.

Sweet Potato and Zucchini Latkes 

Makes 24 latkes (12 servings)

Description
Our twist on this Hanukkah favorite yields a delightfully crispy and slightly sweet pancake. Prepare the batter just before cooking to prevent excess liquid and soggy cakes; pour off any excess liquid while cooking, if necessary. These lacy latkes are delicate, so don't press down too hard on them once they're in the pan.

Make-ahead tip: The latkes can be made up to 6 hours in advance and kept covered at room temperature. Reheat on a baking sheet (preferably dark-bottomed) at 375°F until warmed through, about 5 minutes.

Prep time: 10 minutes
Start to finish: 10 minutes

Ingredients
1 medium zucchini (1/2 pound), ends trimmed
1 large sweet potato (3/4 pound), peeled
1/4 cup minced onion
1 large egg, lightly beaten
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
3 tablespoons canola oil
Unsweetened applesauce (optional)

Instructions
1. Slice zucchini lengthwise and remove seeds. Coarsely grate zucchini and potato in a food processor or with a hand grater; transfer to a medium bowl. Add onion, egg, salt, and pepper; stir to combine.
2. Heat 1 1/2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Working with half the mixture at a time, add zucchini-potato mixture by heaping tablespoons to skillet, gently flattening with the back of the spoon as you go. Cook until the edges are golden, 1 to 2 minutes, then flip and cook until bottom is golden, about 1 minute more (adjust heat if necessary to prevent burning). Drain on paper towels. Repeat with remaining 1 1/2 tablespoons oil and remaining zucchini mixture. Serve latkes hot with applesauce on the side, if desired.

I usually drink a cup of tea when I'm craving something, but am not actually hungry.  This especially works when I want something sweet, because I put splenda in it.

Do you have a microwave?  You could try making eggs in it... I take 1/4 cup egg whites and microwave for 1 min, add cheese and microwave for an additional 30 secs.  You can also make turkey bacon in the microwave (you are allowed up to 2 pieces per day on SBD).

We always have some sort of squash or pumpkin soup on thanksgiving as a first course.  These can defintely be made healthfully, and they fill you up a little before all the really bad (yet delicious!) stuff comes out.

These don't come up on this site, but I HATE when people use times or minus as verbs.  It's multiply and subtract... I actually used to have a math teacher that said these things "Now times it by 3"... how annoying!!

Hi all... just checking in.  I did really well yesterday... I ate healthfully all day, despite the MOUNDS of food (cupcakes, and cookies, and cakes, oh my!) in the kitchen at work left over from a weekend reception. 

I've actually lost about 2 pounds since sunday, so I'm feeling good!  :)

I'm totally in!  Last year I lost about 15 lbs on the South Beach Diet, and I hit my lowest weight - 118- in June... I felt GREAT!  Once the summer started I sort of let my guard down and gained much of it back.  Oct 27 was my B-day and I had been eating like a PIG leading up to it... so Oct 28 was the first day of really healthy eating!  Here are my stats:

If it was made with chicken broth instead of oil, then it wasn't really fried.  They just call it that because it's "stir fry style".

I tried Brussels Sprouts for the first time last week... and I was pleasantly surprised! They tasted very similar to cauliflower.  Cooking them was simple... I soaked them in lukewarm water for 10 min, and then steamed them for about 5 min.  I sprayed a little bit of ICBINB on them. Delish!

A few years ago (when Olean was new and i didn't know much about it other than the fact that it meant fat free chips) I ate about a half of a bag of chips made with Olean.  A few hours later I ate some blue cotton candy.  In addition to a horrible stomach ache, for the next 3 days EVERYTHING that came out of me was blue.  I will NEVER eat anything with Olean in it again....

I love popping my own popcorn in the microwave.  The first time I tried it I didn't really think and just put it in a bowl... BAD IDEA lol!  I came back to find my microwave FILLED with popcorn!  Now I put it in that same bowl, and cover it with a plastic strainer (like for draining pasta).  When it's done I just remove the strainer, add a little salt and eat it straight out of the bowl.  YUM!

South Beach Diet makes 2 kinds of cookies that come in packs of 2 for 100 cal per package.  The flavors are oatmeal chocolate chip and peanutbutter.... both are really good.
