Oh my gosh, I never would have believed it, 12000 calories a day!!!! I am in shock.!!! Goes to show me I don't have to be fat, all I have to do is to close this laptop right now, get off this lazy boy, and remember to burn some calories....

I have a great "fiber upper" food: 1 cup of fresh raspberries has 8 gram fibre, but only 62 cal. It is not too difficult to get down two cups of those delicious berries for only 124 calories, and 16 whopping grams of fibre!

Cannot even keep nacho chips in house: Scoops Nacho chips sprinkled with chopped onions and and olives, topped with tons of cheddar to cover them all and melted until bubbly, dipped into a 4 layer dip made from refried beans, quacamole, chuncky salsa and sour cream.

Health & Support Found out my sister has celiac disease... Jul 09 2008

I have a wheat allergy, which was severe 20 years ago, but now I can tolarate some. Celiac disease more restrictive but little similar. Eating at home is easier, because you can check ingredients in  everything you are eating (foods contain ingredients made by grains, but go under a different name, ie, hydrolyzed plant protein should not be eaten unless it specifies it is corn or soy).

Cooking with rice and other allowed flours is great at home but use different cake pans from where wheat has been baked...otherwise condition will flare up.

Candies and chocolate bars often contain grain ingredients, packed and canned soups are almost impossible to find without grain ingredients or msg. Msg today is made from starch and sugar (could be wheat starch so I would be very careful. I did not eat any baked goods, breaded items, pastas, package foods, anything that listed msg or hydrolized plant protein or starch unless it specified what plant's protein and starch. When eating out, always ask if fries are fried in separate oil from breaded things, etc. Fast food is very hard to get gluten free, chinese is not a bad option as long as preparation has not caused cross contamination. Also mexican can be gluten free, depending on spice mix used to spice meat or chicken, but hard corn tortilla is gluten free.

My best tip is to just make everything at home from scratch and visit your local health food store for rice bread and pasta. Read all labels like a lawyer, there are so many of gluten ingredients hiding in foods. Celiac disease may take some of the convenience factor out of life, but you can still have a great variety with roasts, stews, soups, salads, flourless cakes, rice bread and pasta etc.

I love the classic "It's a Wonderful Life", watch it on TV at Christmas time, always and I guess does not require explanation as to why because it is such a classic, but it always reminds me what is truly important in your life, at core of it all.

I also love "Run Lola Run", it shows how tiny little events can effect the entire outcome of your life, and just the pace and the fast tempo music is great so it is just fun to watch.

Foods Chickpeas Jun 20 2008

Love chick peas. When I checked, quarter cup canned chick peas approx 72 cal. I use them in my salads and soups, but I just count the calories. Hummus, depending on the make is about 50 cal for 2 tbs. I Bring hummus to work with me with cut up veggies and it is very satisfying. I make my own hummus, just rinse canned chick peas, then using that immersable mixer thingy, I pulse them with 4 cloves of garlic, 1/4 cup lemon juice (approximate amount, I add more as I am mixing it all), water (approx 1/4 cup, I keep adding some more as I am grinding it all together) and grated lemon rind and tahini, about 3 tbsp tahini. I keep adding lemon juice and water until I get the right consistency. Eaten with celery, sliced fresh mushrooms, radishes, and peppers, it still ends up being low cal, high fibre and very filling.

Foods I need some healthy snacks. Please help! Jun 20 2008

Like on previous post, on the go I have fruit, an apple and banana with me because they are easy and unmessy to carry along and keep at the desk, and I also have with some walnuts in ziplock. Also, the "satiety" rating from those is quite high.

I also used carry fruit gushers, they are prepackeged and don't take up a lot of space, and are sweet when you feel like having something sugary, and the calorie count is listed so I know what I am getting. (I don't buy them anymore because they are too temping!) They now sell lot of prepacked 100 cal snacks that are worth buying, they are so easy to carry and keep you within limits as you know what you are eating.

Like you, I bring veggies too, I have those for lunch with hummus. My favorite thing!

Peanut butter sandwich is also easy to bring along, I buy natural peanut butter and put some sugar free jam or banana slices in it, I like to bring things that don't necessarily need to be refrigarated.

At home I keep those desserty type yougurts on hand, I also like to have fat free deli turkey and ham, which are nice rolled up and eaten with some cantaloupe or celery sticks.

Rolled up wholewheat pita is also satisfying. Fill with some low cal cream cheese  spread and fat free turkey and lettuce, roll up for the night in the fridge and then cut up into little circles.  Try filling with hummus and sliced cucumber and lettuce also.

Foods Feeling drowsy! What can I eat to pep me up? Jun 18 2008

If you are feeling drowsy, it may be your blood sugar level. Your breakfast was healthy but sometimes having some lean protein (like slice of deli turkey, or egg white) or just a little bit of healthy fat (like couple peanuts) or one of those slow release carbos like oatmeal will help in keeping blood sugar levels steady and this way you feel better and have less craving.

Check your "analyze"

feature in your food diary and see if your carbs percentige is very high and fat and protein is very low. The analyze feature will also tell you the amount of "sugars" included in the carbs, which is very interesting. The less "sugars", the more steady your blood sugar levels also.

madetoshine, try a protein rich meal with a little dab of fat and some none white carbo (no bread, sugar, potatoes) and see if that will help.

Or, if that is not it, did you get a good night's sleep? They say when a person does not get enough sleep, they crave the junk and eat more of it...maybe that is why you want donut and coffee?

Good Luck!

You do what I do! There just is not substitute for real cream! I drink my first cup black...wakes me up faster...then the next one i put cream in.  I found also that 1% milk is not too bad, I warm up half the mug with milk, put in some vanilla or cinnamon, then fill with coffee.

Was your coke Diet or Regular? Check out the amount of carbs in regular coke...if you have been eating healthy for a while, you have probably not had that much sugar for a while at one sitting so blood sugar probably spiked way up, then dropped way low and with the addition of caffeine...cold sweat and palpitations. Good thing your mom is a nurse...can rule out anything serious!

I love firm tofu cut into nuggets, then dipped in egg whites (skip to egg whites if vegan) and then rolled in cornstarch and flour mixture (you can add some salt and pepper and herbs to the mixture), then deep fry it until golden. Serve with plum sauce and mushroom fried rice. Not exactly low cal diet food...but a treat for a cheat day.   :)

Foods Salad Dressing Sep 20 2007

This is my all time favorite salad dressing I know: Take some home made or store bought hummus (3 tblsp  75 calories) and add a little lemon juice and water to thin it out to a runny consistency.  I like mine lemony. You can also crush a clove of garlic to this, mix it, and then dress your salad. You get a large amount of dressing for a large salad this way for just about 80 calories total.

Redflag, the yogurt with avacado sounds good too I am going to try that.

I love this one:

Rutabaga casserole

Preparation time: 25 - 30 minutes
Boiling time for the rutabagas: 30 - 40 minutes
Cooking time 1/2 - 2 hours
Oven temperature: 350°F (175°C)
Suitable for freezing

2 large rutabagas, 3 1/2 lb. (about 1 1/2 kg)
1 1/2 cups (4 dl) cream or mixture of cream and milk
3/4 cup (2 dl) dried breadcrumbs
1/3 cup (1 dl ) dark syrup
1 egg
1 1/2 teaspoon ground ginger
1/2 teaspoon white pepper
1/2 teaspoon grated nutmeg
1 tablespoon salt
Coating: dried breadcrumbs, butter

1. Scrub and peel the rutabagas. Cut up into large pieces and boil in slightly salted water until soft.
2. Strain, keep the cooking liquid, and mash or blend the rutabagas in a kitchen blender.
3. Mix in the cream and dried breadcrumb paste, dark syrup, beaten egg and spices, and as much of the cooking liquid as is needed to give a loose soft consistency.
4. Turn into a greased baking dish, press the surface with a fork to make a pattern, sprinkle over a thin coating of dried breadcrumbs.
5. Dot the top with butter and bake in the oven.

-Eat this instead of mashed potato on side of of vegetable burger patty (no bun).

What helped me with boredom was crafting. You may borrow a crafting book from the library  (and your kids can have fun browsing the kids section while you look for your craft books) that shows you how to make everything from bread dough to beading to stenciling to candlemaking to mosaics (I would recommend "The Michaels Book of Arts and Crafts if it is available where you are). Pick what seems most interesting and start making christmas presents for people on your list...this way you are not just keeping yourself busy to avoid boredom but are getting a headstart on christmas shopping.Time just flies for me when I start beading, I love the different colors of glass beads and could string for hours. One night I started to bead and thought and hour had gone by but it was actually three. If you can find and activity that would absorb you mind that way, it would be bye-bye boredom.

Muhmuh, you said you are living abroad and your friends are back home so your boredom may be due loneliness.Chek if there are evening craft classes (or music or excercise) classes where you might meet the locals and make new friends.

Good Luck and hope you make great memories while you are staying abroad.

Vegetarian Veg*n Bagged Lunch Ideas! Sep 15 2007

I also LOVE hummus, I bring it to work with cut up veggies and a few olives. Another thing I bring are baked Nacho chips with salsa and refried beans. Often I bring large green salad with chopped veggies  (cucumber, peppers, red onions, mushrooms, a couple of olives) and I sprinke a few crushed walnuts and some sunflower seeds. You can thin your hummus with a bit of lemonjuice and water to make a nice salad dressing or use Kraft Catalina etc.

Anyone tried Toffuti? The kids might love some butternutsquash soup with toasted whole grain organic bread, spread with Toffuti, which honestly is better than real cream cheese. Another suggestion is making home made  pizza with vegan cheese and vegan pepperoni. Yummy! And you can have those Halloween Oreos for a little dessert with soy milk, everyone deserves a little treat every now and then.
