You know, I'm going to be completely honest. I do scrutinize people. Even though I'm the same height as you and 145, I notice when people who have higher BMI's than me, the same BMI as me, and even a little lighter than me wear too little (at the beach or elsewhere- I live in MN so the beach isn't really the place to be this time of year).  I don't do it meanly, I usually think like "She's got about 2 months worth of weight loss" or "I'll weigh what she does in a month, but note to self- don't wear that til you're skinnier than she is."

 

I know that's not the most heartening thing to say. And really, since we're the same height, I think I wouldn't scrutinize you, you're at the bottom of the healthy BMI range now.  If you're still worried about a little mushyness it's probably time to work out and tone your muscles some more.

Also, if your boyfriend says that you look fine in a bikini, you might be being too hard on yourself.  Sometimes it's okay to take other people's word for it that you're looking good- we're always our own worst critic!

Thanks for the suggestions so far, everyone.

Yep, I'm a vegetarian, and since I cook for only myself I basically eat vegan foods (longer shelf life...). 

gi-jane: since I'm at school 9-10 hours a day I have to cook a meal on weekends and eat it throughout the week, so variety in the bulk of my meals is kind of impossible.  Have any suggestions for what I should add after I get home? That's when I can switch up and add extra nutrients.

I get some omega fatty acids because ground flax seeds are what I usually use as an egg replacement, and sometimes I make smoothies with them.

More suggestions? I don't want to miss anything important.

kae03: I cook the black beans with a little bit of olive oil, and avocados and hummus are pretty oily. Other suggestions for where I could add oils?

You're about the same body type as me, and I'm a die-hard, all-the-time cyclist.  I've still got fat on my upper thighs- that's where it's most concentrated so that's where it's slowest to come off from. How you burn calories doesn't determine where fat will come off.

Still, cycling is good because you will tone the muscle you've got under your fat. This should show up on your calves before too long (if you're like me, there's not a lot of fat stored on the calf). And as you lose the fat on your thighs, you'll be able to see the toned, fantastic muscle that's waiting underneath.

And, of course, it's fun to do.

I think it is because you are concentrating only on the "fake meat" alternatives rather than exploring what other options are out there to be a vegetarian beyond just trying to eat a traditonal omnivore meal with a meat substitute instead of real meat.

completely incorrect. less demand would make something less expensive not more. think of oil. prices are on the rise because demand is up and supply is down.

Fake meat is more expensive than real meat because it has a high production cost. The cost of the soy (or whatever vegetable is used of the base) is a lot lower than the cost of energy and heat in the processing plant to prepare the fake meat.

You'll be able to burn the calories that you intook from the food with trans fats. But the fatty acid itself, if it happens to lodge in your artery, will probably stay there for a while.  I've heard (which doesn't mean it's true, of course) that eating a combination of monounsaturated and polyunsaturated fats helps clear your arteries out, but frankly I'm not sure how. Seems like once you get buildup it's going to stay (think of hard water deposits in pipes.)

Some of the organic hippy brands taste terrible- avoid Krema. You get all the taste of cardboard. But Eastwind nut butters are definitely more delicious than the traditional peanut butters.

 

Does anybody know much offhand about the different health benefits between peanut butter and cashew butter?

 I've heard not to trust Peta's list (I personally don't trust peta at all, but this is a forum for food, not politics, so back on track)- they count on the "I can't believe it's Vegan" anything with less than 2% animal products. I can't find a list of the ingredients of the frosting, but chances are it has either granulated sugar (non-vegan, strictly) or confectioner's glaze (non-vegan and non-vegetarian, too- this is ground up insect shells that give frostings and sprinkles a glossy appearance).  So maybe there's no milk and no eggs, but you're probably safer making your own frosting anyway.

That kind of frustrates me, too. I just look at what it is in the morning before I add activity, and add the number of calories that the activity I did during the day to it. I wish there were a log, too...

Crepes... I always love finding recipes that make do without eggs where eggs seemed to be completely vital. Here's the recipe I used:

1/2 cup soy milk

1/2 cup water

1/4 cup margerine, melted

1 T torbinado sugar

2 T maple syrup

1 cup unbleached flour

Stir it up, chill the batter for an hour or so, and make like you'd make any other crepe.

Thanks for the videos. I don't get this on the elliptical, but I did when I used to run cross country. Hilly courses especially- I think climbing hills made me tense my calf muscles in a way that's different from what I did on flat courses. This happened in lots of different shoes, though, so I think it was more from the incline- try reducing the incline on your elliptical.

 It depends completely on which university you're doing it though. Online classes are great if you're a stay-at-home mom or have time to devote but not the ability to leave where you're at and get to a campus.  You have to take them through reputable universities, though - the University of Phoenix never did anybody any good. A good state university should be useful, though.

I work in a restaurant that isn't a chain- and so sometimes the chefs are pretty inconsistent. For example, we have a 'grilled veggie plate' on the menu- one of our chefs adds butter to give the spinach more flavor because she doesn't think it's good alone. The other chef and I don't add the spinach til last so it stays fresher and more nutritious. You might try mentioning to your server 'could I get that prepared with no butter'? - people are usually happy to work with you as long as you're friendly. I'd call a good restaurant to stop at one where the wait staff will communicate with you.

Vegan anything.  I assume it's better for me to make my own, anyway, but sometimes it would be nice to stop while I"m traveling and just buy a vegan burrito and warm it up and eat it. Or a rice-and-bean microwavable dinner. I guess gas stations are never going to have quality food, but I have to waste so much packing space on my un-otherwise-obtainable food!

Wow, that's impressive. I'm not letting myself keep peanut butter in the house til I've hit my goal weight and maintained it for a month. Peanut butter and I get along far too well.

Something I wasn't planning on but am happy about:  I can dry my pants in the dryer again.  I used to line-dry them, because every millimeter of shrinking made them fit a little less flatteringly.

I'm not a hunter, but think of the Old Man and the Sea. I'm glad that that fish was alive, I'm glad that that man and that fish shared a struggle. If he had brought the fish home, I would not have had an ethical problem eating it.

 But a lot of my veganism stems from the land use issues, anyway.

Are you thinking of something similar to a cream cheese frosting? When I need to use sour cream for something I blend tofu til it's the right consistency and add a little vinegar... I assume you could drop the Bragg and have it work similar to cream cheese. Then carry on with the classic powdered (vegan) sugar and soy milk to make the frosting sweet. And whatever colorings you like.

Ethiopian's where it's at. I stick with mouthwateringly spicy mitmitas swaddled in sweater-bread, but when I took my roommate to the restaurant she ordered 'kitfo'- the waitress said 'you will not like it,' and she said "I'm tough, I'm from Wyoming." Kitfo, of course, is raw beef 'warmed' in butter over the enjera. And she ate it al the same.

Westsoy's unsweetened almond milk is pretty darn'd low calorie. I usually only add a little to my raw rolled oats, so the oats are just barely softened. Then I grate some fresh apple on top and sprinkle a little cinnamon. (Or any variety of fruit... fresh blueberries are amazing.)

 Start off with some seitan-and-potato hash, maybe, to let him get used to the taste of seitan (which is mock duck in the vernacular). Then try some seitan stir fries over rice with some vegetables. Then some stir fries with lots of vegetables. Eventually you can probably drop the seitan, it's not particularly good for you but it helps people transition to veg*an living.

 Lentil dishes are pretty hearty, too. Make a lentil loaf (which is like a meat loaf, but with lentils, and lots of sage). Serve with kale or spinach.

Rice and beans! Kale is usually pretty cheap.

 I like to think, too, that by buying healthy food (vegetables) I'm saving money on doctor bills later. And by buying ingredients that I can make into delicious meals that I'll enjoy eating, I'll save on restaurant bills because I'll eat my own cooking. 

Maybe cut out a few more expensive items (do you buy pop or juice? Or coffee? Don't, drink water instead) and spend the money you would have spent on beverages on produce.  Then your grocery bill stays the same and your health increases.

I notce myself when I'm gaining weight, but it definitely helps me to curb it if I know my sig. other minds.  If he's too timid to say so, I might shrug it off as 'not too big a deal' or 'something I can deal with after finals (etc.) when it actually might be affecting my sex life.
