Does your cafeteria have a microwave?  Mine did, and even though the food was crap, I was able to use the microwave in there to steam vegetables, make oatmeal and bake potatoes.

I will vouch for the butternut squash recipe!  It's so good!  I find myself confused about the size of a medium butternut squash too, though.  I like to buy smaller butternut squash and eat the entire thing for dinner :-D

 

Make sure youc ook them until they are crispy!  Much better than when they are a little soggy.  I find it helps to throw them under the broiler for a little towards the end.  Make sure to watch them so they don't burn if you do that!

Happy belated birthday, cookie_love!  That's a very tough situation you've got with your co-worker.  I wish I could offer some insight for your situation.  I very much hope something works out for the two of you. 

Jana, you're story is inspiring!  I'm so glad you overcame the ED!!


I'm really proud of myself for the past couple of days.  Last night I did something I didn't think I was going to be able to do.. I went out for pizza!  I'd been avoiding pizza for a long time but I did it!  It was really delicious, too!  It had a perfect crunchy crust and was topped with olive oil, garlic, and SUPER FRESH tomatoes and basil!

I also LOVE baking, but I don't often eat my baked goods.  My grandma asked me to bake my younger sister a vegan birthday cake for her birthday, and of course I would!  I don't often eat the baked goods I make.  I only had a tiny taste yesterday but my mom said it was the best cake I've ever made/the best cake she's ever tasted.. so today I decided I was going to have a piece!  Yum, it really was good!  It was a chocolate cake with chocolate mousse frosting!


I know, these are still just tiny steps but I am proud of myself!  I am, however, confused at how many calories I should increase to.  I'm still scared but I know I have to do it.

b- cinnamon applesauce mixed with half a banana, strawberries, and blueberries

s- a banana

l- caramalized onions and brussel sprouts

s- a bunch of grapes

d- mashed parsnips, baked sweet potato, and roasted broccoli

s- puffins cinnamon cereal, a bag of kettle corn+chocolate chips

 

My first day back eating real food after wisdom teeth surgery!  Still trying to eat softer things, though.

I've never posted in here before, and I've never been officially diagnosed with an ED, but I have dropped to my lowest weight and I have finally realized I have to stop counting calories and just live my life!  I can't be obsessed with numbers anymore.


I had my wisdom teeth out on Monday, so Monday and Tuesday I ate dangerously low amounts of calories, mostly due to the fact I couldn't eat.  Today I was able to eat more and I ate lots of sorbet and chocoate, and I felt awful all day because of it. 


Something clicked though, and I have decided that I'm going to stop counting calories and just go with the flow!  I'm a vegan and before the disordered eating started, I ate really healthy.  I still do eat healthy foods..just not enough.  I need to get over this and jus get healthy! 

Reading this forum has inspired me so much, and I thank you all for posting!  I'm going to need support, I think and I will be here to support you all too.  I'm ready to give all this crap up!!!

Trader Joes sells these small but super fiber-packed bran muffins.  They are unbelievably moist and super delicious.   Does anyone have a vegan recipe for something like this?  Anytime I've tried to bake muffins (and I'm a pretty good cook) they come out a bit on the dry side.

I don't know if Trader Joe's muffins are vegan our not..  I was not a vegan the last time my co-worker brought one in for me, so I didn't care at the time.

I do believe that some of Trader Joe's muffins are indeed vegan!  I looked once and I was pleasently surprised!

I would probably bring a luna bar or a lara bar, along with some fresh fruit!


I'm going to be at class from 11 am - 9 pm this semester, so I for-see a lot of these ideas in my future!  Thanks for making the post..I'm thinking I'm going to be using a ton of these ideas.

I feel as if I have been eating far too much processed foods lately and I am determined to get back on a more clean approach to eating.  I have been doing quite well today!


b- whole wheat english muffin with natural peanut butter and strawberry spread, grapes and blueberries

l- roasted kale and butternut squash

s- a bowl of slice strawberries, blueberries, and grapes with a dollop of ricemallow creme

I'm unsure of dinner, but I think it'll be mashed cauliflower and grilled aspragus + a mixed raw veggie salad!


For a snack, possibly a larabar or some more fruit!

I am far more open to try different foods than when I ate meat/eggs/dairy!  Veganism pushed me to try lots of food I had refused to eat, and now I'm proud to say I will try anything as long as it's vegan!  Anyone who calls me picky is crazy!

Have you heard of the book, Vegan Cupcakes Take Over The World?  You can google some recipes from the book.  I made a two layer cake by doubling the cupcake recipe and it was FABULOUS.  The recipe I used was the chocolate cupcake recipe with vegan fluffly buttercream frosting.  I added oreos to the batter and frosting to make it cookies and cream cake, it was soooo good.  Just google vegan cupcakes take over the world chocolate cupcake recipes and it'll pop up.

The last time I went I got the grilled vegetable platter, it was DELICIOUS!!  My boyfriend had one of the breaded 'chicken' dishes and that was also soooooo good.  I did like mine better though!  It's huge and fabulous! 


We also ordered a vegan root beer float..oh man..SO GOOD.

Hello!

I'm 5'3" and probably 106 lbs.  I've been really confused also at the amount of food/exercise to maintain my weight, but I suppose I've been doing okay lately.

I dropped weight pretty quickly when I cut out fast food and started watching portions.  I started loosely counting calories in my head and I suppose I ate around 1200 most days.  I'm a vegan so I do eat lots and lots of vegetables (which was very different from my old lifestyle) and "cleaner" foods.  I've probably lost a good 30 lbs.


I started to exercise in January, mostly walking on the treadmill.  Then I started training for a race so I ran probably 6 days out of the week and occasionally did weights.  Now I exercise when I can, maybe 5 days per week.  I alternate going to spinning classes (AWESOME), running, weights, elliptical, etc.  I usually run for at least 30 minutes.

I'm trying to maintain now but I think, like you, I am confused at the amount of calories I should increase to.  I'm not quite sure that I've been eating enough, so I won't comment on that.  I'm a bit nervous because I have worked quite hard to get into shape.  It's silly because I know that I'm not going to fall back into my old habits at this point, I won't gain it all back overnight.

For dinner tonight, I had an onion and a zucchini that I needed to use up, so I sliced up the zucchini and cut the onion into wedges, added some olive oil, salt, and pepper and roasted it at 400 degrees until it was tender. 

 

It was SO SIMPLE but really, really delicious.

Breakfast: Newman's Own cereal with almond milk and strawberries

Snack: Two vegan peanut butter butterscotch cookies and a couple peanut

Lunch: Puffins cereal, salad, and a bowl of fruit (I was at a picnic, it was all the vegan food they had..besides the puffins, I brought those :()

Dinner: Green bell pepper stuffed with quinoa and shredded broccoli, cauliflower, and carrot

Snack: Cookies and cream delight luna bar

Snack brought to the movies with me: Grapes and puffins cereal

You might like to add chickpeas and edamame to your salad.  It'll bump up the protein and it's quite delicious!

Kind of off topic from original post, but kick boxing class burns about 700 calories?  Surprised  I do a kick boxing class 2x a week and it's so intense, but wow, that's a lot!

Breakfast: Chocolate peppermint stick luna bar

Lunch: Sweet potato, black bean and quinoa salad + vegan boca burger on a whole wheat pita + half a small baked potato

Dinner: Either hummus and pickles in a pita or a bowl of kashi strawberry fields cereal with almond milk.  Maybe both!

I also had a bite of a vegan banana split cupcake and of a chocolate cupcake!
