I'm making vegan baked ziti with daiya vegan cheese. The hosts (also veggie) will probably do appetizers and salad and I 'm still thinking about a dessert to make.

Being in control is an addiction so don't drive yourself crazy trying to find a rational explanation for his current or past behavior, there isn't one. You've gotten great advice on this thread, I agree that the sooner you remove yourself from his sphere of influence, the better off you will be.

I speak from experience, I let my parents control me with money, housing and their approval for way longer than I should have. When I finally broke the chains of their influence, I got much healthier both physically and emotionally and my relationship with them improved immensely.  YMMV!

I'd cut it up unpeeled, cook it until soft, drain it, mash it, drain it again, then season it with salt, pepper, oregano, basil or thyme - whatever you lke - maybe add a tsp of olive oil or margarine.

Fish: I used to love tuno but it's no longer availableFrown I make a faux tuna salad with mashed garbanzos and a dash of kelp powder now

Chicken: I like the tofurkey peppered slices, none of the other chicken subs I'e tried really appeal to me.

Bacon: most bacon bits are vegan (albeit chemically), tasty on a salad of spinach, sliced mushrooms and red onions

Beef: Trader Joe's meatless meatballs

Deli slices: bologna style, the rest do nothing for me

Hot dogs: Yves veggie weiners

Ice cream: Soy delicious Chocolate Obsession or Trader Joe's Soy Creamy Cherry Chocolate Chip.

Whipped cream: Soyatoo (not the spray can, the boxed one you whip up yourself)

Cheese: homemade nutritional yeast "cheese" sauce (from _The farm cookbook_), rarely the tofutti slices.

Cream cheese: tofutti better than

Sour cream: if i need it, make my own from tofu, lemon, sweetener

Mayonnaise: Vegenaise green lid (mmm, just picked heirloom tomato, sliced on toasted bread with Vegenaise and black pepper - the taste of summer)

Ranch: not my thing so I haven't sought a substitute. For a creamy dressing I like Annie's Goddess dressing or the Trader Joe's version but I mostly use flax or olive oil and vinegar or lemon.

Butter: Earth balance

I actually limit most of these things because they are almost all soy and I don't want soy at every meal.

The way I've always handled that kind of badgering situation was to come up with some stock phrases like "I'm good" (small smile, shake head indicating "no" and raise hand in stop gesture) or "Don't worry about what I'm eating" said with a tone of finality.  Lather, rinse, repeat.

I worked at this one place where some coworkers would mock my food all the time, calling it dirt (black bean soup) or sticks and twigs (salad with broken up pretzels on it). I just repeated the above statements until they quit. A couple of them started asking respectful, sincere questions and I happily talked to them about my dietary choices. One actually went veggie and another stopped eating red meat and dairy.

This is my latest quick and easy favorite:

 

Vegan Sopa De Fideo

2-4 servings

 

1 6-7 oz package fideo noodles (found in latino section of stores, or you can use something like broken up capellini)

2 cloves garlic, minced

1/2 cup chopped onion

1/2 cup chopped green pepper

1 15 oz can Tomato sauce

I can water or veggie broth

oil (about a tsp) or cooking spray for sauteing

optional: ground cumin, pepper, hot sauce, nutritional yeast, chopped cilantro

 

Saute veggies in skillet on medium high until they just begin to soften.

Add noodles to pan and continue stirring and cooking until they begin to lightly brown. Watch them so they don't burn.

Add 1 can tomato sauce and then fill the can with water or veggie broth and add that.

Add a pinch of ground cumin.

Stir, bring to boil, then cover and cook on low heat for the time specified on the noodle package (usually 7 or 8 minutes).

Stir gently once or twice during the cooking time.

You should have a thick, almost dry noodle soup.

Stir gently to mix, taste and adjust seasonings (salt, pepper, hot sauce) before serving.

Sprinkle with nutritional yeast and chopped cilantro to serve, if desired.

NOTE You can add or substitute other veggies and/or add protein sources such as beans, and try a variety of seasonings. You can try sauteing the noodles and vegetables separately, then combining them when you add the tomato sauce.

If you google this recipe you will find a wide variety of variations in ingredients and techniques, it shows how versatile it is.

Actual long time vegan here, also from Portland OR. Portland's vegan friendliness is a double edged sword. It has made it harder for me to keep my weight down. In the past, lack of choices made avoiding junk food much easier.

Honestly, I think the fig thing is one of those topics most often brought up by honey apologists and taunters of vegans. Figs aren't an animal product and the amount of insect fragments present are similar to what is in other plant products that come into contact with insects during their life cycles.

I've not done the boiling thing but I have steamed it before using it in a recipe. I usually soak it brine (couple teaspoons salt in a quart of water) for 20 minutes before pan frying. I also like to marinate slices with soy sauce, lemon juice, olive oil and garlic and bake it in the oven. If you lay it flat and slice it on the diagonal from the top side you can get thin wide slices that soak up the marinade well.

FYI, Carnation instant breakfast is essentially the same as Ensure or Boost and it's much cheaper. Even hospitals use CIB instead of the other brands.

mmmm, Maoz. If that 510 calories is for the basic sandwich, it could get quite high depending on what you add to it at the salad bar. I haven't had Maoz in a couple of years but it is always my first stop in Amsterdam. I miss those purple baby pickled eggplants!

Oh my!  I didn't stop to think about the casing and I ate it.  Obviously it didn't kill me but its good infomation to know. I read the package and couldn't find anywhere if it was okay or not okay to eat the casing and I could find nothing about it so I assumed it was okay.

Well, the Trader Joe's brand says "remove casing before cooking" in bright yellow letters right under the words Soy Chorizo. 

I hope you are joking but if you're not, you better go back and add in the calories for the casing! Wink

You could probably add some flour or something to make it bind it together to form patties or links. Look at recipes for TVP burgers or patties to see what they use. One recipe I saw suggested mashed potatoes or mashed potato flakes. Mashed beans could work also.

I had it for dinner tonight. I microwaved some diced potatoes, sauteed onion and green pepper, added the potatoes and then the chorizo until it was all browned and crispy. Good on its own or, more decadently, on tortillas with salsa and avocado.

Trader Joe's has a delicious Red Pepper spread that is 15 calories per tablespoon.  Baba ganoush (roasted eggplant dip) is about 20 calories per tablespoon according to the Daily Plate.  If you made your own versions, you could probably drop a few calories off these.
