Foods Sauteed greens Nov 23 2009

Original Post by kriklaf:

There are also a whole bunch of Asian leafy greens - bok choi, various other chois, tatsoi, tokyo bekana and hon tsai tai have all showed up in my CSA box, but a trip to a local Asian market would probably yield results. To be honest, I really, really, really hate sauteed greens - I almost always bake mine into chips - but other people at the CSA seem to like these greens sauteed, typically with some garlic, ginger and soy sauce.

ETA: you can saute both beet and turnip greens, as well as mustard greens, but if you didn't like collards, you might not like these. For what it's worth, I prefer beet and mustard greens to collards, but again, that's baked rather than sauteed.

Interesting-how do you bake them into chips-i've never heard of it ?

Saute' in a touch of olive oil with garlic and onion-after all are transparent add two or three chopped  (medium-large) tomatoes and a bag of frozen peas. Let this cook down and blend flavors but allow some juices to remain. Season with a touch of oregano and parsley, salt, pepper and a half teaspoon of sugar or equal. Serve as a side dish as is,  or over a pasta (any type you like-I prefer low carb or wheat) with a little low fat grated parmesan sprinkled on top--delicious

Yes I have tried them and cannot enjoy them at all. I've tried boiling them after rinsing, draining. even frying them to dry them out and make them not so slimy. Taste isn't totally gross but not good (to me) either. Can't take the texture at all, I'm just too used to regular pasta I guess. I really wanted to like them too because of the great lack of calories, but no can do. I'll find a recipe I can make at home eventually I hope :-)

Dont know if I saw the recipe here or on a cooking show but it turned out great last week when I tried it-Breaded chicken faux fried----

Took pieces of skinned chicken parts (I used thighs and drumsticks). dredged in wheat flour then into a bowl with low fat buttermik, with a touch of garlic powder, and parsley flakes mixed in- took kellogs corn flakes and smasked them up in a baggie and mixed them with some japaneese panko breadcrumbs about 50/50.  dredged the chicken out of the buttermilk into the crumbs. Sprayed a large glass baking dish with pam and baked at 425 degrees for  20 mins-turned the chicken over and baked 15 more mins-reduced the heat to 350 and baked ten more minutes--crunchy, juicy and fabulous

Cook/boil veggies halfway done. While still hot after draining add a few wedges of laughing cow lite swiss (does not taste swissy though, more like cream cheese). Add a sprinkle of low fat parmesan cheese and a tablespoon of Italian style breadcrumbs along with a splash of 1% milk and a teaspoon of light butter if desired or a few sprays of cant believe its not butter. Mix together and place into a sprayed pan. Bake at 350 for about ten minutes--wonderful and very lowfat/calorie content. I always seem to do broccoli or cauliflower but any veggie will work-have fun and experiment a little.

This is absurd-find someone who tries to correct his own percieved failures, not what he thinks yours are. I think you look great the way you are and whatever modifications you are trying to make should be based on your desires and goals -not his. From looking at your profile pics, you won't be alone for long. You remind me of my daughter who I look at as one of the most beautiful young ladies on earth. His reaction to you has gotten me upset  now :-)

Weight Loss I'm so FRUSTRATED!!! Plateau City Here I come Again! Sep 26 2008

Plateau's are painful for sure-I've lost 52 pounds since 12-10-07 and am real happy about that. but I keep joking with everyone that "I've whittled myself down to a fat guy". Fact is I still have plenty to lose weighing in at 222 and 6" tall. The weight came off until two months ago and then nothing-I've done all the recommended things and nothing changes-Oh well I guess I'll just get used to it (sigh). On the bright side my doctor is thrilled and my blood results for my last two doctor visits are now perfect-which they were not before the lifestyle change-keep up the hard work-it will help your overall health in the long run :-)

I hit a six week plateau at 228 lost 6 pounds in 2 1/2 weeks and now am finishing my third week of a new plateau-very annoying. I know I am much healthier though, eating great and exercising daily. Developing new recipes is fun also. Just keep it up-I think some of us are more prone to the dreaded plateau than others. After watching my weight los pattern (total of 52 pounds lost so far since 12-10-07) I see that I am one of them- good luck :-)

Foods Need quick response about reviving stale bread? Jun 09 2008
18:29 (UTC)

this never fails:

1) preheat oven to 350

2) take a clean towel-med sized- like a hand towel or dish towel and wet it with cold water

3) squeeze the water out-leaving a damp but still wet towel and wrap the bread in the towel

4) placed the wrapped bread in the oven right on the rack-mid oven area

5) leave in the oven around 6 to 8 minutes-depending on oven-feel the bread and see if its soft-you will be able to tell

6) take the wrap off and put just the bread back in the oven and bake about 2 to 4 minutes

Come out crusty on the outside and warm and moist on the inside-just like fresh baked--also works well with frozen whole breads but need to heat a little longer :-)

Foods grapefruit vs. grapefruit. May 11 2008

I love grapefruit too and I am no expert but I have noticed over the years that red are much sweeter than white normally, so my guess is that they contain more natural sugars than the whites which would account for extra calories from it. I had two yesterday during my son's early morning baseball game while sitting on the sidelines after my workout---some peoplle made comments (nice ones) but no one appeared shocked--I think healthy eating is becoming more commonplace for people these days :-)

I found that when I cooked them in the muffin tin that they were easy to make almost exact similar sized portions- they did take longer than the 25 minutes posted above-I would guess around 35 minutes maybe- tasted just like pie but creamier :-)

I tried them last night--they were very good and surprisingly didn't taste low cal at all--I made them the cupcake/ muffin style-- 16 servings portion sized and topped it with cool whip free and a fresh berry--excellent-thanks for sharing--they were very simple to make-my 16 yr old daughter actually did most of the work and she can't cook much at all-- LOL-the whole family enjoyed them :-)

Friday night fish fry--yep breaded and deep fried, with a large helping of french fries (also deep fried), and served with a good sized portion of cole slaw made with real mayo, and don't forget the clam chowder (creamy) and the bread and butter that goes with it all--yikes ! Now how many calories and how much fat do you think that dinner was?  Don't forget deep fried chicken wings with butter and hot sauce dipped in full fat blue cheese-yummy-When I watch those dinners being served to others I still remember how good they used to taste but the thought of putting that type of food in my mouth makes me ill LOL :-)

Yep the plateau really stinks- I've been stuck for 23 days now- went from 272 on 12-10-07 to 229 current - down 43 lbs. and haven't moved an ounce for a little over three weeks now--geesh--I've shifted calories added some, dropped some, increased workouts, cut back workouts, drink tons of water etc. and nothing-very frustrating to say the least-however having said that--I had a great doctors appointment on the 23rd--he was thrilled at the weight loss and my blood results were so grealy improved that he was stunned----kept saying things like "this is great" and this is amazing--so I'm feeding off of his excitement and continue the quest :-)

Foods Laughing Cow Ideas? Apr 21 2008

I take a cauliflower and par boil it so its very firm still but hot, then drain. I add some can't believe its not butter, some laughing cow wedges and some 1% milk. Toss them all together and put into a glass baking dish which I have lightly sprayed with CBINB and spread out evenly. I sprinkle a small amount of Italian style breadcrumbs (about 2 tablespoons) over the top and about 1 teaspoon of low fat parm--I then sliced two pieces of Kraft fat free cheese slices into 4's and placed them over the entire top- bake in a 375 degree oven uncovered (monitor to make sure it doesn't get too dry)  for about 25 minutes-fabulous and very healthy low cal per serving size  :-)

Foods Eating out?? Apr 09 2008

I always try to go with fish and fresh veggies, even a baked potato-I always ask for no butter (I say I cannot eat butter) in the cooking process and ask for any of the sauces they  usually put on the food to be served n the side so I can dip if I desire a little of it. I also always get the oil and vinegar carafe's with my salad and drizzle ever so little oil myself with a lot of vinegar in comparison-make sure you say no cheese on the salad because a lot of them come with it in it whether you asked for it or not :-)

Fitness Which bike seat????????? Apr 08 2008
15:14 (UTC)
3

Hi-if I can offer some input on this if u don't mind--I am 6' and weigh 231- I started weight loss plan, life style changes this December 11th 2007 at 272 lbs-my main source of exercise has been light weight lifting 3x a week and treadmill walk everyday at least 2.5 miles a day and quite often more if I am in the mood. I also take my dog out for a 2 mile run about 3x a week. I ride the bike and he runs along my left side the whole time. Having said this you now understand that I have no intention of doing a bike race any time soon. Being larger in built and not a serious biker other than recreation and some fresh air exercise means something different than what a serious biker will experience. I for example do not wish to lay across the handlebars in a forward position with my buns slightly raised from the seat. In this advanced position there is far less weight being applied to the rear area of the body because a lot of the weight is forward. I sit almost upright and place a lot more pressure on my rear area (gross), anyway the point I am making is that I have a larger and softer seat which I put on the bike myself and find it to be much more comfortable than the one that came with the bike-I also changed the handlebar grips to a softer type that puts less pressure on my hands as I lean forward. The larger seats are not too expensive and the grips are what I consider cheap. They also have a gel pad that can go over the existing seat and ties underneath-does not shift from location and is reasonably priced if you don't want a new seat or don't wish to tamper withe the bike you have-or think you may get more serious soon and wish to keep the old seat itself. Hope this helps. no offense to serious bikers but some of us are into it at far different levels for far different purposes.

I was just there yesterday at the food court in the mall-not many healthy choices in there. I had the subway salad with no cheese and had the worker there give me the oil and vinegar bottles so I could put my own amount on-it was great and super low calorie, but very large-I think they put three slices of meat choped up on it. I was very pleased wit it :-)

*Side note**-did you ever notice the people eating around you that certainly could use the help from this web site, loading up on some of the most fattening and discusting foods-------that used to be me :-)

I am a little lost on the original comment-what is exactly wrong with what the guy is doing ? An hour on the elliptical seems like a great cardiovascular workout (better than I can do for sure) and some sit ups and light weights-whats the problem here I don't understand ? He must be burning a ton of cals and improving his circulation, so why is this so bad-sounds great for diabetics if you ask me, but I certainly am not an expert. Just curious. :-)

Foods When "cheat days" go overboard..... Apr 01 2008

Original Post by shleesh:

Ha, Patsu... you're right, that didn't make me feel better! I'm waiting for someone to write, "yep, just ate 6 big macs, 3 slices of apple pie, 2 strawberry shakes, and a cream filled donut." THAT would make me feel not so bad! :-)

And I just did the spaghetti thing last night. I made mine with whole wheat pasta, venison, and fat-free spaghetti sauce. Just a cup was 540 calories! I went overboard on that too. Who eats just ONE cup of pasta anyhow? Geesh.

Anyhow, thanks for the reply. I like to hear people's pigging out stories. Ha. Just kiddin' -- have fun walking tomorrow :)

I agree with u shleesh-who does eat one cup of pasta anyway-i said to my wife just yesterday-how is it possible that i am still fat after eating so healthy, even if its only been 3 1/2 months- look at the food on a restaurant dinner menu-mostly all contain high fats, butter, batter etc.- and look at whats being cooked on the cooking shows, one of those meals would have to be around 5000 calories for one meal only,- and pay attention to whats being advertised on tv-its endless high calorie, high fat food- and yet the struggle to loose pound by pound seems endlessly hard just to find healthy things to eat in certain circumstances- let alone breakdown days at partys or whatever-geeeeesh :-)

Foods cheeeeese :) Apr 01 2008

Laughing cow makes a great low fat cheese that is 35 cals a wedge-comes in different flavors like swiss or garden veg-it is soft like cream cheese and comes in idividual wraped wedges-I think there are 8 in a box which is round in shape-very excellent quality and easy to spread for example over a toasted whole wheat pita-plenty of cheese in one wedge for a good sized pita-I like weight watchers pitas which are 100 cals a piece and together they are equal to one piece of some breads. I cut mine into three or four pieces and feels like i'm eating a loaf of bread sometimes LOL :-)
