yaelws 10/18/08: 144 lb.  I've been on a business travel whirlwind for the past several weeks, hence the slow weight loss.  Beats gaining, though.

I have the nail problem--spoon-shaped, abnormally brittle nails.  And I have no cuticles!

I also get dry mouth and cracked skin at the corners of my mouth, and horrifically bad periods. 

I take "Slow FE" iron supplements which are supposed to cause less stomach issues than other supplements, but I still have problems.

Baking powder = baking soda + cream of tartar + cornstarch

To substitute for 1/2 teasp baking powder, you will need 1/8 teaspoon baking soda + 1/8 teasp cornstarch + 1/4 teasp cream of tartar.  This is IN ADDITION to the 1 teaspoon baking soda already called for in the recipe.

If you can't make the correct substitution, there's a pretty major risk that the cookies will not rise properly in the oven and/or taste a little funny.

Hey dove2424,

I agree with everyone else...that guy is a first-class jerk.

I was in a serious car accident too and put on steroids!  They stink!  Weight gain, violent urges...bleah.  Just wanted you to know that you are definitely not the only one who's been through this.

5/18/08: 160 lb (-2 from last week, -14 since starting this challenge, -41 total). 

Can't wait to get into the 150's...I haven't been there since at least 2002.  I'm now down 41 lb.  I got myself a copy of "Basics of Biblical Hebrew: Grammar" as a reward for -40.  No doubt that wouldn't float everyone's boat, but I'm excited.

Hope everyone has a good week.  Is anyone still out there?

I agree with alylou—you could use creamy peanut butter or another nut butter such as almond, or ground sesame seeds.  Perhaps you could try onion instead of garlic if you don't like garlic.

Here is my recipe if anyone would like to use it.  I like alylou's idea about the basil flavored olive oil.  I think I'll try that next time I make it!

 

Israeli Tank Commander Hummus

 

1.5 cans (1 [14-15 oz] can + 1 half-can) garbanzo beans (chick peas)

Juice of about 6 freshly squeezed lemons

5 tablespoons tahini paste (see note *)

4 tablespoons olive oil

¼ teaspoon salt

½ teaspoon ground cumin

2 tablespoons minced garlic

¼ to 1/2 cup water

Dash of balsamic vinegar, if desired

Dash of hot pepper sauce, if desired

 

Add all ingredients (but only up to ¼ cup water) to a food processor and process until smooth.  Add additional water only if needed (hummus will thicken as it chills).  Sample the hummus and adjust flavors to taste.  Recipe can be doubled for hungry hummus eaters (and then it more conveniently takes 3 cans of beans).

 

All ingredients can be adjusted to your taste, but here are two basic principles to note:

1) Higher percentage of garbanzo beans will lead to a coarser texture.

2) Too much tahini will give a bitter flavor.

 

*Note:  Tahini paste (a Middle Eastern sesame seed product) should come in a glass jar with a layer of oil on top.  Stir well before using. DO NOT buy the canned paste.

No, the tahini adds the sesame flavor and smoother texture.  A chickpea-only hummus would have a somewhat different flavor and coarser texture.  However, it could be good anyway.  Do you not like tahini?

I have to make a bazillion coconut macaroons for a pre-Passover event, so my goal is to avoid eating any UNLESS I have enough calories to spare at the end of the day.  I love coconut, so this is a real test of will.  Mmmmmmmmm, coconut.... (drool)

My other goal is to make exercise my first priority in the evening this week, BEFORE I get sidetracked by the macaroon production.

Goal for 4/27: 163 lb

Favorite healthy food:  100-calorie pack of microwave popcorn.  It makes 4 or 5 BIG cups of food--psychologically very satisfying!  Good fiber, too!  I am also a big fan of all fruits, especially mangoes.
