Hi all! Sorry I have not been on here in a while. THis divorce is kicking my butt! I have kept on my calorie counting and am happy to say that I have lost another two pounds since my last post. I am definitely noticing that I eat MUCH smaller meal proportions now. I hope all are well!!!!!! |

Welcome back Sara! Bad eating day for me. The group went well last night and I finally started to get some sleep until (he) called at 5:30 am and had the nerve state that he thought we would be better friends because of the divorce. UUGGHH!!! Work is hectic today.

Here is the red velvet recipe: 2 1/2cups flour (view)2tbsp unsweetened cocoa powder (view)1tsp baking powder (view)1/2tsp salt (view)1/4cup vegetable oil (view)1/4cup unsweetened applesauce (view)1 1/2cups granulated sugar (view)1egg (view)2egg whites (view)1tsp vanilla (view)1cup fat free buttermilk2tbsp red food coloring1tsp white vinegar (view)1tsp baking soda (view)1Preheat oven to 350 degrees an spray 2 9" cake pans or muffin tins with fat free cooking spray. In a medium bowl, combine the flour, baking powder, salt and cocoa powder. Separately, in a large bowl or electic mixer, beat together sugar, applesauce and oil. Add egg, egg whites and vanilla one at a time, stirring well. Then mix buttermilk and food coloring in a separate bowl. Add half the flour mixture to the egg mixture and add buttermilk and food coloring mixture and the rest of the flour mixture. Mix until well combined. Combine vinegar and baking soda in a small bowl and allow to fizz then fold into batter. Immediately divide into baking vessel and bake 25-30mins or until a toothpick inserted in the middle comes out clean. Cool 10 mins in pans then turn onto wire rack to cool. Wrap layers separately and place in freezer for 60minutes before icing with low fat cream cheese icing. Low Fat Cream Cheese Icing: .75cup fat free vanilla yogurt .75 cup fat free small curd cottage cheese 16 oz neufchatel or low fat cream cheese 1 cup powdered sugar Place yogurt and cottage cheese together in food processor and process until smooth. Cube cream cheese and add to processor, processing again until smooth. Add sugar in three parts, processing to mix between additions. Cover and refrigerate until hardened enough to spread.
I made this as cupcakes and each one has 123 calories without the icing. Considering it's one of those indulgence things. Not too bad. My coworkers ate them and didn't know the difference. Angie- I too have the fear of being in front of others in a swimsuit. I am hoping to work on that and join the Y within the next month. Divorce support group tonight for the first time. Wish me luck. Karen, Angie and Barbara- Thank you so much for the encouragement and support. It's great to know that I have a place to go for the support to keep up the diet and for when I am having a "need to vent/share" moment. Good side, I have lost 1 more pound! yeah. Every bit counts.

I have found a low fat version of red velvet cake that I tried. I made them as cupcakes and fed them to my coworkers. They turned out well but I have found that I don't enjoy sweets anymore so I had a quarter of one and then chucked the rest in the waste basket. |

Hey everyone! Sorry I haven't written in a while. It's been a rough month. I have finally gotten over the flu like thing I have had for most of the month. My prize.....after four years and constant support to overcome his alcoholism, my husband told me last night that now that he is sober he doesn't want to be married anymore. So, I'm kind of in a dumpy mood. The bright spot is that I am gonig to see a counselor and I am more motivated than ever to watch my calories and lose weight just to show him what he is losing. I need to weigh in today. Last count was that I was down 11lbs. Hopefully, I can add to that!! Good luck to all!

Welcome JC and Darky! Feeling healthy again and back on track!! Finally got my brother to try eating more healthy. He tried whole grain pasta and salmon so far. Later is eggplant and more steamed and broiled food. Now I'm getting into the maintenance part and enjoying it!! Haven't craved sweets in a week!!! |

Lora- I am a social worker in a home for the mentally ill. So basically I come home and my brain goes numb. Much to my husband's delight. Added to the fact that I have had a respiratory tract infection the last four weeks and I'm suprised he hasen't taken a winer camping trip! :P On the good side, I have now officially lost 11 pounds which puts me under 340 for the first time in a year! Small victories. I am enjoying the looser pants.
Julie, as far as the spinach salad, I too have discovered the delights of uncooked spinach this year. I also like to add a few sliced water chestnuts and walnuts with a balsamic vinegar.
Sara- Congrats! Keep up the good work! I am supposed to get to 148 but will be thrilled if I can make it to 200 lb. That will put me at 153lb loss and as small as I have been since 8th grade.

| Congratulations on the goal! I am just beginning this site (approx three weeks so far) and am hoping to keep in touch and gain motivation. My usual problem is that I start off well and then phase out due to not having the "buddy" in place for motivation. I am at 5'8" and 341 right now. This is the highest I have ever been. I have lost nine pounds but am starting to slip again. My biggest problem is coming home from work, which is STRESSFULL, and then just binging before bed. Trying to increase the excercise but I wear braces on both legs and cardio is a bear. Hopefully, this is the first step to following through. | |||
