I'm having the hardest time on this challenge, this time around. I'm working late hours, I'm not living alone anymore, and I'm dating someone. All of these factors are making it impossiable to meet this challenge for Sodium. I eat out and my day is a bust. I've had to eat out at least 4 times due to my work schedual or being on a date. *sigh*

I've been sick all week. I think the wellbeing challenge is like a reminder to take care of myself in the coming weeks. I've been pretty good with the fat an cholestrol but I'm not sure if I'll loose any weight being unable to work out for days now :(

I've been sick since sunday afternoon. I haven't been able to workout because my breathing is comprimised and if I breathe too heavily I start coghing really bad. I'm bummed because I like to workout everyday, but I have to wait. However, I have still been doing my 30 min lunch walk because it is a much lighter activity. Is there anything you can do that will keep you active but not push you too much?

Britishvixen-

I want you to know that even though it must be disappointing that people sign up and then don't participate how much these challenges mean to at least one person. With the first challenge you did it helped me get on the right track and taught me a lot of things to help me have a healthier lifestyle. I check back a couple times a week just waiting for the next one. Your challenges have helped give me much needed direction. I want you to know how important they have been for me. I am enjoying this one as much as the last. Your hard work has not gone unnoticed. I really appreciate you putting these together. Thanks! I hope you feel better :)

Beans here I come :) J/k I need to remind myself of other sources of fiber. Now that I live with my parents I do get to eat beans as much because my dad hates them :( but I'm going to get those 25 grams! Fruits and vegtables look like they are going to be ok :)

My goal with this patr of the challenge is to eat enough, not to not to eat too much. I have the excersize pretty much down but my eliptical broke last week so I've had to use the work gym and will do so until I get my new eliptical. I really have issues working out in front of other people but if I can make it through this I'll be able to keep this up :)

1. Jump rope for 10 mins

2. Dance to you favorite songs (about three)

3. Go up and down your stairs for 10 mins (I actully tried this on the last challenge its harder than you think)

4. Jog in place for 10 min, lifting you kness as much as you can and pump your arms (great if you don't have a lot of space in your home)

Recipe:

Mini Veggie Frittatas

This is a festive-looking appetizer with the green and red vegetables used. They work well as a finger food, too.

Ingredients:

  • 12 slices zucchini, 1/8-inch thick
  • 1/2 whole red bell pepper (core and seeds removed), finely chopped
  • 1 large green onion (or 2 small) white and part green, finely chopped
  • 2 large eggs
  • 1/2 cup egg substitute
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon oregano leaves
  • 1/2 cup shredded reduced-fat sharp cheddar or Jarlsberg® light (Gruyere can also be used)
  • Canola oil cooking spray

Preparation:
1. Spray 12 muffin cups with canola cooking spray (or line with foil cupcake papers). Preheat oven to 400°F.
2. Add a zucchini slice to the bottom of each prepared muffin cup. Top zucchini slices with the bell pepper and green onion (distribute evenly between the 12 muffin cups).
3. In mixing bowl, beat eggs, egg substitute, salt, pepper, and oregano on medium-low speed until completely blended (a couple of minutes). Spoon about 1 1/2 tablespoons of the egg mixture into each of the muffin cups. Sprinkle the cheese evenly over the top of the cups.
4. Bake until frittatas are set, about 10-12 minutes. Serve warm and use a small rubber scraper to remove the frittatas from the pan (unless you used foil cupcake liners).

Yield:
12 mini frittatas (about 6 appetizer servings)

Nutritional Information:
Per 1 mini frittata: 33 calories, 3.5 g protein, 0.9 g carbohydrate, 1.7 g fat (0.8 g saturated fat, 0.7 g monounsaturated fat, 0.2 g polyunsaturated fat), 38 mg cholesterol, 0.2 g fiber, 85 mg sodium.

When I bought the wedding rings for my wedding that did not happen I got them from www.titaniumera.com. They were inlayed with white gold. I really liked them but I can't speak of durability of the because they were never worn.

Fitness The cross trainer/elliptical machine - how long do you use it? Jul 22 2008

I do 35 to 40 mins a day. I start at resistance 3 and work up to 6. But I started by using the gazelle which was lower impact for 30 mins for about 5 months and when I move home I switched to the eliptical, so I didn't start with as difficult a work out.

I also wouldn't say revenge is my motivator but I do know that back in November when my engagement fell apart 4 weeks before the wedding that I began a journey for change inside and out. I've been working hard and have lost 95 lbs from my heaviest weight of 291 in May of 2007, most of this weight I gained back while being with my ex (in college I was down to 165). I look better now than when we first met. When I see him I have the satisfaction of knowing I'm working towards a better life for myself, that he was unable to break me and that I look darn good, while he has remained the same contining to perpepuate the patterns that are so dysfunctional in his life. I chose to change my life for the better and wether he has a chance to witness it or not makes no difference to me. The best feeling is knowing I deserve better than him, always did!

I'm thinking it was either the movie popcorn with extra butter (I haven't eaten this for at least 5 years) of a Cinnabon (I haven't had one in quite a while).
