I love Trader Joe's soy creamer- a lot of the non-dairy creamers are lower in cals/fat but taste amazing. There is always fat free half and half too. |

I love ANYTHING pumpkin, and I love cheesecake, but for some reason, I didn't love pumpkin cheesecake. If I wanted some sort of pumpkin cheese-type thing, I think I would make a pumpkin spice cake with cream cheese frosting, or individual pumpkin pies using shortcrust pastry instead of graham crust, and topping with cream cheese frosting. |

1/2 cup pumpkin + 2 egg whites + pumpkin pie spice, mixed and put in cereal bowl. Microwave for 2 mins, top with fat free reddi-whip. Pumpkin 'pie' for less than 100 cals :) |

A calorie is a calorie so no one food is more likely to get stored as fat than any other. Good snacks to help with sleep- milky drinks, mashed banana and peanut butter on toast, oatmeal with raisins, turkey + lettuce (apparently- though that doesn't appeal to me at all right before bed!) |

I always order the low-fat meal- my last flight, was served brown rice with some chicken thing on top, 1/2 cup black bean quinoa salad, green salad and a fruit salad for dinner, and an apple and low-fat bran muffin for the breakfast/snack. I always pack Clif bars, bananas (make sure to eat any fresh fruit before landing) and sometimes little packs of cereal/oatmeal- you can always ask for a mug of hot water or milk. |

What spices are in the recipe? Good burger toppings: pineapple + BBQ sauce, laughing cow cheese + pesto, hummus, salsa, mashed avocado, mashed pumpkin + cranberry sauce, ketchup, honey mustard, marinara sauce + low fat cheese, tzatziki, fresh mozzarella + tomato slices, salad, thousand island dressing, roast vegetables...anything goes! |

I've tried a bunch of different ways, and this is my favourite In a bowl, put: 1/3 cup oats 2/3 cup liquid (I use half milk/water) pinch of salt sliced RIPE banana cinnamon vanilla Microwave for 2 mins, stirring to mash the banana half way through. Add 1/2 cup pumpkin and microwave for another minute...top with peanut butter, maple syrup, whatever :) |

Mashed banana cooked in is really good :) I like to cook it in water, then top with yogurt. Cools it down perfectly, adds a decent amount of protein (I use Greek, so 15g) and makes it so much fun to eat. |

I would stick with vanilla and use it as a base for shakes- add frozen banana chunks, peanut butter, berries, cocoa powder, etc. It's also good used to make oatmeal- throw in pumpkin and some cinnamon and it's delicious :) |

Wheat bran hinders absorbtion of calcium (as well as other nutrients) so try to eat your dairy products and take vitamin supplements (if you take them) well outwith the wheat bran intake, and if you eat dairy with wheat bran, don't count it as a calcium source. I have osteoporosis so generally just avoid wheat bran as far as possible. |

Freeze 2 banana cut into chunks, then throw into a blender- takes a few minutes but makes a delicious satisfying creamy rich tasting dessert...top with melted chocolate/coconut/granola/whatever :) |

people recovering from anorexia usually have higher calorie needs after they are weight restored anway- there have been studies done and patients needed on average around 400-500 calories more than would have been expected post-gain (for about a year I think?) So given that, plus your age and activity level, 3000 seems reasonable- maybe even a little low but it's a trial/error thing. Remember that the usual calculators don't really apply for people recovering from malnutrition because even after target weight is reached, internal damage is still being repaired which is why calorie need are higher. |

I like hummus or tzatziki- tzatziki is made from Greek yogurt so pretty creamy and elicious. Both can be made pretty easily (and healthier) at home. |

why are you sticking to just 3 meals a day? It would be easier to fit things in if you added in snacks and broke up your calorie intake a bit. When I was doing 3000, I did it like this: Breakfast = 600 cals Snack = 200 cals Lunch = 800 cals Snack = 300 cals Dinner = 800 cals Snack = 300 cals |

that would depend a lot on type of bread, whether the peppers are marinaded in oil, how much cheese, what kind of spread... I could make it at some for 300 calories but it could be anywhere from 300-600.
1oz goats cheese = around 80-100 cals 1 slice of regular wholewheat bread = 80-100 cals peppers = not very much oil/butter = 100-ish cals per tbp are you still gaining? if so...just enjoy :D |

The good thing about Ensure is that it crams a decent amount of calories and nutrition into a can (1 cup) so it's often easier than eating the equivalent in food. I don't know the nutritional stats for the Jamba Juice shakes, but as long as you are eating adequate calories to gain and a variety of different foods, nothing wrong with milkshakes/smoothies/whatever. |
