i like your post!  I too love dried beans--the cost, the taste and I know what's in it.  However, you don't mention how you cook them!  I buy canned to save hours and hours of prep--I'd love to know your secret.

Recipes Potato help! Oct 20 2009
14:51 (UTC)

I'm late but here's my new favorite potato recipe:

two small red potatoes for each person

clean

boil until tender but not falling apart (i.e. you can stick a fork in easily and pull them out of the water whole) about ten or twelve minutes depending on size and number

spread a thin layer of olive oil (or use nonstick spray, but oil tastes better) and seasonings to complement your meal (rosemary and black pepper, steak seasoning, lemon pepper and touch of salt, whatever you like, dill would be good too) on a baking sheet

place the boiled tender whole red potatoes on your oiled seasoned baking sheet about two inches apart

use a serving fork or potato masher to smash each potato flat (kinda like peanut butter cookies)

spread a touch more oil and seasonings on top of taters

bake at 350 for 30 to 35 minutes

YUMMO--they are crispy like french fries and smooshy like mashed.  the best of both worlds!

did you get the Active??  we just brought it home.  I really like it so far.  Are you trying the 30 day Challenge?

I hope you find someone to compare scores with; I almost never log in here or I'd go for it.

Since your rides are not consistent, can you walk/jog/run around the block as a source of cardio?  Write all your stuff down.  Or use Google Calendar to keep track.  I think keeping track of stuff keeps me going.

Good luck.  You can do IT!! :)

I buy bread from a local bakery (I love crusty European breads, and it's hard to get that kind of crackly, chewy crust without a steam oven),

just place a pan of water in the oven under your bread dough as it cooks!

everybody seems to agree on your point!

Bread is really really easy to make yourself!  There are several good, easy recipes I'll share right now!  I promise--its way easier than you think. and you don't need a fancy pants machine! :)

Note that homemade bread will not stay soft and fresh-tasting as long as what you buy in plastic baggies.  BUT, you know exactly what went into it (generally, flour, water, oil, salt and yeast).

here's a link to one recipe:

http://www.hillbillyhousewife.com/beginnersbr ead.htm

and here's an even easier, less time consuming recipe link:

http://www.nytimes.com/2007/11/21/dining/211b rex.html?_r=2&ref=dining&oref=slogin

this is from the book "artisan breads in five minutes a day."  you can halve the recipe for two loaves.

I've made both of these (with mostly whole wheat flour instead of white, just use a bit less) and they were FANTASTIC!!!!  really, just try it.

Foods oatmeal every morning?? Dec 08 2008

I do love oatmeal but down here its so warm that there are few days when i want something hot to eat.  I usually ice my coffee!

and there is the fact that I L-O-V-E love LOVE grits with ground pepper for breakfast

but I eat the old fashioned kind--neither steel cut nor instant.  I cook in the microwave--add the water and ZAP!!!  Only one dish to wash!!  and I most certainly do not add milk, blecth, no milk.  but I like it with a little vanilla extract, or cinnamon, or allspice, or blueberries, or honey, or raisins... I am wondering how oatmeal would be with salt and pepper??? has anyone tried it???

Fitness Sweat suits Jun 21 2008
12:55 (UTC)

ok.  I understand, agree with, and expect you (and me) to follow melkor's advice.  he seems like a pretty knowledgable and fairly friendly dude :)

BUT, I find that sweatsuits are really helpful at keeping an injury warm while working out.  I like to wear plastic shorts to keep my mean old hips warm.  they help to loosen my muscles there a little faster than not wearing them.  I know when I can push through a pain and when I need to back off (good hurts vs. bad hurts) but that comes through intensely attending to my body and how I work within it.

having recently moved into the paths of hurricanes, I've been thinking about this alot lately.  would we take two cars so we could get everything and the dog?  its nearly impossible to get affordable renter's insurance here so not too much would get replaced...

I think I'd definitely get the computer, monitor, xbox, wii, guns, some pocket knives, a cooking pot, the file cabinet or at least the birth certs and ss cards.  I'd take the tent and sleeping bags/mats in case every hotel is full.  a couple gas cans to fill on the way. a truckload of drinking water.  and whatever food would fit in a single cooler I guess.  obviously the dog and his leash and his food.  I have boxes upon boxes of photos so I'd grab what I could and hope for the best.  and some clothes too.  I'd really hate the idea of leaving books, but I could never choose which ones to take and there are so many.  I hope I'd remember some school books and old notes; I still have the comprehensive exam next summer hurricanes or no!

Oh, I know!  cell phone chargers! altho I imagine that after a hurricane most towers are out, but still, it would suck to have a dead cell phone in weather like that...

here's what I wish I'd have heard.

Dating--should not overpower friendship

Family--that there is more to our family than the small number of them you have met.  I wish someone would have said good things about being part of a family.  I wish I could have met more of my family and been a part of their lives.
Puberty--that its all over soon and you can pity the poor kids behind you as you see them moving through it.  that it is certainly nothing to be ashamed of nor ignored.

Problems (driving, drugs, depression, anorexia etc)--hmmm, thats hard.  that skinniness is not the most important thing--not even for a dancer.

Work--that hard work is necessary for all but the most basic desires to be fulfilled.  I wish someone would have pushed me to work harder at all the things I just kinda worked for.  As for a job, I wish I had known that choosing a degree program should have depended on my future career goals.

Friends--that friends will last forever if you don't abuse the relationship

Sex well this goes for both sex and sexuality--that its not something to be ignored or ashamed of BUT its also something to enjoy with great caution when young.

Foods Laughing cow - plain or flavored? Jun 19 2008
17:51 (UTC)

hey thats my recipe there plovington!!  :)  glad you liked it!  it is sure damn tasty.

I have LOVED the original lite swiss for a while.  its saves me.  I love cheese.  its not as wonderful as the multitude of artisan cheeses I used to eat, but it works.  its just cheesey and salty enough to really get me through that daily cheese craving. I don't even need the crackers

I just bought the french onion last week.  by itself, I don't like it.  its got a funny chemically aftertaste.  however, I have used it for cooking and its better.  spread on chicken breasts or chopped into a salad its ok.  I won't buy the flavors anymore though.

I haven't done this in a while because its just not politically correct anymore, but it always helps me to go for a drive.  I don't like to eat in the car and I feel like a fatty going through drive thrus so I know I won't do it.  just to get out of the house/work/situation and go for a mindless drive outside of the city.  smell the kudzu and enjoy being alone

If i lived on that farm I dream of, I would garden or go for long walks alone and away from stuff.

I hear you on the haircut thing.  I just have no clue what kind of haircut will help me to look professional and older with absolutely NO upkeep beyond shampooing and brushing.  not only do I find it a waste of time, I have no idea how to do any hairdo stuff (well, I am damn good at ponytails and buns...)

as for poise:  one down!  I claim so only from so many years practicing healthy posture in classical ballet training.  and the idea of professionalism is one that is incredibly important to me.

as for maturity: well I dunno how to appear to increase that... any idea?

I don't really ban anything.  but I don't buy anything that is salty and so quick to grab like cheezits, chips, nuts, cheese in blocks, and stuff like that in any larrge quantity.  I don't binge on something until its gone in one day, but I'll eat a serving of good stuff like that everyday until its gone.  a whole week of servings of salty junk is no good!

Motivation Staying healthy while traveling? Jun 17 2008
23:10 (UTC)

remember that you will stay happiest. and have the best time. by remaining healthy and to do that you must make time to exercise a little everyday--go out early or after dinner for a half-hour.  and when eating out, remember the grand rules:

baked, grilled, poached, broiled!

dressing, butter and oil on the side

hold the buns/bread/crackers

sub veggies for white carbs

don't eat all of a HUMONGO portion

have clear, broth-based soups or a garden salad for appetizer so you don't go overboard on the entree

HaveFUN!  I am taking the Florida cert test this summer to teach middle school Social Studies, but I'd certainly prefer to TRAVEL!! :)

two vials?  you seem pretty slim.  I'd be sure to stay aware of your body if you're gonna work out.  drink lots of water and don't hesitate to stop working out if you get faint.

why not take a class as an elective that gets you moving three time a week?  beginning dance classes, aerobics classes, tennis, swimming, there are tons.  just stay away from underwater basket weaving... thats no fun.

I too lost weight while in college.  I was danced at school, worked full time and walked to every single class.  My first two years I went to a fabulous small school and the cafeteria was wonderful.  they were always open (from like 7 am to 8 pm or something) while they only had meals out at meal time, I was always able to grab fresh fruit or a bagel.  and coffee.

if you eat out too much, talk your friends into helping you prepare a get-together meal once or twice a week its fun and way cheaper and can be better for you.  you only have a microwave and toaster oven?  look for books online about dorm cooking and microwave cooking, there are tons!  get ONE!

bananas, rice, applesauce, toast, sprite

my belly has felt like its full of fire for two days now.  i am eating mostly crackers so...I can kinda sympathize with you.

maybe add some lukewarm chicken noodle soup.  or carrots and celery boiled down in veggie broth.  some warm tea (no lemon, no milk) might help too.  good luck

i tried this earlier this week:

chicken breast florentine

two boneless, skinless, thawed chicken breasts (you might need to hammer them thin, but I didn't)

1.5 cups fresh spinach chopped mixed with 1 clove garlic (i tried two cloves and it was a bit too much) and some onion diced really finely.  add some ground black pepper and some red pepper flakes too.

then build it:

spread one laughing cow lite wedge on one side of the breasticle.  heap half the spinach mixture on one side.  fold the breast over the spinach and secure with a toothpick.

repeat with other breast.  season the top however you like and spray with PAM to avoid drying out.  bake about 40 mins at 350/400 or until the juices run clear.
