Vegetarian Weight Loss for New Vegans??? Aug 27 2009

I haven't lost any weight since becoming vegan. But then again, I don't really have any weight to lose.

I do, however, feel SO much more healthy.

When I went vegetarian (I was vegetarian 3 yrs before being vegan), I lost 30 lbs with little to no effort! I was so shocked haha.

Thanks so much everyone.

I've had a lot of the different kinds of soy ice cream but, it's way too tempting to just have one serving. I might try the bars though.

Both of the popcorn ideas sound really great, so do the raw brownies! :)

I've recently gone vegan (been vegetarian for 3 years) and I've been eating a lot of lentils. They're really low cal and very filling. I had this last night.

1/2 c green lentils
1 tsp minced garlic
1 small onion
3 carrots
1 celery stalk
1/2 c organic canned tomato sauce
1 vegetable broth cube
1 c water
1/2 tbsp extra virgin olive oil (optional)
Herbs, spices, salt & pepper to taste.

Boil water and add broth cube. Once dissolved, add lentils and simmer for 15-20 minutes, or until desired texture is reached.

In the meantime, heat oil in pan (or spray it with cooking spray). Dice onion and add to pan, along with the garlic. Cook until transparent. Chop carrots and celery and add to pan. Cook until tender.

By this time, your lentils should be done. Drain excess water if necessary, although they should soak it all up. Add veggie mixture into pot and mix well, but gently.

Now is the time to add the tomato sauce. If you're going to add any kind of dried spices, you might want to heat the sauce in a separate pan, because it may get too thick to stir properly if you add the spices right into the lentils. I like to add a little dried parsley, black pepper, salt, and a tiny bit of ginger. Add the sauce to the lentils and veggies, cook on low heat until sauce is warm.

Make 1-2 servings, depending how hungry you are. :)

I like to serve this with grilled zucchini. I cut it into rounds, spray it with a little bit of that 1 cal per spray balsamic vinegarette dressing, and grill it for a few minutes.

You can add whatever kind of veggies you want, but make sure that you don't add too many, or else that texture over powers the lentils.

Go to a local farmers market if you can. The less your food has to travel to get to your store, usually the less it costs. You can also find out more info about how the fruits/veggies are grown. If it's an outdoor sort of event, sometimes you can even talk to the farmers themselves! It's a great thing if you're looking for organic produce.

A very cheap way to get protein is to buy dried legumes, either in bags or in bulk. I recently discovered lentils and it was $1.29 for a (I think) 1 lb bag. The dried chickpeas were around the same price. None of the bags were over $2, so you can really stretch a few bucks if you buy them in a bag rather than a can. As far as buying in bulk goes, you'll have to check your local health food store.

Tofu is relatively cheap, and you can usually get that in a regular grocery store.

Who ever said Aldi, that's a great place to shop too. Their produce is usually priced by the piece, rather than by weight, which can help cut costs. Make sure to bring your own bags, though.

Don't rely too much on already prepared foods. You can save a TON of money if you just cook for yourself. Like I said, dried beans are really helpful. Usually rice that's quick cooking is more expensive than rice that hasn't been pre cooked. Pre-cut veggies are more expensive too.

Don't be afraid to try lesser known brands of things (rice, beans, spices, etc). They're usually exactly the same as a bigger, more well known brand.

I live on a strict food budget too so, hopefully I helped a little!

What about canned beans? Or if you have a grocery store with a salad bar, they usually have plain chick peas, kidney beans, etc. That way you can buy as little or as much as you want, without having to refridgerate the rest of the can if you don't eat it all. You can buy raw nuts and seeds as well.
