| Foods | gluten free on the road? | Aug 28 2009 06:39 (UTC) |

Hey my mom has been on a gluten free diet for many years so i am very familiar with this diet. When we are on the road and she is looking for fast food, Mcdonalds fries are safe because they are cooked by themselves so there is no cross contamination you can also ask for a burger without a bun. Wendys chili is GF as well. Hope that helped :) |

I love the Peanut butter and banana grilled! I use better'n peanut butter it works really well. Also i make pumpkin smoothies in the morning. 1/2 cup pure pumpkin, 1/2 cup vanilla yogurt, 1/4 cup skim milk, dash of sugar free maple syrup, cinnamon, pumpkin pie spice (optional), around 7 ice cubes, and BLEND! sooooo good and makes a huge smoothie! I also take half a banana and slice it up in it! |

Maintaining a gluten free diet can be pretty hard. My mom has celiac and so many little items that you would never think have wheat in it actually do. For instance soy sauce. Ingridients such as modified food statch is in a ton of food items and it contains gluten which limits your diet even more. I know my mom has an extremely hard time when we go out to eat. Even though more places supply a gluten free menu the place can still cross contaminate her food and still make her not feel well the next day. |

The seared ahi salad is a good choice with dressing on the side, Grilled norwegian salmon. Or you could ask to see whats the fish of the day. Haha hopefully you like seafood. If any of the dished come with the mashed potatoes or mac n cheese you could subsitute for grilled veggies. Hope that helps :)

My mom has had celiac for around 6 years now so i am very familiar with all the ingredients she can have. Pamela’s baking mix is a great substitute for flour. I use this mix to make banana bread, cookies ect. Tastes like the real thing! Also a fun gluten free recipe to try is a risotto using Arborio rice. |

Yes MANY doctor visits every other day! I had to give myself shots twice aday, blood and ultra sounds every other day. I had this procedure this last summer not for donation but for other reasons. It is VERY time consuming but it is a great cause to help a family in need. If you have any questions about the procedure just let me know :) |

Some tips on making pumpkin pie lower calorie would be using fat free evaporated milk. Buying a lowfat crust or making your own out of fiberone. If you have nothing against splenda you could use that. Egg whites instead of whole eggs and using skim milk instead of whole or 2%. Hope i helped:) |

I mixed everything by hand but if you added a little non fat milk to it im sure it would come out great in the blender (disregarding the cereal in blender). This is also great with nonfat vanilla yogurt and using a frozen banana to thicken it up! |

My mom has celiac and has had a problem with breakfast also... She seems to really like the brand Van Gluten Free Waffles. She is also a fan of Gluten Free Bagels and English muffins found at most health food stores. Enviro Kids cereal comes in a lot of different types of gluten free cereals. Also certain kinds of oatmeal are gluten-free like MCcanns Irish oatmeal! Hope that helps! |
