Madhur Jaffrey's World-of-the-East Vegetarian Cooking is by far my favorite. 

Also for simple, yummy, non-fussy vegan indian food, Vegan Dad (0n blogspot) has some great recipes.  I have made many of them and they were all great.

oh man, we call it everything!!

When my daughter was little she mispronounced it "beediah" so we still use that word.

gina, vadge, yoni, va-hoo-ha, hoo-ha, cooter, pooter, poo-nanny, cootch, coochie, the little lady, dumpling, The Magical Girlie Portal of Pleasure and of course, va'jay-jay.

My boyfriend and my daughters named our mini-van "Princess Va'JayJay"

Lunch was at the Dosa Man's cart a.k.a
NY Dosas
in Washington Square Park - so delicious, he has truly earned all the acclaim.  Everything was vegan, including the "drumstick" which was some type of soy meat on a sugar cane stick with some spicy dipping sauce.  But that was only a novelty, the dosas were truly sublime.

We did go to
Hangawi
for dinner and  it was more amazing than I imagined.  Totally vegan, everything was beautiful - the food, the smooth wooden utensils, the staff - I highly recommend.

On Saturday morning we headed down to Chinatown and spent most of the day there.  Next time I am going to bring a big sack and do some produce shopping on the streets! Everything looked so good and was half the price of the grocery stores back in W. Massachusetts.  Lots of fruit and all kinds of veggies, greens and mushrooms.  I bought some organic buckwheat soba noodles for $1.75 (usually over $3 back home) and a really cool stainless steel thermal mug that is designed to brew loose tea - hope that it encourages me to cut back on the coffee and drink more green tea (and Lapsang...almost Lapsang season).

One "treat" we indulged in was a visit to
Doughnut Plant
(not to be confused with planet donut,).  They use all organic flours and they are trans fat free.  There are even a few vegan selections every day. We tried a VALHRONA CHOCOLATE DONUT - yum.  The doughnuts were light and flavorfull...and not too, too sweet, but of course sweet, they are doughnuts after all, and after I ate it I didn't feel like I had a rock in my tummy.

 

I can't wait to eat my way through the city again soon.

I think it can be a good thing.  I eat the Ezekial bread, it is made with sprouted grains so it has more protien.  I often like to eat just veggie sandwiches sometimes, just cuke, avocado, tomato, sprouts...with this bread it makes it a more rounded meal.

Flax oil is pricy, but the seeds are not.  I bought a large bag of organic brown flaz seeds at WHole Foods for less than $3.  Flax seeds need to be crushed or ground before you eat them...if you dont, you will not get the benefit of the oils inside.

from what I can gather, the Japanese do things in moderation.  I am sure tofu, tempeh, miso and edemame are perfectly fine foods to eat every day if you eat reasonable sized portions.  I enjoy these foods weekly.

I think the problem with soy is that SO many things (in the US at least) are now fortified with soy protein.  There are bars, shakes, fake meat products, cereals. ...There are even soy supplement pills I have seen at the drug store. People are eating WAY too much concentrated soy products instead of eating them in their natural state.  I am sure that the average Japanese person is not swilling down 300+ cal smoothies made with soymilk AND soy protein powder everyday.

Above, I wrote about my friend who became sick from soy, I beleve it was due to lots of soy milk, shakes etc , not natural soy beans, tofu, tempeh etc.

I have a friend, in his late 40's .  very health concious, eats well, excercises etc.  He started adding lots of soy to his diet and eventually he became very sick, he was sleeping all the time, no energy at all.  Finally went to the Dr. and it turns out the soy was distroying his thyroid!  He cut out the soy and is back to his normal energetic self.

If you read the whole article she does explain why she used the '08 wrapper....she bought a "fresh" burger to compare to the old petrified one

 When we are there they play hard for two hours on the playground. They get nuggets, apples and milk. Thanks for judging me, though.

A few years ago I was guilty of taking my kids to McD once in a while for the same reason....they would play, eat the food and get a toy.  After a while it started to bother me.  I would try so hard to get them to eat at home, teach them about processed foods (we still eat some) etc...plus the toys they would get so excited about would last a few days then just clutter up my house. 

I made a deal with them - no more McD's...if we want a special treat lunch we go to a local family owned pizza place for a slice and they split a drink, or we get Chinese (they love rice and appitizers).  We go to a local play ground instead of the filthy play structure at McD's and I allow them to spend $2 at the store or the like on a little treat or stickers.  SO much better than supporting McD's and also teaching my kids about local economy.

 

We DO go to McD's while we are traveling BUT only to use the restrooms! We have decided that McDonald's is just a chain of bathrooms that happen to also sell junky foods!!!

I agree with the above couple of people, make up some little single serving bottles.  Most dressings are fine for a few hours out of the fridge and in your purse or bag.  I guess in hot weather you could freeze it before hand, or use a little lunchbox with an ice pack.. Just be sure to put the bottle in a zip-loc bag with a napkin in case it leaks a bit.

I doubt McD's meat and bread is the same as everyone else's, it is very processed and I am sure full of preservatives....like the way a Twinkie can stay "good forever"...

I guess it all depends on the conditions that this burger were in...I could believe it, if there was very little humidity.  I once had a grapefruit totally dry out, never had a spec of mold on it.  I worked at burger king in highschool, once in a while we would have rolls go mouldy, but they were in plastic bags in a steamy hot kitchen.

Eating a 100% whole foods diet may be easy if you are single and only have to worry about your self or perhaps an adult partner and/or a few pets...but being a single mom to two little kids (who are not yet self sufficient), working full time and maybe even taking some classes too....

I only have 3 waking hours to spend with my daughters every day and making them "easy kid food" means more time with them and less time in the kitchen.  For dinner they may have boxed mac+cheese (yes, I do know how to make my own, and I do on the weekends) and egg sandwich, bagles with toppings, grilled cheese, baked potatoes, rice, etc...always with some fresh fruit.  Ice cream once in a while as a treat.  On the weekends we cook from scratch, lots of beans, grains and veggies, but during the week and when filling their lunch boxes I do rely sometimes on store bought breads, crackers, little tubs of yogurt etc.

It won't always be this way, someday I will be done with school, they will be a little more grown up and able to help out more.

b - Odwalla Bar - Berries G0 Mega and a hot coffee with soy milk

l - V8 and a wholegrain english muffin with natural PB

snackies - a couple of apples and some sunflower seeds.

kept the earlier part of the day light as I plan on cooking a big, crazy vegan Indian food feast for dinner tonight. Spicy potato and cauliflour, red lentil dhal and basmati rice from Vegan Dad's blog.

have you considered one of the "five colleges" in the Happy Valley?  UMass, Smith, Mount Holyoke, Amherst and Hampshire....

The whole Western Mass connecticut valley area is very veg-friendly...Umass Amherst even has a student run vegetarian cafe on campus.

The stock (dashi) that is used to make miso soup often contains bonito flakes which is made from dried fish.  If you order at a restatuant I would ask first.

But miso soup is so easy to make at home, it does not have to be 'instant', just get a jar or pouch of miso from an Asian or ethnic foods store.  Make a pot of hot but not boiling water (you should never boil miso).  In a small bowl dissolve a few tablespoons of miso with some of the hot water, then add this mixture back to the pot. It is easier to break up and dissolve the miso this way rather that putting globs of it in the pot.

Then add, tofu cubes, scallion and nori seaweed...you can add grated carrots.  I have made miso soup almost like a stew with onion, squash, azuki beans, kale etc.

I also agree w/ gi-jane on the indian food.  It seems intimidating to cook your own, but I have found it to be very easy.  I have made many of Vegan Dad's recipes :

I still don't claim it, and it's been a while.  I just say " I choose to eat a plant based diet" and leave it at that. 

I don't like to use the term "vegetarian" becuase then people assume that I will eat dairy, eggs...or fish even. 

But if I say "vegan" people start to either judge - like look at my feet to see if  my shoes are leather, or they question if it is "healthy" and start telling me how they heard that being vegan makes your brain shrink.

I worked in a small country bakery for years.  We never dissolved yeast in milk.  Some of our breads were dairy free, like the french, foccacia and anadama.  Some did contain powdered milk.  If there is not an ingredient list, just ask.

Pita bread is usually safe too.

 

Also, you can make your own bread, I use some of my favorite old-recipies and just substitute a non-dairy soy or nut milk if regular milk is called for, and substitute SOy Garden spread or olive oil for butter.

Breakfast: maple oatmeal, an apple and coffee with soymilk


Lunch: leftovers...penne pasta with homemade pesto (I replace the cheese in the pesto with ground walnuts - yum....) canellini beans and homemade salsa on top.

Snack: will be carrots, fruit, sesame crackers with PB

Dinner:  I am dreaming of coconut rice so I might make that even though my boyfriend won't be home to share it with me.  We eat it with beansprouts, cuke avocado, hot sauce and chopped peanuts.

We get them at a local asian market but they sell them in the ethnic food area at the local grecery store.  They are very white, dry and crispy.  You can use regular un-seasoned breadcrumbs, they work great too.  We just love the panko now that we started using them.

my boyfriend makes the best salmon cakes.  he chops the fresh salmon filet with a knife - not a food processor. seasons with garlic, soy sauce, slices scallions and finely diced red pepper.  binds with egg (could use just the white) and Japanese panko bread crumbs.  He coats it with the panko and crisps it up with a little oil in a cast iron skillet then finishes by baking in the oven. 

Served with a cilantro and sourcream sauce.

Heavenly, this is the dish I request for  my birthday dinner.

B- Oatmeal with maple.  Big coffee w/ plain soymilk

L - Tabouleh salad made with quinoa instead of bulger, lots of lemon juice, parsley, garbanzo beans and red bell pepper with a sprinkle of chopped pistachios on top.  Sesame rye crackers with avocado smushed on top (yum)

Snacks - sunflower seeds, apples, chai green tea, carrots


D- I look forward to black beans and rice with piles of my boyfriend's homemade salsa.

 

Dessert - cup of tea and 1 cigarette - i know...GROSS!  I am trying to quit and I am down to 1 a day.  Used to smoke about 8-10 a day.

I eloped in Vermont.  I think the marriage liscense was $35, and no blood tests like they require in MA where we lived at the time.

The justice of the peace that we found on line met us at the small bed and breakfast where we stayed for a few nights.  We were married out behind the inn, the only witnesses were the JP, our 10 month old daughter and a half dozen free-roaming chickens.

We sent out announcements that we had eloped that included a photo and an invitation to a "reception" about 6 weeks after.  It was just a big backyard cookout with a rented tent and lots of wildflowers.

yes, please more ideas!  My VERY picky 2nd grader just started at a new school...and it is PEANUT FREE.   She really only eats a handful of things  besides PB&J  and I am running out of ideas. 

I am going to slip her an almondbutter and honey sandwich this week and see how it goes.

soup idea is good, but if you are a vegetarian I would first ask if the soup is made with chicken stock.
