I have Celiac Disease so I can't eat wheat, barley, gluten and oats- and weat is baisiclly in everything. I was wondering anyone has some new, good gluten free recipie ideas...

I'm bored with mine :\

.I know there's a show on food network all about that, the host has it and prepares everything gluten free, etc.

I can't remember what it's called though. you could try searching the food network website if you don't get the food network on tv, all the recipes are usually avaiable online.

My grandma has recently ended up on a gluten free diet, not Celiac, just a gastrointestinal problem.

Try foil packet chicken...toss chicken breasts, garlic, pepper, bell pepper, onions or whatever veggies you like into a foil wrapper and bake for 40 minutes around 350 degrees...yummy, also, you can do fish the same way.

Use spices to jazz up the boring stuff.  Soy ice cream for variety and a treat.
I do not have Celiac disease, but I have high cholesterol and I found some muffins that I order online that have lots of fiber and flax.  I am hoping to avoid taking medicine and lower it with fiber. Anyway, I noticed on their website that alot of people eat their muffins because they are WHEAT FREE!  I eat one for breakfast everyday and they are big and delicious.  I don't know how tight your budget is, but they are $24.99 for 4 packs of 4 muffins(16 total muffins) shipping included.  When I get them, I put them all in the freezer and defrost one in the microwave for just a few seconds each morning and it is delicious.  My faves are blueberry and chocolate chip.  The are called FLAX4LIFE.  That is also their website.  You may want to check them out.

Good Morning! I was wondering for those of you are have Celiac, what prompted you to go the the doctor to get tested? I have recently been told by my allergist that I suffer from a wheat allergy that is exercise related. Meaning if I workout within 4-6 hours of eating wheat, I break out in hives and can potentially go into anaphalactic shock! I now have to carry an epi-pen with me wherever I go.

 I went on the celiac website this weekend and after reading the symptoms, it seems that I have many of them.

How do you get tested? What if I am completely over reacting?

I have Celiac Disease too! I was diagnosed last march.  I also have type I diabetes and EDNOS.
I like making veggie tacos with vegetarian beans and using romaine lettuce leaves for the wraps. I'm a Celiac vegan lol so I have an interesting time finding stuff to eat. If you'd like to try something really different, check out fatfreevegan.com and click on their 'gluten free' section. Also, check out book stores for gluten free recipe books. I have around 5 of them and they have some really fantastic stuff.

i have celiac disease as well, thank goodness i love cooking.  in order to lose weight, i've pretty much been sticking with meats, fruits and vegetables (despite my love of rice pasta).  i mix the meats up and use different seasonings so i don't get bored.

i would also suggest looking through old family recipes and simply altering them to fit you.  

i have some recipes typed out for a cookbook i'm writing, if you want some of them let me know. 

I just stumbled across this one!  me too, celiac!  its been about 6 years now.  i have other food allergies too, egg, navy bean, kidney bean, soy & casein.  I alter recipes too, I can take pretty much any recipe and find substitutes.  I actually still use my favorite Betty Crocker Cookbook the most, I just substitute stuff.  I use a lot of seasonings too and it helps a lot.  I want to start using fresh herbs, I have one of those Aerogardens. It's pretty cool.  Nice to meet everybody!

quinoa, millet, buckwheat are good stuff. You can find plenty of gluten free stuff in the health store. Go to Bob red mill's website, they have a a variety of gluten free meals and grains. 

I like to eat millet in the morning cooked with milk and I add cinnamon, almonds, so yummy. 

You can cook quinoa with broccoli and tomatoes and serve it with baked fish. your options are endless. 

If you like baking, there are gluten free muffins and cakes mixes.

My sister was recently diagnosed with celiac disease. I know that when I cook for her I just find normal recipies and substitute anything with normal flour with chickpea (sp?) flour.. which seems to work really well at replacing the binding qualities of gluten. She loves japanese food, so when I'm back home I'm going to try my hand at making homeade udon noodles for her.

Honestly, chickpea flour is really amazing for baking, but I was wondering if anybody knows of any other good substitutes for flour? I know rice is pretty popular, but sometimes recipies need something a bit closer to gluten it seems. Any advice?

My mom has had celiac for around 6 years now so i am very familiar with all the ingredients she can have. Pamela’s baking mix is a great substitute for flour. I use this mix to make banana bread, cookies ect. Tastes like the real thing! Also a fun gluten free recipe to try is a risotto using Arborio rice.

 have you tried to experiment with buckwheat flour? I am not sure if it is closer to gluten. To me, it sounds healthy but I haven't tried it yet.
