Celiac Help!!!!
My boyfriend was diagnosed with Celiac disease about 6 weeks ago and is in a breakfast rut. I can hardly think of meal ideas for myself most of the time, and can't really help him too much. His usual breakfast is eggs and bacon, sometimes with a gluten-free waffle. Any ideas??
Health food stores usually carry a range of gluten-free breads and cereals, as well as frozen items such as waffles, English muffins, buns, baguettes, etc. Often times, you can also find GF pancake, bread and muffin mixes as well. Finally, French toast can easily be made using GF bread.
Myself, I prefer GF toast with peanut butter for breakfast. Or a bowl of GF corn flakes cereal with dried blueberries and cranberries and vanilla soy milk (but that's because I'm lactose and gluten intolerant).

I currently work at a restaurant that among other things, is entirely gluten free. In the restaurant, we don't have soy, wheat, dairy, meat, sugar, or grains.
we DO have brownie a la mode, several different flavors of ice cream, pancakes, burritos, anything you can think of!

Gluten-free cereals (corn flakes, found mine at Whole Foods), oatmeal (you can buy GF oats, but most people who are celiac can eat oats, only like 10% are allergic,) toast made with millet, rice or soy, fruit and yogurt (get an organic yogurt and read all the ingredients, some brands and thickened using gluten). You can make him a breakfast smoothie with milk, bananas, berries, and some flax seed oil for fiber. Add honey for sweetness and some ice cubes to give it some frothiness. Like you're already doing, there are gluten-free pancake and waffle mixes. I usually make a big stack of pancakes on Sunday and pack a couple of them in a tupperware with grad B maple syrup for breakfast at work, with a yogurt and some fruit to round it out. Make muffins using rice flour, quickbreads... there are a lot of possibilities if you're willing to bake! Good luck, I hope he feels better soon.
There's lots of alternatives to wheat and gluten containing products as has already been said. You'll need to be happy to get your hands dirty in the kitchen making batches of food but then that is half the fun of it. Two of my favourite foodie blogs are Book of Yum and 101 Cookbooks. My mom has celiac and has had a problem with breakfast also... She seems to really like the brand Van Gluten Free Waffles. She is also a fan of Gluten Free Bagels and English muffins found at most health food stores. Enviro Kids cereal comes in a lot of different types of gluten free cereals. Also certain kinds of oatmeal are gluten-free like MCcanns Irish oatmeal!

My uncle has celiac, and he had a quiche that he really liked. It was crustless, but I think there was also a version with a rice-flour crust. I think most quiche recipes can be easily modified by just leaving out the crust. It'll keep longer in the fridge that way too.
Also, what about potatoes? Left over boiled potatoes can be sliced up for home fries, or left over mashed potatoes reheated as patties with a little salt and pepper, for some starch with his eggs.
If you have one nearby, Asian markets can be a great source of cheap rice noodles.
