Recipe Ingredients for Cha bong ca hoi kieu Nhat

120 grams Salmon, Atlantic, Farmed
14 grams Sake Wine (16% alcohol)
1 tbsp Mirin (rice cooking wine)
2 Tablespoon Soya Japanese Sauce

Recipe Directions for Cha bong ca hoi kieu Nhat

  1. To make 1 cup parade, you need the following ingredients. If you want to do more, increase the portion. Can use frozen food.

  2. 1 piece of salmon fillet about 150gr / 4 oz

  3. Salt enough

  4. Sake

  5. 1 tablespoon mirin wine

  6. 2 tablespoons soy sauce (use a light-colored type)

  7. Rub salt onto the fish, put in the refrigerator at least 1 hour, preferably overnight. Will infuse the fish with salt and draw out water in their fish. If you use salted salmon, you can skip this step.

  8. Drain the salty liquid excreted from the fish. Place the fish pieces on the back onto a nonstick pan. Season with cup of sake. Place fish on a steamer on medium heat, as this will evaporate off sake.

  9. Take fish out, let cool, remove skin. Beat with a fork, picked off the bone, if any.

  10. Clean the pan, put the fish in again. Add a tablespoon full of sake, mirin wine and soy sauce. Stir to let the water evaporates. Continued until the fish dried.

  11. The drier the fish is the longer it can be kept. Watch the fire to ensure the fish is not burned or discolored too much.

  12. Let cool. Keep refrigerated. Use within one week if there is still moisture, two weeks if the fish is really dried.

  13. (*) Only 120g salmon, atlantic, farmed is used since this type of salmon has been dried heat and should weight less.
