Cheese - anyone have an alternative for quesadillas?

Cheese just has so many calories, but a quesadilla just isn't right without it. Any suggestions?

Cheese has ~100 calories for 1 ounce.  Do you know how much an ounce of shredded cheese is?  It's a fair amount to use on quesadillas... not as much as I would like, but I would definitely use it. 

I still make nachos at home with shredded cheese and tortilla chips.  It's not bad to do once in a while. And cheese has protein and calcium, and lots of other good things in it.

There are also low fat cheeses you can use, but really cheese is not a bad food.

If you start out with flatout tortillas (90 cals) or another healthy tortilla you will be doing much better. The tortilla you use can add most of the calories. I like the Italian one (flatout). As far as cheese, I eat mostly skim mozarella, or some of the kraft low fat cheeses. Also, too keep myself from adding too much cheese, I like to add other healthy things in, like some salsa, peppers, or some really lean chicken or vegetables.

Use goat cheese. It's lower in calories than hard block cheese and you don't need to use as much because it's very flavourful.

La tortilla factory brand tortillas (if you can get them) are the lowest calorie tortilla around (about 50-70 cal each) and Kraft sells low cal/fat sliced cheeses(cheddar, american, pepperjack and swiss) which are 30-50 calories a piece (about 1oz).

As a matter of fact, McHeather, for lunch today I had 2 crisp 6-inch Ole' brand corn tortillas, topped with 1/4 cup each Rosarita brand no fat zesty salsa refried beans, and 1/8 cup each shredded cheddar.  Total calories:  285.  It was very good, though if I'd had it on hand, I would probably have added a tablespoon of salsa to each one.

I would have to suggest for you to try mission corn tortillas instead of flour tortillas.  The corn tortillas have 90 calories for "2 tortillas" and its alot better for you than flour.  You can also try the reduced fat mozarella cheese to reduce your calorie intake.

I totally feel like procrastinating (who WANTS to do organic chem homework?) and sort of agree with the above poster.  I once made a veggie lasagna that called for mixing cottage cheese with a small amount mozzarella as opposed to using a ricotta filling and lots of mozzarella on top.  It might work for a quesadilla if you mix some cottage cheese with cheddar jack but you might have to blend it with a little bit of milk to make the consistency less lumpy.  If it's still lacking in flavor, you could try adding a spinkle of taco seasoning or regular seasoning salt.  Hope I could help!

Kraft Fat Free Shredded Cheese is 45 cals for 1/4 cup.

Thank you for all the suggestions! I found some low-carb tortillas for 50 cal each, and combined fat-free feta with low fat cheddar (plus veggies) to make a great quesadilla.
