Loved these growing up- the only way I would consent to eat tuna.
| 2 | c cooked rice |
| 1 | c cheddar cheese, shredded |
| 6 1/2 | oz tuna, drained |
| 3 | oz sliced olives |
| 1 | tbsp parsley flakes |
| 1 | tsp seasoned salt |
| 1 | egg, beaten |
| 2 | tbsp milk |
| 3 | tbsp margarine , melted |
| 2 | tbsp lemon juice |
- combine rice, cheese, tuna, olives, parsley, and salt.
- Stir in egg and milk.
- Grease 6-12 muffin cups. Divide rice mixture evenly.
- Bake in 375 oven 15 minutes or lightly browned. drizzle with butter sauce.
- Butter Sauce: Combine melted margarine and lemon juice.
