Chicken breast- how to cook?

What do you usually do with chicken breasts? I want to do some simple cooking tonight! Anyone got some nice recipes? It'd be better if you can also state the amount of calories in that dish as I only have around 400 kcals to spend for dinner! (Not to mention I want to take some RICE tonight- fatty!) Blahhhhhh!

Chicken Mexicana

Makes 1 serving
Very easy, spicy chicken, Mexican style. Very moist and tender.

Ingredients
6 ounces chicken, fresh breast fillets
1 cup salsa
1/2 cup pepper, green
  1. Chop the green pepper

  2. Put the salsa and pepper into a non stick saute pan with a tight fitting lid

  3. Heat to simmering. Cook for 5 minutes

  4. Place the chicken on top and spoon a little salsa over it

  5. Cover and simmer slowly for about 10 minutes or until the chicken is cooked through, but not overcooked.

I've had a George Foreman grill for years. It's great for when you don't want to make a big production out of dinner. 7 mins & it's done! Plus, all the fat drains away.

Usually, I'll have a breast, spiced up with herbs and white rice. I always like to saute some green/red peppers & onions for the side. I do tend to eat more boneless chicken Thighs, though. They are way juicier than breasts.

Ever make enchiladas?
Just searched in the "recipes" section, and I found these recipes for cooking chicken,

1.    15 Minute Sautéed Chicken Breasts with Mustard, Tarragon
Ingredients 1 medium ONION 2 PC Blue Menu Skinless Boneless Chicken Breasts 5 clove GARLIC 3 tbs DIJON MUSTARD 1/2 cup Chicken Broth 2 tsp HONEY 1 tbs FRESH TARRAGON 2 tbs PARSLEY 1 SALT AND PEPPER TO TASTEDirections

  1. Heat 1 TBS broth in a 10-12 inch stainless steel skillet. Healthy Sauté onion in broth over medium heat for 2 minutes.

  2. While onions are sautéing, cut chicken into pieces. Add chicken pieces and continue to sauté for another 3 minutes, stirring frequently to seal chicken on all sides. Add garlic and continue to sauté for another minute.

  3. Add mustard, ½ cup broth, and honey. Mix thoroughly and simmer uncovered for about 7-8 minutes on medium high heat stirring occasionally to cook chicken evenly. This will also reduce sauce.

  4. While chicken is cooking chop herbs and add at end with salt and pepper to taste.

2.     Ginger-Honey Glazed Barbecued Chicken Breasts


Great protein!

Ingredients 1/3 cup honey 1/3 cup low-sodium soy sauce 1/3 cup rice wine vinegar 2 cloves garlic, crushed 1 tablespoon freshly grated ginger 24 oz chicken breastDirections
  1. Combine the honey, soy sauce, vinegar, garlic and ginger in a small saucepan. Cook over high heat until the mixture reduces by half. Let cool

  2. Spray the grill grate with non-stick spray (or oil it well) and preheat the grill to medium-high

  3. Season the chicken breasts with salt and pepper

  4. Grill the chicken on each side until it is cooked through, about 2 to 4 minutes per side, depending on thickness. Brush them on both sides with the honey mixture, then grill 2 to 3 minutes more on each side

  5. Drizzle the chicken with the remaining honey mixture and serve


sound rather easy to cook and delicious to me, they are estimated to have around 192kcal per 6oz of chicken in the first recipe and 249kcal per 134g of chicken in the second recipe. but the estimation is not complete, how many calories do you think the dishes will have ? I am worried about the honey... they're very hgih in calories you know.... 
I seriously swear by my George Foreman grill and different kinds of marinade.
