Chicken Breast

Quote  |  Reply
Ok, I feel like I am not eating healthy chicken breast. I eat tons of skinless/boneless chicken breast but I don't think I'm cooking it very well.

I usually cook it on a frying pan with Pam Cooking Oil. But it drops a lot of grease. It doesn't look very healthy to me.

That is why I am looking for new and healthy ways to cook my chicken breast. Any help is greatly appreciate it. I am not looking for a fancy recipe or anything. Just a healthy way to cook it.  :)

I always grill my chicken on a george foreman grill. No oil needed!

I boil it in a sauce pan, with lemon.  The trick is to not cover it entirely with water, and keep the water not boiling but wholly cow boiling.  let the water evaporate as you cook and then sear the chicken when you are done.  100% No fat added.  And still Juicy and Good!

You can also Bake it.  But the hard part of baking is it tends to dry it out (think bad turkey).  So don't bake unless you are also going to stuff, or casserole.

Microwave isn't a bad option.  1st wash the chicken.

2. Set on dish.

3. Microwave high one minute, flip repeat until cooked threw.

((if you start with a frozen piece and a little water in the plate.))

If your pan is too crowded then you'll have a lot of moisture collect in the pan.  Usually I cube the chicken and stir-fry it with a little bit of oil.  Grilling is my favorite. (on a charcoal grill)
This is difficult.  :(

I think I'll try lilsmiter's suggestion: boiling the chicken breast. I tried it once and it tasted terrible. But this time I won't completely cover it with water.

sarahbethmonster's suggestion sounds good too. How much does a george foreman grill cost? No fat either?
A nice way to cook boneless chicken is to cut it into a biggish dice and thread it on skewers with chunks of onion, peppers, mushrooms etc.  Brush the whole thing with a little olive oil and soy sauce/balsamic vinegar, sprinkle on a few herbs and grill (broil) it.   That way it isn't greasy at all.
I make a marinade in another bowl. SO you can put whatever spices you want or sauces then put a little bit of Olive Oil and whisk that up then brush it on the chicken then cook it that way i dont over oil the pan and it cooks great and comes out really juicy. so you can try that, I cook it just on the oven top in a skillet. very very easy.
I spray my pan with Pam.  Heat it so it's hot.  Season my chicken breast with Mrs. Dash Garlic and Herb.  Quickly sear the first side, turn it over, turn down the heat to medium low, cover the pan with a lid and let it finish "steaming" thru, about 5 minutes.  You will be suprised how moist it is and only a few added calories from spraying the pan.

I think the large Foreman grill is like 30 dollars at Ace.  There is also a small one for one person, or there use to be, if it's still around it must be really cheap by now.  The Foreman grill is great.  All the fat that comes out of the meat you grill drains out.  But the food comes out juicy and yummy.  I love my grill!

Btw, you can use it for so many other things too.  Like veggies or even toasting up sandwiches :)

You can find GF Grills on eBay too if you don't want to pay full price, but watch shipping costs.  I always see them at second hand stores too.

It sounds like you are looking for healthy AND easy!  So in addition to the GF grill idea, I would just bake them on top of a rack that is placed on a cookie sheet to allow the fat to drip.  A little more to clean but it is the  same theory as the GF grill, it allows the fat to fall away from the meat.  Also, try cubing up your chicken into chunks and stir fry with pam and vegetables.  You can scoop out the meal with a slotted spoon or slotted spatula to eliminate some additional grease.

I don't like dry chicken... I always put it in the frypan and sprinkle it generously with seasoning, then add a cup of water and boil it all away, adding more if it gets too dry before the chicken's cooked. At the end you should have nice moist chicken. If you want it browned, cook ALL the liquid away and sear the outside at the very end.
Brown the chicken first, a minute or two on each side, on high heat, then lower to a simmer and fill the pan's bottom with liquid (stock or water).  Simmer until the chicken's cooked through, replacing the liquid if it burns away.  This ensures that you get nicely browned, moist chicken in the pan.

Poach it

Grill it

Broil it

i cook it in a slow cooker and marinate it in swiss chalet marinate stuff and also make the swiss chalet dipping sauce...mmm
Yep, i saw the small george foreman for sale the other day for $16. WELL worth the money!! :)
The way I've found to cook it ... I fry it in a pan as well however i use just a tablespoon or so (depending on the amount of chicken) of Olive Oil.  Every chef I've talked to says that olive oil is heathier too! It doesnt come out greasy or oily and it tastes great with some seasonings on it. Give it a try!

I totally agree, and olive oil is a "good" fat. Sometimes I squirt a little lemon juice in the pan and some fresh ground pepper.  The GF grill is great too, but I hate cleaning it afterwards Yell.

There's a reusable spray can called "MISTO" which you can pour your olive oil into. You just pump it up and spray. I spray my chicken with olive oil using this, sprinkle on some McCormick grillmates steak seasoning and fry it in a pan. VERY tasty, I don't miss all the grease. It's very juicy and flavorful.
Well I went out and purchased a GF Grill (http://www.homebrands.com/gefonegrfagr.html)

That's the one I bought. I'm still learning how to use it. lol. Btw does anyone know how long it takes for it to cool down? And I didn't see any unwanted fat drip down on the drip tray. Am I doing something wrong?
cook witha little no stick spray then smother in FRANKS RED HOT CHICKEN WING SAUCE.. hella good..
