Chicken Bruschetta
Ok so I was at my mother in-laws this past sunday for dinner and she made the most yummy thing ever.
In a 9 x 13 pan you cut chicken into bite size pieces. (~5 portions of boneless skinless chicken breast) Sprinkel some bazil and top with some shredded cheese (dont need much) We used fat redused cheese. Then take a can of cruched tomatoes (whatever kind you like) And mix in a box of stove top (we used the low sodium one and it was low cal) evenly distribute the mixture on top of the chicken. Put in the oven at 350 for 45 minutes (at the end we put in on broil for like 2 mins)
Im not positive of the calorie content but I do know that it was low cal as the box of stove top was 100 calories, the can of tomatoes was 150 calories and we didnt use much cheese just enough to say we put some, then the chicken was ~ 500 cals. Serves 6 adults. Hope you guys enjoy it as much as we did.

I bought a box of stove top stuffing mix and this recipie was on the box. I made half a batch using the stove top and half a batch using ridergrad's recipie link with some tweeks for me. I can tell you honestly, ridergrad's recipie was the beast and the stove top, a bomb. There is a huge difference it taste and texture. If you choose to make the quick variety (short on time) make the stove top with some hesitance. If you want good food, try the ridergrad's recipie! That just my two cents. Have happy eating : )
