Chicken Fried Rice Recipe

Good source of protein and grains

Ingredients
3 tbsp cider vinegar
1 tbsp honey
1 tsp salt
1/2 tsp ground ginger
2 tbsp vegetable oil
1 medium red pepper, diced
12 oz chicken thighs cut in 1/4 inch strips
6 oz green cabbage, shredded
2 3/4 cups brown rice
3 green onions
Directions
  1. Combine vinegar, honey, salt and ginger in small dish. Set aside

  2. Heat the oil in very large nonstick skillet over medium-high heat. Add pepper and cook, stirring, for 1 minute. Add the chicken and cook, stirring, for 4 minutes or until chicken is no longer pink.

  3. Add cabbage and cook, stirring, for 2 minutes. Stir in the vinegar mixture until combined. Add the rice, stirring to break up, and cook 3 to 5 minutes or until heated through. Stir green onion into rice mixture

  4. Serve
