does anybody have any quick and easy recipes to cook chicken? i usually just end up baking my chicken and every once in a while ill put some sort of spice or something on it, but i just need quick and easy recipes sooo any ideas?

I like to dip them in honey/dijon mustard and bake them

or spinkle some red pepper on both sides and pour a jar of salsa over them and bake

^This is probably my most favorite chicken dish I've made! You can make it as spicy as you want or can mild it up

My easiest is Chicken Mexicana on top of the stove.

Heat a jar of salsa in a saute pan.  Put 4 chicken breasts on top of it and spoon some over.  Put on a lid and cook on a low simmer until the chicken is done.  That's it!  It's really nice and moist, and you can choose mild or hot salsa to suit yourself.

Once a week I cook up enough chicken for all week. Basically just grilling about 20 some odd chicken breasts, cook up some brown rice. And package em up in the freezer..

try this

stab the breast of chicken sharp knife (relatively deep, about half way through)

cut up little wedges of garlic cloves and poke them in

cover in thyme and rosemary (or what ever herbs you wish, paprika, chilli flakes etc)

thepoking method works with anything and really flavours the chicken

and grill

start on a high heat and close to grill to darken the outsides

then turn the heat down so it slow cookes and makes in the insides juicy

 

 

ALso, putting slices in the chicken (deep but not too deep) and rubbing it with herbs /spices and a touch of olive oil

really infuses flavour in the chicken

(also crumbling a crumbly chicken stock with your herbs then rubbing it in gives even moRe flavour)

also this is something i did the other day

blend up some greek yoghurt a tiny bit of tomato puree oregano lemon juice and chilli and a touch of olive oil

 

coat the chicken and marinade for a few horus (or over night)

then cook

tastes too good (if you dont like yoghurt dont try this)

I brine the chicken in a tablespoon each of white or brown sugar and a tablespoon of salt in cold water for an hour.  When ready to cook, heat grill pan over very high heat until almost smoking.  Meanwhile, remove chicken from brine and pat dry thoroughly with paper towels.  Also, put paper towel over chicken and pounds flat with hand or mallet. Sprinkle with cinnamon (I know, weird, huh), corriander, cayene pepper and salt.  Put chicken into very hot pan.  Do not turn down the heat.  Try to cook no longer than 5 minutes. 

Not only does it taste good,  but it will look authentically grilled too. 

Try baking them or slow cookering (if that's a word!) in salsa.  It's really good!  I usually do four chicken breasts in the slow cooker with half a jar of salsa, then we eat two of the breasts.  The other two we eat the next day after I shred them and put them in tacos.
